Liven up grilled or roasted chicken with this easy Chili Lime Marinade. It captures the spicy and sweet-tart flavors of chili powder, fresh garlic, and lime.

3 tbsp olive oil
2 limes (*juiced)
1 clove garlic (*minced)
1 tbsp chili powder
sea salt + pepper to taste
1 lb chicken

Steps:

  • Shake all ingredients, except chicken, together in a small mason jar.
  • Place chicken in an oven proof glass container and pour marinade over. Massage well.
  • Leave in the fridge, covered, for a minimum of 30 minutes, up to overnight.

Make Japanese ponzu sauce at home. You can substitute lime juice for the traditional yuzu. Use it as a dipping sauce or condiment.

3 tablespoons mirin (sweet rice wine)
2 tablespoons rice vinegar
1 tablespoon soy sauce
2 tablespoons bonito flakes
1/4 cup fresh or bottled yuzu juice

Steps:

  • Gather the ingredients.
  • Combine mirin, vinegar, soy sauce, and bonito flakes in a saucepan and bring it to a boil over medium heat.
  • Remove from the heat and let cool.
  • Pour sauce through a strainer into a bowl and discard bonito flakes. Add yuzu juice. This recipe appears in Asian Grilling, by Su-Mei Yu, reprinted with permission.

1/4 cup lime juice (fresh is best)
1/4 teaspoon ground cumin
1/4 teaspoon chili powder (store-bought, your own recipe or Chili Powder)
2 tablespoons garlic, peeled and finely minced

Steps:

  • Whisk together oil, lime juice, cumin, chili powder and garlic in a large, shallow dish to make a marinade.
  • Arrange meat or fish in dish and rub all over with marinade, then cover and refrigerate for 2 to 3 hours, turning occasionally.
