Steps:
- Pre-heat the oven to 400 degrees F.
- Heat olive oil over medium-high heat in a Dutch oven or deep saute pan. Brown the lamb and beef. Remove the meat from the pan with a slotted spoon. Add the onions to the pan and saute until the onions are tinged brown at the edges - about 5 minutes. Add the chopped carrots and cook for 5 minutes. Add the mushrooms, tomato puree, thyme, parsley and cinnamon. Stir and saute for 2 minutes. Next, stir in the flour, which will soak up the juice, then stir in the wine and the beef stock. Taste and add salt and pepper, as needed. Return the meat to the pan and bring to a boil. Cover, turn down the heat to low and simmer for about 30 minutes until the lamb is fully cooked.
- Peel the potatoes, cut them into large even-sized pieces and place into a pot of cold, salted water. Bring the water to a boil and cook potatoes until they are tender, about 10 minutes. (Potatoes are done when a knife can easily go through.)
- When the potatoes are done, drain off the water, return them to the saucepan, cover with a clean tea cloth to absorb the steam and leave them for about 5 minutes. Next, add the butter and mash them to a puree. Season with salt and pepper. When the meat is ready, spoon it into a 9-by-13-inch baking dish and level it out with the back of the spoon. After that, spread the mashed potato evenly all over. Sprinkle the scallions on top of the potato, scatter the cheese over the scallions and bake the pie until the top is crusty and golden, about 25 minutes.

Steps:
- Make the chili: In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and softened, about 6 minutes. Add the ground beef and McCormick® Original Chili Seasoning, and stir with a wooden spoon to break up the ground beef into small pieces. Add the diced tomatoes and cook for 5 minutes, or until the beef is fully cooked through. Stir in the tomato sauce and salt, and cook for another 2 minutes, until thickened slightly. Add the canned kidney beans and mix until combined.
- Pour the ground beef mixture into a 9x13-inch baking dish, spreading evenly. Sprinkle the cheddar cheese on top.
- Make the mashed potatoes: Peel and quarter the potatoes. Place in a pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, 20-30 minutes. Drain the potatoes and transfer to a large bowl.
- Add sour cream and melted butter to the bowl with the potatoes. Using an electric hand mixer on medium-low speed, whip the potatoes until smooth. Add the half-and-half, McCormick® Garlic Powder, white pepper, and salt, and mix on low speed until combined.
- Spread the mashed potatoes evenly over the chili.
- Turn the broiler on high. Broil the shepherd's pie for 10 minutes, or until the top is light golden brown. Serve warm.
- Enjoy!

CHILI CHEESE PIE
This a quick and easy favorite in our house. You will need either one large casserole dish or two small ones. The long kind (9x6, I think) will hold the whole recipe.

Steps:
- Mix egg, sugar, milk and cornbread mix.
- The box may call for less milk but a half cup makes the batter loose enough for this recipe.
- Butter your casserole dish and pour in batter. Set it aside.
- Mix onion, bell peppers, chickpeas, salsa, chili and half the cheese and spoon on top of the corn bread batter.
- Top with the rest of the cheese.
- Bake at 350 degrees for 30 minutes or until the cheese is browning and bubbling.
CHEDDAR-TOPPED SHEPHERD'S PIE
Old-style pubs have it right: Sitting down to a generous helping of shepherd's pie is a true pleasure; making it is happily simple. We've added sharp cheddar to our mashed potatoes for a snappy topping.

Steps:
- Preheat oven to 450 degrees. Place potatoes in a large saucepan, and cover by 1 inch with salted water. Bring to a boil; reduce to a simmer. Cook until potatoes are easily pierced with the tip of a paring knife, 15 to 20 minutes.
- Meanwhile, heat oil in a 5-quart Dutch oven or heavy pot over medium-high. Add carrots, celery, onion, and thyme. Cook, stirring occasionally, until vegetables are tender, 8 to 10 minutes. Add flour and tomato paste; cook, stirring, 1 minute. Add beef; cook, stirring occasionally, until no longer pink, 6 to 8 minutes. Add 1 cup water; bring to a boil, and simmer 1 minute. Set beef filling aside.
- Drain potatoes; return to pan. Cook over medium, stirring, until liquid has evaporated and a thin film covers bottom of pan, about 1 minute. Remove pan from heat; add milk and 1 cup cheese. Mash until smooth; season cheddar-potato topping with salt and pepper.
- Pour beef filling into a 13-by-9-inch baking dish. Drop dollops of topping over filling; spread to edges with a spatula. Using a fork, make decorative peaks; sprinkle with remaining 1/2 cup cheese. Bake until topping is browned and filling is bubbling rapidly, about 20 minutes (if topping and filling were chilled, increase to 35 minutes). Let stand 5 minutes before serving.

LEFTOVER ESSENTIALS: CHEESY CHILI SHEPPERD'S PIE
During the Autumn/Winter seasons I make a lot of stews, chilies, casseroles, the lot. I freeze what is left and take it out when the fit takes me. As to chili, there are more things to do than just put it in a bowl and heat it up. This is an excellent way to use some leftover chili. We are talking about chili, cheese, and taters. What is not to like. So, you ready... Let's get into the kitchen.

Steps:
- PREP/PREPARE
- I am using a ramekin that is 4.25 by 2 inches (10.8 by 5cm). You could, of course use any vessel you have handy.
- This recipe is designed to feed one hungry person; however, you could double or triple the ingredients, put it into a baking dish and feed several.
- Can I freeze this? This recipe can be assembled and frozen. When needed just defrost for an hour on the countertop and follow the baking directions as written.
- Gather your ingredients (mise en place).
- Set a rack in the middle position and preheat the oven to 400f (205c).
- Add the chili to the ovenproof vessel.
- Add the cheese.
- Add the taters on top.
- Place into the preheated oven, and cook until heated through, and the taters begin to brown, about 28 - 32 minutes. Then allow to rest for 6 - 10 minutes before serving.
- PLATE/PRESENT
- Serve while nice and hot. Enjoy.
- Keep the faith, and keep cooking.
