CHILI-CHEESE SWEET POTATO FRIES
Bake these cheesy sweet potato fries layered with chili - easy side dish that's ready in 30 minutes.

Steps:
- Heat oven to 450°F. Arrange fries in single layer on 15x10x1-inch pan. Spray fries with cooking spray. Bake 18 to 22 minutes or until crisp.
- In small saucepan, heat chili over medium heat 3 minutes or until thoroughly heated.
- Transfer fries to serving platter or individual plates. Spoon chili over fries; sprinkle with cheese and onions. Serve immediately.

The combination of flavors in this yummy chili fries recipe reminds me of a chili cheese dog. Sweet potato fries are my favorite and I love using them as a base rather than regular fries. These would be great on game day!

- 1. Preheat oven to 450. Arrange fries in single layer on cookie sheet, sprayed with cooking spray. Bake about 20 minutes, until crisp. I like mine extra crispy to stand up to toppings.
- 2. In a small saucepan, heat chili over medium heat until thoroughly heated.
- 3. Put fries on a serving platter. Spoon chili over fries. Sprinkle with cheese & onions. Serve hot. Optional toppings that are low calorie: black olives, tomatoes, lettuce.

- Heat a large skillet over medium heat and add the coconut oil. Place the sweet rounds in the oil and cook until crispy, about 4 to 5 minutes per side. Remove the potatoes from the skillet and place them on a paper towel to remove any excess oil. Season them with the salt, pepper and paprika.
- Turn on the broiler in your oven. Layer the sweet potatoes on a baking sheet or in a skillet and cover them with the cheese. Broil them until the cheese is golden and bubbly, 1 to 2 minutes. Remove from the oven and immediately top with the chili, an avocado, yogurt or sour cream, green onions and cilantro. Serve!
