The chipotle peppers give this slow cooker chili a subtle, smoky flavor. Add more minced chipotle peppers to taste. Serve with sour cream, sharp Cheddar cheese, and chopped fresh cilantro.

1 pound bulk hot Italian sausage
2 pounds ground beef
5 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon ground coriander
2 cloves garlic, minced
1 large onion, diced
1 (28 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (14 ounce) can kidney beans
2 teaspoons minced chipotle peppers in adobo sauce
1 teaspoon salt
ground black pepper
1 (6 ounce) can tomato paste

Steps:

  • Cook sausage and ground beef in a large pot over medium-high heat until lightly browned and crumbly. When the meat has released its grease, and has begun to brown, drain off accumulated grease, and season with chili powder, cumin, and coriander. Cook and stir for 1 minute until fragrant, then stir in the garlic and onion. Cook until the onion has softened and turned translucent, about 4 minutes.
  • Stir in the diced tomatoes, tomato sauce, kidney beans, chipotle peppers, salt, and pepper. Bring to a simmer, then pour the chili into a slow cooker. Cover, and cook on Low for 8 to 10 hours. Stir in tomato paste an hour before the chili is done.

2 medium onions, cut in half, then cut into 1/4-inch slices and slices separated
2 teaspoons finely chopped garlic
1 teaspoon salt
1 tablespoon ground cumin
1/8 teaspoon pepper
2 pounds pork boneless loin roast, cut into 1-inch pieces
1 chipotle chili in adobo sauce, finely chopped, plus 1 teaspoon adobo sauce (from 7- to 11-ounce can)
3 cans (14.5 ounces each) diced tomatoes with green chilies, undrained

Steps:

  • Heat oil in 4 1/2- to 5-quart Dutch oven over medium-high heat. Cook onions and garlic in oil 4 to 5 minutes, stirring occasionally, until onions are softened.
  • Stir in salt, cumin, pepper and pork. Cook 6 to 8 minutes, stirring frequently, until pork is lightly browned.
  • Stir in chipotle chili, adobo sauce and tomatoes. Heat to boiling; reduce heat to medium-low. Cover and cook 35 to 40 minutes, stirring occasionally, until pork is no longer pink in center.

Water, vegetable oil and eggs as called for on brownie mix box
1 teaspoon ground cinnamon
1/2 to 3/4 teaspoon chipotle chile powder
2 cups powdered sugar
1/4 cup dulce de leche (from 13.4 oz can)
2 tablespoons butter or margarine, softened
2 tablespoons milk
1 teaspoon vanilla

Steps:

  • Heat oven to 350° F (325° F for dark or nonstick pan). Grease or spray bottom of 8-inch pan.
  • Make brownie batter as directed on box, using water, oil, and eggs, adding cinnamon and chipotle powder until well blended. Spread into pan. Bake 39 to 42 minutes or until toothpick inserted 2 inches from edge comes out almost clean. Cool completely.
  • In medium bowl, beat powdered sugar, dulce de leche, butter, milk, and vanilla with electric mixer on low speed until smooth and creamy. Spread onto cooled brownies.

1-3/4 cups sugar
3/4 cup all-purpose flour
3/4 teaspoon ground chipotle pepper
1/4 teaspoon salt
1 cup butter
4 ounces unsweetened chocolate
1 chili dark chocolate candy bar (3-1/2 ounces)
4 large eggs, lightly beaten
1 teaspoon vanilla extract
ICING:
12 ounces cream cheese, softened
2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
1/4 teaspoon ground chipotle pepper

Steps:

  • Preheat oven to 350°. Sift together sugar, flour, ground chipotle pepper and salt. Set aside., In top of a double boiler or a metal bowl over simmering water, melt butter and both types of chocolate; stir until smooth. Cool slightly. Stir chocolate mixture into dry ingredients. Beat in eggs and vanilla., Spread batter into a 13x9-in. baking pan coated with cooking spray. Bake until center is set, about 25 minutes (do not overbake). Cool completely. , For icing, beat together cream cheese, confectioners' sugar, vanilla and chipotle pepper. Spread over brownies. Cut into 24 bars.

2 pounds lean ground beef
4 slices thick cut bacon (6 strips if using regular bacon)
1 onion (chopped)
1 red bell pepper (chopped)
4 cloves garlic (minced)
2 Chipotle Peppers in Adobo Sauce (chopped (Note...2 peppers not 2 cans!))
1/4 cup flat-leaf parsley (finely chopped)
3 Tbsp chili powder
2 tsp cumin
1 tsp salt
1 tsp black pepper
1/4 tsp cayenne pepper
46 oz. can V-8 juice
1/4 cup bourbon (optional)
2 Tbsp molasses
28 oz. can diced tomatoes
15 oz. can tomato sauce
16 oz. can kidney beans (drained and rinsed)
16 oz. can pinto beans (drained and rinsed)
16 oz. can black beans (drained and rinsed)
Shredded cheese
Sour cream (you can substitute plain yogurt)
Green onions (finely sliced)

Steps:

  • In a large pot, cook the ground beef over medium-high heat until no longer pink. Transfer the meat to a bowl. Drain any grease from the pot and add the bacon. Cook until firm but not crisp. Remove all but 2 Tablespoons of fat from the pot and add the onion, red bell pepper, garlic, Chipotle peppers, and parsley and cook over medium heat, stirring occasionally, until onions are fragrant and softened (about 5 minutes). Turn heat to low and add the chili powder, cumin, oregano, salt, pepper and cayenne pepper. Stir until combined and saute on low for 2 more minutes.
  • Put the ground beef back into the pot. Add the V-8 juice, bourbon, molasses, diced tomatoes, tomato sauce, kidney beans, pinto beans and black beans to the pot. Slowly bring to a boil and then turn heat down to medium low, cover with some venting and simmer for 2 hours; stirring occasionally. If sauce needs to thicken a bit, remove lid and cook for another 15-20 minutes.
  • Serve warm with cheese, sour cream and chopped green onions.

Heat the remaining butter and the unsweetened chocolate in a saucepan over low heat, stirring constantly, until melted. In a medium bowl, stir together remaining flour, sugar, cinnamon, and ground chipotle. Add sugar mixture to melted chocolate mixture, stirring to combine. Add eggs, mixing until smooth. Stir in chopped chocolate or chocolate morsels. Pour mixture into the prepared baking pan or dish. Bake until the center is set, 35 to 40 minutes. Cool completely and then cut into small squares.
