Really easy and versatile - little squares served warm as an appy, or larger portions for lunch or brunch. Is great with a Mexican meal. From "Mother's Recipes" by Jones and Jones.

10 eggs
1/2 cup flour
1 teaspoon baking powder
1 (16 ounce) carton small curd cottage cheese
1/2 lb mozzarella cheese, shredded
1 bunch green onion, chopped including tops
1/2 cup margarine, melted
1 (7 ounce) can green chilies, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Beat eggs until light and lemon colored.
  • Add flour,baking powder, and salt, and beat until smooth.
  • Add cottage cheese, mozzarella, green onions, cheddar, melted margerine, and green chilies.
  • Stir until well mixed.
  • Pour into Pam sprayed 9x13 inch baking dish.
  • Bake about 40 minutes, or until top is slightly brown around the edges and center appears firm.
  • Serve immediately.
  • Can be served with salsa on the side.

Got this recipe from a friend of mine who use to bring it to our Friday morning breakfast. I half the recipe and bake in 8" baking dish.

10 eggs
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups cottage cheese (16 oz.)
4 cups shredded monterey jack cheese (1 lb.)
1/2 cup butter or 1/2 cup margarine, melted and cooled
2 (4 ounce) cans diced green chilies

Steps:

  • Preheat oven to 350 F.
  • In a medium-size bowl, beat eggs until light and lemon colored.
  • Add flour, baking powder, salt, cottage cheese, jack cheese, and butter; blend until smooth.
  • Stir in chiles.
  • Pour mixture into a well-buttered 9"x13" baking pan.
  • Bake in the preheated 350 F oven for about 35 minutes or until top is browned and center appears firm.
  • Serve immediately.

This is really a mix and bake casserole, it makes a great easy brunch! You can add in some green onions if you wish, the jalapeno is only optional, this dish can be served hot or cold.

1 cup flour
1 pint small-curd cream-style cottage cheese
1/2 cup melted butter
1 teaspoon baking powder
salt (I use about 1/2 teaspoon)
black pepper
1 lb monterey jack cheese, shredded
2 (4 ounce) cans diced green chilies
1 small jalapeno pepper, seeded and finely chopped (to taste) (optional)
parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a bowl beat the eggs until light and lemon coloured.
  • Add in the rest of the ingredients except the chilies; blend until well combined.
  • Stir in the chilies.
  • Transfer the mixture into prepared baking disg.
  • Sprinkle the top with grated Parmesan cheese.
  • Bake for about 35-45 minutes or until the top is browned and the center appears to be firm.
