1 tablespoon olive oil
1 medium onion, finely diced
1 garlic clove, minced
1/4 medium green bell pepper, finely diced
1 (14 ounce) can crushed tomatoes
1/4 cup roasted whole buckwheat groats, rinsed and drained (kasha)
1/2 cup dry red wine
1 (14 1/2 ounce) can vegetable broth
0.5 (15 ounce) can kidney beans
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 bunch cilantro, rinsed and tied with string
1 bay leaf
1/2 cup sliced mushrooms
1 teaspoon salt (optional)
1/2 cup sour cream (optional)
2 scallions, finely chopped (optional)
1/2 cup shredded cheddar cheese (optional)

Steps:

  • In a large soup pot, heat olive oil over medium-high heat. Add onions and cook, stirring occasionally, until soft, about 3 minutes. Add garlic, bell pepper, and tomatoes. Cover and cook 5 minutes. Add kasha, wine, and broth. Stir to blend. Cook, covered, 5 minutes. Add kidney beans, chili powder, cumin, cilantro, and bay leaf. Cover and cook over medium-low heat for 40 minutes.
  • Add mushrooms. Add salt to taste. Simmer for 5 minutes. Discard bay leaf and cilantro.
  • Serve hot. If desired, serve with sour cream, chopped scallions, and grated cheese on the side.

1/2 lb ground beef
1 medium onion, diced
1/2 cup chopped green pepper
1 (16 ounce) can tomatoes
1 (8 ounce) can tomato sauce
1 teaspoon salt
1 -2 teaspoon chili powder
1 dash cayenne powder
1 dash paprika
1 (8 ounce) can kidney beans

Steps:

  • In an 8" skillet cook and stir meat, onion and green pepper until meat is brown and onion is tender.
  • Drain off fat and stir in remaining ingredients except beans.
  • Heat to boiling, reduce heat and cook uncovered for about 30 minutes.
  • Stir in beans (with liquid) and stir until bubbly.

1 egg

2 tablespoons oil
2 cups chicken broth

1 package bow tie pasta, cooked

Steps:

  • in small bowl mix kasha with beaten egg, set aside.
  • in skillet brown onions in oil.
  • add kasha and cook, separating grains until slightly toasted.
  • add broth, salt& pepper, bring to boil, cover and simmer until broth is absorbed, about 12 minutes.
  • mix in cooked bowties, season with additional salt& pepper.

1 cup coarse dried kasha (roasted buckwheat groats)
2 cups boiling-hot water
3/4 teaspoon salt
1/2 teaspoon black pepper
3/4 cup walnuts, coarsely chopped (3 oz)
1 1/2 tablespoons unsalted butter
2 tablespoons olive oil
1 medium onion, coarsely chopped
2 teaspoons fresh thyme leaves
3 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Cook kasha in a dry 3 1/2- to 4-quart heavy saucepan over moderate heat, stirring constantly, until grains smell toasty and begin to separate, about 2 minutes.
  • Add boiling-hot water, 1/2 teaspoon salt, and 1/4 teaspoon pepper and simmer, covered, over low heat until kasha is barely tender and most of water is absorbed, about 12 minutes.
  • Remove from heat and let stand, covered, 10 minutes.
  • While kasha cooks, toast walnuts in 1 tablespoon butter in a 12-inch heavy skillet over moderate heat, stirring frequently, 5 minutes.
  • Transfer nuts to a plate.
  • Add oil and remaining 1/2 tablespoon butter to skillet and heat over moderate heat until foam subsides.
  • Add onion and thyme and cook, stirring occasionally, until softened and browned, about 15 minutes.
  • Stir kasha into onion along with walnuts, parsley, and remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.

1 tablespoon vegetable oil
1 large onion, chopped
1 stalk celery, chopped
1 large green pepper, chopped
1 clove garlic, minced
1 teaspoon dried oregano
1/2 teaspoon cumin
1 teaspoon pure mild chili powder (see note)
3/4 cup buckwheat groats (kasha), preferably whole
3 cups canned tomatoes
Freshly ground black pepper to taste
1 cup coarsely grated Monterey Jack cheese

Steps:

  • Heat oil in medium skillet. Add onion, celery, pepper and garlic and saute until onion is soft. Stir in oregano, cumin and chile powder along with kasha and tomatoes. Season to taste with pepper; reduce heat and cover. Cook over low heat for about 20 minutes, until liquid has evaporated and kasha is cooked.
  • Freeze. To serve, defrost, reheat slowly; sprinkle with cheese; cover and cook minute or two longer until cheese melts.
