CHILI CRANBERRY PORK OVER RICE
This is from a book called "After-Work Dinners". You may use pork or chicken. It's great if you like sweet and mild flavors. I serve it over Uncle Ben's 90-second microwave rice.

Steps:
- Combine first 4 ingredients and set aside.
- In large skillet, slowly brown pork or chicken on both sides in oil.
- Pour chili sauce mixture over the meat.
- Simmer, uncovered, 8-10 minutes or until meat is cooked and sauce is of desired consistency, turning and basting occasionally.
- Serve over rice or mashed potatoes.

CRANBERRY ROAST PORK
This dish has been one we have often made during the Christmas holidays. It is a family favorite. The recipe came from the Frugal Gourmet - Jeff Smith The only thing we changes is to double the amounts for the Cranberry sauce as we love having extra sauce on the side to serve over the roated pork.

Steps:
- Rub the roast with salt and pepper, and place on a rack in a baking pan. Roast at 325 deg. for 2 1/2 to 3 hours, or until an inserted meat thermometer registers 175 deg.
- In the mean time, combine all the remaining ingredients in a stainless-steel saucepan and bring to a boil. Remove from the heat.
- Halfway through the roasting process, begin basting the roast every 15 minutes with the cranberry mixture. The remaining sauce can be served on the side with the thinly sliced pork.
- Serve along with Wild Rice with mushrooms and onions for a wonderful meal.
SLOW COOKER CRANBERRY FIG PORK
An easy slow cooker recipe! Serve over rice if desired.

- Heat a skillet over medium-high heat. Sear pork chops in the hot skillet until lightly browned, about 1 minute per side. Transfer seared pork chops to the slow cooker.
- Combine cranberries, figs, reserved fig juice, apple juice, brown sugar, salt, black pepper, and rosemary in a saucepan; bring to a boil. Pour cranberry mixture over pork chops.
- Cook on High for 4 hours.

- Rub chops with garlic (I use garlic powder), and sprinkle with salt and pepper to taste.
- Heat butter in skillet and brown chops well on both sides.
- Add apple juice; cover and simmer for 1 hour or until pork is fork tender.
- Place chops on a broiler pan and set aside.
- Drain pan juices into a bowl through a strainer and stir in the cranberry sauce, apple sauce and cloves and beat with a whisk until well blended.
- Spoon mixture over chops and broil until mixture bubbles.
- Serve with more sauce if you like.

- In a small bowl, combine cornstarch and pineapple juice until smooth. Stir in cranberry and barbecue sauces; set aside. , In a large skillet, stir-fry pork in oil until meat is no longer pink, 3 minutes. Sprinkle with salt and pepper.
