SLOPPY JOE TATER TOT CASSEROLE

- Place half the Tater Tots in bottom of 5-qt. slow cooker. In a large skillet, cook beef over medium-high heat until no longer pink, 5-6 minutes, breaking into crumbles. Drain. Stir in the next 8 ingredients; reduce heat and simmer 2-3 minutes. Place beef mixture in slow cooker; top with remaining Tater Tots. Cook, covered, on low 4 hours. Top with cheese. Sprinkle with paprika. Let stand, uncovered, 15 minutes before serving.

CHILI CHEESE TATOR TOTS
This recipe is similar to Sonic Drive-In's recipe. It is very easy and quick. You can increase or decrease the size you want to cook easily.

- 1. Use a sprayed ovenproof bowl measuring about 6 X 6 inches (or your choice). Take out just enough tater tots to spread in a single layer in the bowl and cook by package instructions (about 20 minutes at 400 degrees). Replace left over frozen tater tots back in the freezer. Spoon chili evenly over the tater tots when they have cooked. Sprinkle grated cheese over the chili. Place mixture back in the oven for about 5 more minutes or until cheese is melted. You can increase servings by adding more ingredients to a larger baking dish. Go by the same instructions above, layering your ingredients in your sprayed dish and just doubling or tripling everything. Serve with slaw, green salad or other vegetables.
- 2. NOTE: Try Hormel Chili With Beans. I prefer Hormel Chili Without Beans but you can use your favorite brand or use homemade chili.
CHILI TATER TOT CASSEROLE
I looked at Tater Tot casseroles on Recipezaar to see if there was one like this, and I didn't find a recipe. A friend of mine told me how she makes the casserole and the other recipe's are similar to hers. But what do you do when you want potatoes and chili? Use what brands you like, this is what I picked up in the grocery. Big casserole for a big crowd or left overs.

Steps:
- In a 10 inch cast iron skillet, brown the ground beef and ground turkey together. Season as you like.
- I used a 13 x 9 oval Pyrex casserole dish.
- Put the meats in the casserole dish.
- Pour the can of chili over the meats and blend together, pat down into the dish.
- Sprinkle the grated cheese liberally over the meat-chili mix, create a NICE layer of cheese.
- Pour the Tater Tots out of the bag onto the top off the cheese and even them out so they heat evenly, sprinkle a little seasoning over the top if you like.
- Bake at 350 degrees for about 35 to 40 minute, until tater tot are heated and cheese is melted.
- Scoop onto platters and serve.

- In a large skillet, cook the beef over medium heat until no longer pink; drain. Stir in the chili, tomato sauce, olives and green chilies. Transfer to two greased 8-in. square baking dishes. Sprinkle with cheese; top with Tater Tots. Cover and freeze one casserole for up to 3 months. , Cover and bake the remaining casserole at 350° for 35-40 minutes or until heated through. , To use frozen casserole: Remove from the freezer 30 minutes before baking (do not thaw). Cover and bake at 350° for 1-1/4 to 1-1/2 hours or until heated through.

- BROWN: Heat a large, oven-safe skillet or 3-4 quart dutch oven over medium-high heat. Add the oil and the ground beef and using a wooden spoon crumble the beef until it cooks; about 4-5 minutes. Season with a big pinch of salt and black pepper.
- CHILI: Lower the heat to medium, add the onions, poblanos, and jalapeños and continue to cook until the veggies soften about 5 minutes. Add the garlic, chili powder, cumin, and smoked paprika and continue to cook for a few seconds so the spices heat through. Add the tomato paste, chipotle peppers, hot sauce, and chili beans and allow the chili to start bubbling before lowering the heat to low and letting it simmer for 10 minutes. If the chili starts drying out too much, add up to ¼ cup of water.
- BAKE: If you’ve got an oven-safe skillet you can bake the hotdish directly in the skillet/dutch oven. If not, I suggest transferring the chili mixture to a large oven-safe baking dish. Top with the cheese and line up the tater tots as desired. Bake for 25-27 minutes or until the tater tots cook through. Serve with chopped scallions and sour cream!

- Brown the beef in a large pot or Dutch oven over medium heat, crumbling as it cooks. Once browned, drain excess grease.
- In the same pot, add the onions and garlic and combine with the beef. Cook until onions are softened and fragrant, about 3 minutes.
- Add the tomato paste to the pot and stir well to combine. As the tomato paste begins to stick to the bottom of the pot, add in the tomato sauce and crushed tomatoes. Stir to combine and bring to a simmer.
- Once the chili is simmering, add in the beans, chili powder, paprika, thyme, and salt and pepper to taste. Lower the heat to medium-low and simmer gently for 10 minutes. If the chili starts to boil, turn the heat down further to achieve a simmer.
