This chili recipe is many years in the making and I have won several awards with it. I think you'll be pleased with it. You can alter it to your own spice levels to achieve your perfect chili. Garnish with shredded mozzarella cheese, and use corn chips for dipping.

4 tablespoons vegetable oil
1 green bell pepper, chopped
1 yellow onion, chopped
2 ½ pounds lean ground beef
2 beef bouillon cubes
⅔ cup red wine
2 (16 ounce) cans whole peeled tomatoes, chopped, juice reserved
garlic cloves, crushed
1 (12 ounce) can tomato paste
1 ½ teaspoons paprika
2 ½ teaspoons chili powder
1 teaspoon cayenne pepper
2 ½ teaspoons dried basil
½ teaspoon dried oregano
2 tablespoons dried parsley
½ teaspoon black pepper
1 teaspoon salt
12 drops hot pepper sauce (e.g. Tabasco™)
1 (15 ounce) can kidney beans, drained
3 tablespoons flour
3 tablespoons corn meal
½ cup water

Steps:

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

If this isn't the best chili you EVER ate, let me know and I will try your version. My family just loves this and they love to eat the easy stromboli I usually serve as a side dish with it. This makes a large amount, which I do on purpose because my family likes to eat several meals from this and say it gets better the second and third time served. If you do not want to use all of it in the first 2 or 3 days, just portion out family sized meals into zip freezer bags and freeze.

2 pound(s) lean ground beef
2 large sweet onions, chopped
2 cup(s) green bell peppers, chopped (2-4 depending on size)
1 1/2 cup(s) water
1 1/2 cup(s) heinz ketchup
1 teaspoon(s) cumin seeds ground
1 tablespoon(s) chili powder (or to taste, i use 2 tbls for spicey chili)
1 teaspoon(s) oregano, dried
1 teaspoon(s) salt (or to taste)
1/2 teaspoon(s) pepper (or to taste)
2 can(s) heinz diced tomatoes 28 oz. size cans
2 can(s) hanover red kidney beans 40 oz. size cans (drain, but save liquid)
2 can(s) hanover black beans 15 oz size, drained and rinsed (do not save this liquid)

Steps:

  • Crumble ground beef and lightly brown in a very large soup pot.
  • Add water, chopped onion and chopped bell peppers cover and simmer about 15 minutes until veggies are softened.
  • Add ketchup and all seasonings, stir, cover and let simmer for about 15 minutes
  • Add tomatoes, cover and simmer for about 30 minutes.
  • At this point, I like to taste and adjust any seasonings. If you add any more seasonings, you need to simmer for another 20 minutes.You can also add some of the bean liquid or use plain water if mixture is too thick for you at this point. I usually don't find this necessary.
  • Add all beans, cover and simmer another 15 minutes.
  • Ladle into bowls and serve hot.
  • OPTIONS: Top with shreadded cheddar cheese, or your choice of cheese. and serve with saltine crackers or a grilled cheese sandwich. I like to make a stromboli to serve with this dish.

This is a pretty simple, but delicious chili that surprised us both and has replaced our prior favorite which was a slightly more labor-intensive chili from Cook's Illustrated. Avocado and cheese are optional garnishes. The chili is really good by itself, but was amazing smothering my favorite food, a baked potato!

1 (14 ounce) can diced tomatoes
1 1/2 teaspoons minced chipotle chiles in adobo (or to taste)
4 slices bacon, diced fine
1 boneless beef chuck-eye roast (3 1/2 - 4 lbs, trimmed and cut into 1-inch pieces)
1 onion, chopped fine
1 jalapeno chile, seeded and chopped fine
3 tablespoons chili powder (really pays to get a GOOD chili powder)
2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
5 garlic cloves, minced
4 cups water
1 tablespoon brown sugar
2 tablespoons corn muffin mix (like Jiffy or Red Mill)

Steps:

