CHILLI CON CARNE SOUP

This is a soupy version of a classic chilli - kept mellow so children can enjoy it too

1 small onion , finely chopped
2 garlic cloves , finely chopped
1 tbsp vegetable oil
500g lean minced beef
410g can pinto or red kidney bean , drained
400g cans chopped plum tomatoes
700ml/1¼ pints hot chicken stock
large pinch of crushed dried chillies
2 squares of dark chocolate (try Lindt 85%)
fresh coriander or parsley leaves and some grated gruyère, to serve

Steps:

  • Gently fry the onion and garlic in the oil for a couple of minutes until beginning to soften, then add the mince. Raise the heat and cook for 5 minutes, stirring from time to time, until the meat is no longer pink.
  • Stir in the beans, tomatoes, stock, chillies, chocolate and plenty of salt and pepper. Bring to the boil, cover and simmer very gently for 1 hour, or longer if you have the time. (You can make it up to a day ahead to this point, then cool and chill.)
  • Ladle into mugs or large cups and scatter with herbs, cheese and black pepper. You'll need spoons to eat it.

2 tablespoons vegetable oil
1 cup diced onions
1 clove garlic, crushed
1 ½ pounds lean ground beef
1 (28 ounce) can whole peeled tomatoes
1 (16 ounce) can navy beans, with juice
1 (16 ounce) can red chili beans in sauce
1 (15 ounce) can black beans, rinsed and drained
½ cup diced green bell pepper
½ cup diced celery
¼ cup light brown sugar
2 tablespoons white vinegar
1 tablespoon chili powder
1 teaspoon salt

Steps:

  • Heat oil in a stockpot over medium heat. Add onions and garlic; cook and stir until tender, about 5 minutes. Add ground beef; cook and stir until browned and crumbly, 5 to 7 minutes. Mix in tomatoes, navy beans, chili beans, black beans, green bell pepper, celery, brown sugar, vinegar, chili powder, and salt. Bring to a boil. Reduce heat to medium-low and let simmer until thick, at least 1 hour.

3 - 15 oz cans kidney beans, drained and rinsed
2 - 28 oz cans chopped plum tomatoes, no salt added
4 cups low sodium chicken stock
2 Tbsp Mrs. Dash® Extra Spicy Seasoning Blend
1 oz square dark chocolate
grated cheddar cheese, sour cream, nachos

  • 1.Add oil to large saucepan and heat. Add onion and cook until soft.
  • 2.Add ground beef, increase heat and cook for 5 minutes, stirring from time to time, until the meat is no longer pink.

1 lb lean ground beef
1 cup chopped onion
2 cloves garlic, finely chopped
1 tbsp chili powder
1/8 tsp red pepper flakes
4 cups canned beef broth
1 can (28 oz/796 mL) diced tomatoes
1 can (19 oz/540 mL) kidney beans, rinsed and drained
1/4 cup unsweetened cocoa powder
1/2 tsp salt
Light sour cream
Shredded cheddar cheese

Steps:

  • Heat oil in a Dutch oven over medium heat. Add beef, onion and garlic. Cook, stirring to break up beef, until browned, about 7 - 10 minutes. Drain off excess fat. Add chili powder and red pepper flakes; cook, stirring, for 1 minute.
  • Stir in broth, tomatoes, beans, cocoa and salt. Bring to a boil.
  • Reduce heat and simmer, covered, stirring occasionally, for 45 minutes.
  • Serve topped with sour cream and cheese.

250 g extra lean ground beef
1 teaspoon garlic, minced
2 teaspoons paprika
2 teaspoons ground cumin
425 g crushed tomatoes
5 cups beef stock
440 g red kidney beans, rinsed and drained
2 tablespoons reduced-fat cheddar cheese, grated
1 tablespoon fresh parsley leaves, chopped

Steps:

  • Coat a pan with cooking spray, sauté onion until it is softened.
  • Stir in the beef mince and brown, Add the garlic, paprika and cumin, cooking for 1 minute.
  • Stir in the crushed tomatoes and stock, cover and simmer for 30 minutes.
  • Add the kidney beans and warm through.
  • Scatter with the grated cheese and parsley before serving.

2 tablespoons Worcestershire sauce
1 to 2 tablespoons chili powder

Steps:

  • In a Dutch oven or large soup kettle, saute green pepper, onions and celery in oil until tender, about 5 minutes. Add ground beef and cook until browned; drain. This great chilli recipe has to be one of the best dishes to serve to friends for a casual get-together. An easy sharing favourite that uses up storecupboard ingredients.

1 large onion
1 red pepper
2 garlic cloves
1 tbsp oil
1 heaped tsp hot chilli powder (or 1 level tbsp if you only have mild)
1 tsp paprika
1 tsp ground cumin
500g lean minced beef
1 beef stock cube
400g can chopped tomatoes
½ tsp dried marjoram
1 tsp sugar (or add a thumbnail-sized piece of dark chocolate along with the beans instead, see tip)
2 tbsp tomato purée
410g can red kidney beans
plain boiled long grain rice , to serve
soured cream , to serve

Steps:

  • Prepare your vegetables. Chop 1 large onion into small dice, about 5mm square. The easiest way to do this is to cut the onion in half from root to tip, peel it and slice each half into thick matchsticks lengthways, not quite cutting all the way to the root end so they are still held together. Slice across the matchsticks into neat dice.
  • Cut 1 red pepper in half lengthways, remove stalk and wash the seeds away, then chop. Peel and finely chop 2 garlic cloves.
  • Start cooking. Put your pan on the hob over a medium heat. Add 1 tbsp oil and leave it for 1-2 minutes until hot (a little longer for an electric hob).
  • Add the onion and cook, stirring fairly frequently, for about 5 minutes, or until the onion is soft, squidgy and slightly translucent.
  • Tip in the garlic, red pepper, 1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder, 1 tsp paprika and 1 tsp ground cumin.
  • Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
  • Brown 500g lean minced beef. Turn the heat up a bit, add the meat to the pan and break it up with your spoon or spatula. The mix should sizzle a bit when you add the mince.
  • Keep stirring and prodding for at least 5 minutes, until all the mince is in uniform, mince-sized lumps and there are no more pink bits. Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew.
  • Make the sauce. Crumble 1 beef stock cube into 300ml hot water. Pour this into the pan with the mince mixture.
  • Add a 400g can of chopped tomatoes. Tip in ½ tsp dried marjoram, 1 tsp sugar and add a good shake of salt and pepper. Squirt in about 2 tbsp tomato purée and stir the sauce well.
  • Simmer it gently. Bring the whole thing to the boil, give it a good stir and put a lid on the pan. Turn down the heat until it is gently bubbling and leave it for 20 minutes.
  • Check on the pan occasionally to stir it and make sure the sauce doesn't catch on the bottom of the pan or isn't drying out. If it is, add a couple of tablespoons of water and make sure that the heat really is low enough. After simmering gently, the saucy mince mixture should look thick, moist and juicy.
  • Drain and rinse a 410g can of red kidney beans in a sieve and stir them into the chilli pot. Bring to the boil again, and gently bubble without the lid for another 10 minutes, adding a little more water if it looks too dry.
  • Taste a bit of the chilli and season. It will probably take a lot more seasoning than you think.
  • Now replace the lid, turn off the heat and leave your chilli to stand for 10 minutes before serving. This is really important as it allows the flavours to mingle.
  • Serve with soured cream and plain boiled long grain rice.
