Leftover chili? Turn it into something fresh by stuffing it inside burritos!

4 6" tortillas
1 cups leftover chili
1-2 tbsp taco seasoning (more or less to taste)
Shredded cheddar cheese
Frank's hot sauce

Steps:

  • In a mixing bowl, add taco seasoning to chili and stir to combine.
  • Spoon 1/4 cup of chili onto each tortilla. Fold two opposite sides in about 1/2" then fold the other two side in as tightly as possible to form each chili-stuffed tortilla into a burrito.
  • Sprinkle chili burritos with shredded cheddar cheese and microwave for 1-1:30 minute.*
  • Top burritos with hot sauce to taste (I love Frank's!).

This is a lot like a lasagna, only Mexican-style! Serve like a pie and garnish with sour cream, salsa, lettuce and tomato. Make sure you like spicy foods before trying this one. It's hot!

2 pounds ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (2 ounce) can black olives, sliced
1 (4 ounce) can diced green chili peppers
1 (10 ounce) can diced tomatoes with green chile peppers
1 (16 ounce) jar taco sauce
2 (16 ounce) cans refried beans
12 (8 inch) flour tortillas
9 ounces shredded Colby cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes. Drain any excess fat, if desired. Mix in the olives, green chile peppers, tomatoes with green chile peppers, taco sauce and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
  • Spread a thin layer of the meat mixture in the bottom of a 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
  • Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly.

2 cups leftover chili
4 (10-inch) flour tortillas (("burrito" size))
2 cups cooked rice
1 cup shredded cheddar cheese
finely chopped cilantro (optional)
salsa and sour cream (for serving, optional)

Steps:

  • Lay a tortilla on a flat surface. Arrange about 1/2 cup chili in the middle of the tortilla. Top with 1/2 cup rice and 1/4 cup cheese. Sprinkle with cilantro if desired.
  • Fold two sides of the burrito in, then fold the remaining two sides over to form a small packet. Please seam-side down on a plate. Repeat with remaining tortillas and filling ingredients.
  • Preheat a nonstick skillet over medium-high heat. Coat lightly with nonstick spray if desired. Heat the filled burritos on one side until golden brown, 3 to 5 minutes. Carefully flip and continue heating on the second side.
  • Serve with salsa and sour cream if desired.

4 burritos, frozen or homemade
3 cans chili or 3 cups homemade chili
3/4 cup oil (for deep frying)
2 cups grated cheddar cheese
2 cups chopped lettuce
1 cup chopped tomato
1 cup chopped onion
1 jar salsa (your favorite brand)
1 (8 ounce) container sour cream
sliced jalapeno

Steps:

  • Heat the oil in a large skillet.
  • Add the burritos and fry on each side until golden brown and crispy.
  • Drain on a paper towel.
  • While burritos are frying, heat the chili on stove or microwave.
  • To serve:.
  • Plate the burrito, top with a ladle of chili, add a handful of lettuce, cheese, tomatoes, and onion.
  • Sprinkle a few jalapenos on top.
  • Finish with a couple tablespoons of salsa and a dollop of sour cream.

3 cloves garlic, minced (optional)
1 can (12-14 ounce size) tomato sauce
1 can (10-ounce) Ro-tel (diced tomatoes and chilies)
1/2 tsp. salt
1 tsp. ground oregano
1 tbsp. ground cumin
2 tbsp. chili powder (more to taste)
1 can (14-ounce) kidney beans, drained and rinsed
1 can (14-ounce) pinto beans, drained and rinsed
1/4 c. masa (corn flour) or regular corn meal
1/2 c. warm water
Individual bags of Fritos
Grated sharp cheddar cheese
Diced red onion (optional)

Steps:

  • Brown ground chuck with garlic in a pot over medium-high heat. Add tomato sauce, Rotel, salt, oregano, cumin, and chili powder. Cover and reduce heat to low. Simmer for 30 minutes. Add drained and rinsed beans. Stir to combine, then cover and simmer for another 20 minutes. Mix masa with water, then add to the chili. Stir to combine and simmer for a final 10 to 15 minutes. Set aside. Serve by slicing the Frito bags open lengthwise. Pile in chili and cheese, and diced onion if using. Serve immediately with plastic forks. A crowd-pleaser!

2 pounds ground beef
3 cloves garlic, minced
2 tablespoons tomato paste
Two 14-ounce cans kidney beans, drained and rinsed
One 14-ounce can tomato sauce
One 10-ounce can diced tomatoes and green chiles
1/4 cup chili powder
Kosher salt and freshly ground black pepper
8 large flour tortillas, lightly warmed
2 cups grated Cheddar
1 yellow onion, diced small
2 cups corn chips
1/2 cup sour cream
Olive oil, for toasting

Steps:

  • For the chili: Place a skillet over medium-high heat and add the oil. When the oil is hot, add the ground beef and brown, crumbling as you go, until cooked through, 7 to 8 minutes. Add the garlic and tomato paste. Stir and cook for 1 minute. Add the kidney beans, tomato sauce, tomatoes and green chiles, chili powder, salt and pepper, then bring to a simmer. Continue to simmer and thicken, stirring occasionally, for 10 minutes.
  • For the burritos: Add about 1 cup chili to a tortilla, then top with grated Cheddar and some diced onion. Add a handful of corn chips and a dollop of sour cream. Tuck the sides of the tortilla and roll tightly, then set aside. Repeat with the remaining tortillas.
  • Heat a large skillet over medium heat. Add a little olive oil. In batches, toast the burritos until golden, about 1 minute per side.

  • Cook the ground beef in a large skillet over medium-high heat until browned and cooked through, breaking up the beef as it cooks. Add the tomato sauce, then fill the can with water and add that water. Stir in the flour, chili powder, salt, pepper, onion powder, garlic powder, cocoa powder and cumin. Cook until it starts to bubble, then reduce the heat and continue to simmer until the chili is thick, 30-45 minutes. Drain and rinse the beans and add them to the chili, and continue to cook until warmed through.
  • In a medium bowl, combine the tomatoes, red onion, jalapeño and cilantro. Stir in the lime juice and season to taste with salt. Refrigerate until ready to use.
  • Melt the butter in a large saucepan. Add the garlic and jalapeño and cook until softened, a minute or two. Whisk in the cornstarch. Slowly pour in the milk, whisking constantly. Bring to a boil and let cook until slightly thickened, then add in the cream cheese. Cook, whisking constantly, until the cream cheese has melted and the sauce is smooth. Slowly add in the cheddar cheese, stirring until melted. Stir in the green chiles. Keep warm.
  • Remove the pit and the skin from the avocado and mash in a bowl. Stir in the sour cream and lime juice. Season to taste with salt.