  • Add the can of tomatoes and the chipotle chiles to a food processor and pulse until smooth.
  • Cook the bacon in a large Dutch oven over medium heat until crisp. Transfer the bacon to paper towel-lined plate and reserve 3 tablespoons bacon fat.
  • Pat the beef dry with paper towels and season with salt and pepper.
  • Heat 1 tablespoon of the reserved bacon fat in empty Dutch oven over medium-high heat until just smoking. Working in batches, brown the beef on all sides (use a second tablespoon of the reserved bacon fat for the second batch). Be sure not to overcrowd the pan or the beef will steam and not brown. Transfer the browned beef to a bowl and set aside.
  • Add remaining tablespoon of bacon fat, onion, and jalapeno to empty Dutch oven and cook until softened, about 5 minutes.
  • Stir in chili powder, cumin, oregano, and garlic and cook until fragrant, about 30 seconds.
  • Stir in water, pureed tomato mixture, bacon, browned beef, and sugar and bring to boil.
  • Reduce heat to low and simmer, covered, for 1 hour.
  • Remove cover, skim fat from the surface and continue to simmer uncovered until meat is tender, 30 to 45 minutes.
  • Ladle 1 cup chili liquid into medium bowl and stir in muffin mix; cover with microwave-safe wrap/waxed paper. Microwave until mixture is thickened, about 1 minute. Slowly whisk mixture into chili and simmer until chili is slightly thickened, 5 to 10 minutes. Season with salt and pepper before serving. Garnish with avocado and cheese if desired.
  • The chili can be refrigerated for up to 3 days.

Kosher salt and freshly ground pepper
1/4 cup vegetable oil, plus more as needed
1 large Spanish onion, chopped
5 large cloves garlic, minced
1/4 cup, plus 1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 15-ounce can crushed tomatoes
2 1/2 cups low-sodium chicken broth
1 15 1/2-ounce can pinto beans, rinsed and drained
Serving suggestions: White rice, chopped cilantro, shredded Cheddar, chopped tomatoes, minced fresh or pickled jalapeno peppers, sour cream

Steps:

  • 1. Pat the meat dry with a paper towel and season with salt and pepper. Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Add the meat, in batches, and cook, turning, until well browned, about 3 minutes per batch, adding more oil to the pan as needed. Transfer the meat to a bowl and reserve.
  • 2. Add the onion to the pot and cook over medium heat until golden and tender, scraping up the browned bits with a wooden spoon from the bottom of the pan, about 10 minutes. Add the garlic and cook, stirring for 2 minutes more. Stir in 1/4 cup chili powder, cumin, and oregano and cook for 2 minutes. Add the crushed tomatoes and 2 cups broth. Add the meat and any accumulated juices back to the pot. Bring to a gentle simmer. Season chili with salt and pepper, cover, and cook 30 minutes.
  • 3. In a food processor or blender, puree half the beans with remaining 1/2 cup broth. Add both the whole and pureed beans to the chili. Let simmer, uncovered, until the meat is tender, about 1 hour more, stirring occasionally to prevent sticking. Stir in the remaining 1 tablespoon chili powder and season with salt and pepper, as needed. Serve chili over rice with condiments as desired.

2 tablespoons olive oil
2 medium onions, chopped
2 garlic cloves, minced
1 medium green pepper, chopped
1-1/2 teaspoons salt

3 teaspoons beef bouillon granules
1/8 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon dried oregano
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 cup water
1 can (16 ounces) kidney beans, rinsed and drained
Optional: Sour cream and jalapeno slices

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, 5-7 minutes; crumble beef. Drain and set aside. , In the same pot, heat oil; saute onions until tender. Add garlic; cook 1 minute longer. Stir in the green pepper, salt, chili powder, bouillon, cayenne, cinnamon, cumin and oregano. Cook for 2 minutes, stirring until combined. , Add tomatoes and browned beef. Stir in water. Bring to a boil. Reduce heat; cover and simmer for about 1 hour. Add beans and heat through. If desired top with sour cream and jalapeno.
