I haven't tried this yet but I hope to make it soon. The recipe calls for canned chili but this would be a nice way to use up left over homemade chili!

4 manicotti
1 tablespoon oil
2 tablespoons onions, chopped
1 garlic clove, chopped
1 (16 ounce) can beef chili with beans
1 cup water
1 egg
3/4 cup cottage cheese
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 350 degrees. Cook manicotti shells as directed on package; drain.
  • Meanwhile, add oil to a large skillet and saute onion and garlic until tender. Stir in chili and water. Bring to a boil; reduce heat and simmer 2 minutes.
  • In a small bowl combine egg, cottage cheese and cheddar cheese. Stuff into manicotti shells.
  • Spoon half the chili sauce into the bottom of a greased casserole dish. Place manicotti on top and cover with remaining sauce. Cover and bake for 30 minutes. Sprinkle with additional cheddar cheese (or your preference) and bake another 5 minutes.

1 pint part-skim ricotta cheese
8 ounces shredded mozzarella cheese
¾ cup grated Parmesan cheese
2 eggs
1 teaspoon dried parsley
salt to taste
ground black pepper to taste
1 (16 ounce) jar spaghetti sauce
5 ½ ounces manicotti pasta

Steps:

  • Cook manicotti in boiling water until done. Drain, and rinse with cold water.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, eggs, parsley, and salt and pepper. Mix well.
  • Pour 1/2 cup sauce into an 11x17 inch baking dish. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce . Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.
  • Bake 45 minutes, or until bubbly.

12 manicotti, cooked and drained
1/2 lb lean ground beef
1/4 cup chopped onion
1 garlic clove, finely chopped
15 ounces tomato sauce
16 ounces stewed tomatoes
2 tablespoons chili seasoning mix
16 ounces borden cottage cheese
2 cups shredded sharp cheddar cheese
1 egg, beaten

Steps:

  • Preheat oven to 350.
  • In a large skillet, brown beef, onion and garlic. Stir in sauce, tomatoes and seasoning mix. Spoon about half of meat mixture into bottom of 11x7-inch baking dish. In medium bowl, mix cottage cheese, 1 cup cheddar and egg; stuff into shells. Arrange in baking dish. Spoon remaining meat mixture over top.
  • Cover. Bake 30 minutes. Uncover; bake 10 minutes longer. Sprinkle remaining cheese on top during last 2 minutes. Let stand 10 minutes before serving. Refrigerate leftovers.

1 pound lean ground beef
1 can (16 ounces) refried beans
2-1/2 teaspoons chili powder
1-1/2 teaspoons dried oregano
1 package (8 ounces) uncooked manicotti shells
2-1/2 cups water
1 jar (16 ounces) picante sauce
2 cups sour cream
1 cup shredded Monterey Jack or Mexican cheese blend
1/4 cup sliced green onions
Sliced ripe olives, optional

Steps:

  • In a large bowl, combine the uncooked beef, beans, chili powder and oregano. Spoon into uncooked manicotti shells; arrange in a greased 13x9-in. baking dish. Combine water and picante sauce; pour over shells. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, covered, at 350° for 1 hour. Uncover; spoon sour cream over the top. Sprinkle with cheese, onions and olives if desired. Bake 5-10 minutes longer or until the cheese is melted.

3 teaspoons chili powder
3 teaspoons oregano
1 (8 ounce) package manicotti
2 1/2 cups water
16 ounces picante sauce
16 ounces sour cream
1 cup shredded monterey jack cheese
1/4 cup sliced green onion
1/4 cup sliced ripe olives

Steps:

  • In bowl, mix uncooked beef, beans, chili powder, and oregano.
  • Spoon into uncooked manicotti shells.
  • Place in greased 13x9 baking pan.
  • Mix water and sauce, pour over manicotti.
  • Cover and refrigerate 8 hours.
  • Remove from refrigerator 30 minutes before baking.
  • Cover and bake at 350* for 1 hour.
  • Uncover. Sprinkle with cheese, onions, and olives.
  • Bake for 8 minutes more.
  • Then add sour cream.
