1/2 lb. cooked chicken breast
1 3/4 c. Chicken Stock
1 can diced tomatoes
1 can black beans
1 red potato
1 large carrot
2 clove garlic
2 tsp. chili powder
1/2 tsp. cumin seeds
Salt and pepper to taste
1/4 c. Chopped fresh parsley for garnish

Steps:

  • Combine the chicken, stock, tomatoes, beans, potato, carrot, garlic, chili powder, and cumin seeds in a 6-quart pot. Cover and bring to a boil. Reduce the heat, and simmer until the potato and carrot are tender, 15 to 20 minutes. Taste and season with salt and pepper if needed.Variations: Substitute turkey for the chicken, and pinto beans for the black beans.

1 medium onion (chopped)
2 teaspoons canola oil
5 medium red potatoes (cubed)
1 can ((14-1/2 ounces) chicken broth)
1 can ((10-3/4 ounces) condensed cream of chicken soup, undiluted)
1/2 cup salsa verde
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon salt
2 cups cubed cooked chicken breast
1 can ((15-1/2 ounces) great northern beans, rinsed and drained)
1 can ((14-3/4 ounces) cream-style corn)
1/2 cup sour cream
Shredded cheddar cheese and additional sour cream for topping (, optional)

Steps:

  • Saute onion in oil in a large saucepan until tender. Add potatoes, broth, soup, salsa and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender. Stir in the chicken, beans and corn; heat through. Stir in sour cream right before serving. Serve with cheese and sour cream if desired.

After trying other white chili recipes, I created my own that full with ground chicken, beans, peppers, and savory herbs, hot-spicy yet sweet, and creamy for a change from tomato-based chili. My partner frequently takes my cooking to work for colleagues to sample, and they said this is not only some great chili with kick, it's one of the best non-standard chilis they've eaten! Thick and robust, great for dinner on a cool evening. Up the ante with tortilla chips or corn muffins as a side--with kernel corn and diced chiles added to the muffin batter.

2 pounds ground chicken
1 cup water
1 medium onion, diced
1 medium green bell pepper, diced
6 small Peppers, jalapeno, raw
4 cloves garlic, minced
1 tablespoon chili powder
2 teaspoons salt
2 teaspoons dried basil
2 teaspoons dried oregano
1 ½ teaspoons ground thyme
1 ½ teaspoons ground black pepper
¼ teaspoon cayenne pepper
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can great northern beans, drained
1 (15 ounce) can sweet corn, drained
½ cup white sugar
1 (8 ounce) tub whipped cream cheese
1 (8 ounce) container sour cream
1 (12 fluid ounce) can or bottle beer

Steps:

  • Combine chicken and water in a large Dutch oven over medium-high heat. Cook and stir, breaking up the chicken finely, about 5 minutes. Add onion, bell pepper, jalapenos, and garlic; continue to cook until vegetables are soft and liquid is nearly cooked off, about 5 minutes.
  • Stir in chili powder, salt, basil, oregano, thyme, black pepper, and cayenne pepper; reduce heat to medium. Taste and adjust seasonings. Stir in pinto beans, great northern beans, corn, and sugar. Add cream cheese and sour cream; cook and stir until thoroughly blended. Stir in beer.
  • Reduce heat to low, cover, and simmer, stirring occasionally, for 45 to 60 minutes.

12 oz boneless skinless chicken breast, cubed
1 c onion, chopped
4 can(s) great northern beans, 1/2 cans drained
1 c fat free half and half
1 can(s) (4.5oz) green chilies
3 chicken bouillon cubes
1 tsp cumin
1/2 tsp chili powder
1 c frozen corn
1/2 tsp onion powder
1/2 tsp adobo
1 Tbsp bacon salt
dash(es) tabasco
salt and pepper to taste

Steps:

  • 1. In large saucepan spray with cooking spray and cook chicken and onion until chicken is lightly brown. Add all remaining ingredients, mix well, bring to a boil, reduce heat and simmer for 15 minutes, until slightly thickened. Mash beans slightly with hand held blender or potato masher. Add corn startch and water to thicken to desired consistancy.
  • 2. Serve topped with sour cream and cheddar cheese. May also serve with cilantro and salsa.
  • 3. Optional: May add 10 slices turkey bacon cooked and chopped to recipe.

This is my best friend's and my attempt to replicate the Green Chicken Chile Soup served at Los Arcos Steakhouse in Truth or Consequence, New Mexico. We love it and have it every time we are at the lake. I called several years ago and they will not give out the recipe. My best friend and I decided we needed to try to replicate it and used our husbands as guinea pigs -- we are close! This is fabulous any time but especially good on a COLD New Mexico night!

3 -4 chicken breasts, boneless, skinless, cooked & cubed
1/2 cup green chile, peeled & chopped
2 (10 ounce) cans cream of mushroom soup, undiluted
1 (10 ounce) can cream of potato soup, undiluted
1 cube chicken bouillon
4 cups milk
2 medium potatoes, partially cooked & diced
1 tablespoon garlic pepper (or to taste)
1 tablespoon salt

Steps:

  • Cook chicken -- you can even grill for more enhanced flavor.
  • In large dutch oven, place 3 cans of soup and 4 cups of milk.
  • Mix til well combined.
  • Bring to medium simmer and add bouillon cube.
  • Simmer on low for 10 minutes.
  • Add cooked and chopped/mashed potatoes, combine.
  • Add chicken, chopped chile, garlic pepper, and salt.
  • Combine well and let simmer about 20 minutes.
  • Preferred method for us is put ALL in crock pot and put on low for 4-6 hours.

1 onion, chopped
2 carrots, chopped
2 stalks celery, chopped
1 garlic clove, minced (I'll use more!)
2 -3 cups fat free chicken broth
2 cups frozen corn, thawed
2 cups cooked chicken breasts, diced
1 (4 ounce) can green chilies
1/2 teaspoon black pepper
1 tablespoon cornstarch
1 1/2 cups fat-free half-and-half

Steps:

  • Spray a large saucepan with cooking spray, then add onions through garlic and saute over mediun-high heat. Add a little chicken broth to prevent burning and cook 8-10 minutes.
  • Add corn, chicken, chiles, pepper, and remaining broth. Bring to a boil 2-3 minutes.
  • Dissolve cornstarch in the half and half, then stir into soup.
  • Bring to a boil, then serve.
