Gramma's Old Fashioned Chili Mac image

This is an old family recipe that my mom has cooked for 50 years. It's a wonderful, 'stick-to-the-ribs' meal that goes wonderful with warm cornbread or rolls. I find that kids love this when they don't like regular 'spicy' chili. Enjoy!

1 cup elbow macaroni
1 pound ground beef
1 small onion, chopped
1 cup chopped celery
½ large green bell pepper, chopped
1 (15 ounce) can kidney beans, drained
2 (10.75 ounce) cans condensed tomato soup
2 (14.5 ounce) cans diced tomatoes
⅛ cup brown sugar
salt and pepper to taste

Steps:

  • Bring a pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a small saucepan, simmer celery and green pepper with water to cover until tender; Drain.
  • Place ground beef in a large heavy skillet over medium heat. Cook until evenly brown. Add onion, and cook until tender and translucent. Drain excess fat. Add celery and green pepper. Stir in kidney beans, condensed tomato soup, diced tomatoes and brown sugar. Season with salt and pepper, and stir in macaroni.

Steps:

Steps:

  • In 5-quart Dutch oven, heat oil over medium-high heat. Add beef, onions and bell peppers; cook 6 to 8 minutes, stirring frequently, until beef is cooked through and onions are tender. Stir in taco seasoning mix, chili powder, garlic powder and salt. Stir 30 seconds.

24 ounce can tomato sauce
28 ounce can diced or whole tomatoes (if using whole tomatoes, break up with a spoon )
4 tablespoons chili powder
2 tablespoons cumin
2 teaspoons salt
1 teaspoon pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoons Mexican oregano
1 teaspoon olive oil
12 ounces short cut pasta, like macaroni or shells (approximately half of a box)
2 cups shredded cheddar cheese (or more as desired)

Steps:

  • Add olive oil, onion, and ground beef to saucepan over high heat. Cook until browned. Reduce heat to low and stir in half the salt and chili powder.
  • Add remaining chili ingredients. Let cook over low for a minimum of 1 hour, up to 4 hours, stirring frequently. Taste and add more seasoning as desired.
  • When chili is almost finished cooking, start boiling water for the pasta. Cook pasta according to package instructions.

1 tablespoon olive oil
1 large yellow onion, (diced)
1/2 green pepper (capsicum), (seeded and diced)
4 cloves garlic, (minced (or 1 tablespoon minced garlic))
1 pound (500g) lean ground beef
1 tablespoon each ground cumin and red chili powder (or Cayenne (adjust to your tastes))
1/2 teaspoon smoked paprika ((or sweet paprika))
1/2 teaspoon salt
7 oz (200g) crushed tomatoes
7 oz (210g) tomato puree ((or Passata, condensed tomato soup for Aussies))
1 cup (250 ml) beef or chicken broth
1 tablespoon tomato paste
14 oz (400g) red kidney beans, drained
7 oz (200g) black beans, drained
1 cup shredded Cheddar Cheese ((or Monterey Jack))
1 cup shredded mozzarella cheese

Steps:

  • Heat oil in large heavy-based pot (or casserole pot) over medium-high heat. Add onions and sauté until transparent, then add the green peppers (or capsicum) and garlic, sautéing for a further minute until the garlic is fragrant.
  • Add beef and cook until browned, breaking up any big chunks with the end of your wooden spoon. Stir in the cumin, chili powder, paprika and salt and mix through until beef is fully coated in the seasonings.
  • Mix in the crushed tomatoes along with the juices, tomato puree, broth, tomato paste and beans. Bring to a boil, then lower heat and allow to simmer while stirring occasionally, until the chili thickens (about 10 minutes).
  • Preheat oven broiler (or grill) on medium heat.
  • Add the cooked pasta and toss well to combine. Top with cheese, transfer to oven and broil for 2 minutes, or until cheese is bubbling and melted.
  • Garnish with sliced jalapeños and chopped cilantro (optional). Serve with sour cream.

1 small red onion, chopped
3 cloves garlic, minced

One 15-ounce can kidney beans, undrained
One 14.5-ounce can diced tomatoes, undrained

2 tablespoons all-purpose flour
2 cups milk
4 ounces cream cheese
2 cups shredded sharp Cheddar, plus extra for garnish
1 teaspoon Dijon mustard

Corn chips, such as Tostitos Scoops, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil. Add some salt and then the macaroni. Cook to al dente according to the package directions. Drain and hold until the cheese sauce is ready.
  • Heat the oil in a medium pot over medium heat. Add the red onions and cook, covered, until soft, a couple of minutes. Add the garlic and bell peppers and cook an additional 2 to 5 minutes, being careful not to burn the garlic. Add the ground beef and sprinkle with salt and pepper; cook until browned, stirring to break up the beef into small pieces. Add the chili powder, cumin, paprika and oregano, and cook until the spices are fragrant. Add the beans and their liquid, the tomatoes and their juices, and the tomato paste; simmer for 5 to 10 minutes.
  • In a separate saucepot, melt the butter over low heat. Add the flour and cook, whisking, for 1 minute. Whisk in the milk, raise the heat to high, and bring the mixture to a boil; cook, whisking, until thickened. Removing from the heat and whisk in the cream cheese, Cheddar, mustard, Worcestershire and some salt and pepper. Pour the pasta into the cheese sauce and stir to combine.
  • Mix the chili into the macaroni and cheese. Transfer to a serving bowl and top with additional Cheddar and the green onions. Serve with corn chips.

2 garlic cloves (, minced)

1 red capsicum / bell pepper (, chopped)
500g / 1 lb ground beef (mince) (, I use lean)
800g / 28 oz crushed canned tomato
420g / 14 oz can red kidney beans (, drained)
2 1/2 cups (625 ml) beef broth ((chicken broth also ok))
250g / 8 oz elbow macaroni pasta ((elbow pasta), uncooked)
2 cups (200g) shredded cheese ((cheddar, Monterey Jack, tasty cheese))
1/4 cup coriander / cilantro ( finely chopped, for garnish)
1 tsp cayenne pepper ( or pure chilli powder (adjust spiciness to taste) (Note 1))
2 tsp paprika powder
2 tsp cumin powder
1 1/2 tsp onion powder ((can sub garlic powder))
1 tsp dried oregano

Steps:

  • Heat oil in large pot over high heat. Add garlic and onion, cook for 1 minute. Then add capsicum and cook until onion is translucent.
  • Add beef and cook, breaking it up as you go.
  • Once the beef turns from red to brown, add remaining ingredients except cheese. Stir, bring to simmer, then turn the heat down to medium.
  • Cover and cook for 12 minutes or until the macaroni is al dente, meaning just cooked, still a tiny bit on the firm side. It should be saucy but not tons of liquid (see video).
  • Turn the stove OFF but leave the pot on the stove. Stir through half the cheese - it should be a bit saucy. Adjust salt and pepper to taste. Top with remaining cheese, put the lid back on and leave until the cheese melts - about 2 minutes (sauce will absorb further during this period).
  • Sprinkle with coriander, if desired, and serve immediately.

1 tablespoon vegetable oil

Steps:

  • In a large pot, boil pasta until al dente.
  • Meanwhile, in a big, deep pot, brown beef in oil over medium high heat. Add onions, peppers, and garlic. Season meat mixture with chili powder, cumin, cayenne, and salt. Cook together 5 minutes, stir in beer or broth, and reduce liquid by half, 2 minutes. Stir in tomatoes and simmer for 10 minutes.
  • Drain pasta. Add hot pasta to chili pot and stir to coat pasta evenly. Remove from heat and garnish big bowlfuls of chili mac with chopped scallions.
