Steps:

  • In a large bowl, whisk together the lime juice, olive oil, garlic, chili powder, cumin, and salt. Add the uncooked shrimp to the marinade, cover with plastic wrap, and refrigerate 30 minutes.

2 pounds uncooked shrimp - peeled, deveined, and chopped
¼ cup lime juice
1 (16 ounce) package uncooked cellentani (corkscrew) pasta
4 avocados - peeled, pitted and diced
1 pint grape tomatoes, quartered
1 large red onion, chopped
½ cup chopped fresh cilantro
⅓ cup olive oil
¼ cup lime juice
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
salt and ground black pepper to taste

Steps:

  • Marinate shrimp overnight with 1/4 cup lime juice in a large bowl covered with plastic wrap. Drain shrimp.
  • Heat shrimp in a microwave-safe bowl until they are bright pink on the outside, about 6 minutes. Allow shrimp to cool.
  • Bring a large pot of lightly salted water to a boil. Cook cellentani in the boiling water, stirring occasionally until cooked through but firm to the bite, 12 minutes. Drain, then rinse with cold water until cool.
  • Mix shrimp, pasta, avocados, grape tomatoes, red onion, and cilantro in a bowl.
  • Whisk olive oil, 1/4 cup lime juice, garlic, Worcestershire sauce, dry mustard, salt, and black pepper in a bowl until dressing is well mixed.

8 bamboo skewers, soaked in water
1 lb. shrimp, peeled and deveined

Steps:

  • Bring an 8-quart stock pot of water to a boil and generously season with salt. Cook broccoli for 2 minutes. Meanwhile set up bowl of cold water with ice cubes. Using a slotted spoon, transfer broccoli to ice bath; drain when cool. Using the same pot, cook pasta according to al dente package instructions.
  • Meanwhile in a large bowl mix mayonnaise, cilantro, 1/2 teaspoon salt, 1/4 teaspoon black pepper, zest and juice of one lime, and chili flakes. Toss in red onion, cabbage, broccoli, and cooked pasta, mix well and refrigerate until ready to serve.
  • Preheat grill on medium-high heat. Thread the shrimp onto the pre-soaked skewers. Drizzle with olive oil and season with salt and pepper. Place skewers on grill and cook until pink and lightly charred, about 2 minutes on each side. Transfer to a clean plate.
  • Serve pasta salad with shrimp skewers and wedges of remaining lime. Garnish with cilantro.

Steps:

  • For shrimp: In a medium bowl, whisk together oil, garlic, and red-pepper flakes. Add shrimp and scallions and toss to coat; refrigerate for 30 minutes.

1/4 cup chopped cilantro

Steps:

  • Mix together the shrimp, avocado oil, lime juice, chili powder, chili paste, chili flakes, sea salt, pepper, and garlic in a bowl.
  • Heat a large non-stick skillet over medium heat then lay the shrimp out on it in a single layer.

3 tablespoons olive oil
3 tablespoons honey
Zest of a lime
5 tablespoons lime juice
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1/4 teaspoon garlic powder
Kosher salt and fresh ground black pepper to taste
1 pound raw medium sized shrimp, peeled and deveined
1 head butter lettuce (or 5 cups lettuce of choice)
1 cup cherry tomatoes, halved
1 avocado, peeled and sliced
1/2 cup fresh or defrosted frozen corn
1/3 cup crumbled queso fresco
Cilantro for garnish

Steps:

  • In a small jar or bowl, add the olive oil, honey, lime zest and juice, chili powder, cumin, garlic powder, salt and pepper. Shake or whisk together until well combined.
  • In a large bowl add the shrimp. Pat them dry with paper towels of any excess water. Take 3 tablespoons of the marinade/vinaigrette and add it to the shrimp. Stir together until the shrimp are coated and then let them marinate for 15-30 minutes, stirring once to re-coat them in the marinade.
  • While the shrimp marinates make the salad. Arrange the lettuce onto a serving platter or add it to a large salad bowl. Top the lettuce with the corn, cherry tomatoes, sliced avocado and queso fresco.
  • Add a little olive oil (I used a couple teaspoons) to a large skillet over medium-high heat. When hot, swirl the oil to coat the bottom and then add the shrimp to the hot skillet. Spread them into a single layer and let them cook for 2 minutes before flipping them over. Cook for another 1-2 minutes or until they're opaque and have curled up.
  • Remove the skillet from the heat and then add the shrimp to the salad along with any sauce in the bottom of the pan. Top with chopped cilantro and serve with the remaining vinaigrette either drizzled on top or served on the side.

3 tablespoons soy sauce
2 to 3 teaspoons sugar, to taste
1 to 3 teaspoons chili sauce , to taste
2 cloves garlic, minced
1 teaspoon sesame oil
Salad:
8 ounces dried rice noodles (thin, vermicelli-size)
1 to 2 cups bean sprouts, optional
2 tomatoes, cut, small slices
1 carrot, sliced into matchsticks
4 green onions, finely sliced
1 small green bell pepper, thinly sliced
1 small red or orange bell pepper, thinly sliced
Optional: 1 can shrimp, cooked, drained
1 cup cilantro , fresh leaves, roughly chopped
1/2 cup fresh basil, roughly chopped
1/4 cup dry-roasted peanuts, lightly chopped

Steps:

  • Gather the ingredients.
  • In a cup or small bowl, mix together lime juice , fish sauce, soy sauce, sugar, chili sauce, minced garlic, and sesame oil until the sugar has dissolved.
  • Taste test for a sweet-sour balance, adding more sugar if too sour for your taste. Note that the dressing will taste quite strong and salty now, but will be delicious when combined with the salad.
  • Gather the ingredients.
  • Lightly boil rice noodles until al dente , about 7 minutes.
  • Drain the noodles.
  • Add the optional bean sprouts , if using, while noodles are still hot. Gently toss (the residual heat from the noodles will lightly cook the sprouts), then rinse with cold water to keep from sticking. Set aside to drain.
  • Place noodles and sprouts in a large salad bowl. Add the tomatoes, carrot, green onions, bell peppers, optional shrimp or tofu , and fresh cilantro. Toss to mix.
  • Add half of the dressing plus fresh basil and nuts, tossing well to incorporate. Taste test, adding more or all of the dressing depending on how many noodles you've made. If not salty enough, add more fish sauce or soy sauce. If not spicy enough, add more chili. If too salty, add a little more lime juice. If too sour, add more sugar.
  • Place on a serving platter or in a salad bowl and sprinkle with fresh basil, cilantro, and peanuts.
