- Season 70/30 ground beef with seasoning salt, garlic, black pepper, cumin and chili powder. Brown.
- Add in crushed tomatoes, onions, cilantro, tomato sauce and water.
- Let everything simmer for about 20 minutes.
- Place the Frito Lay Chips at the bottom of a casserole dish.
- Pour the homemade chili over the chips.
- Top the chili with cheese. (I like to use a combination of cheddar and mozzarella cheese but mainly cheddar.)
- To add more color and flavor, add diced tomatoes and green onions on top of the cheese (optional).

- Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, mix together the baking mix and water to form a smooth dough. Set aside.
- Spread half of the chili into the bottom of a 1 1/2 quart casserole dish. Make a layer of the hot dogs over the chili. Cover the hot dog layer with cheese, then top with the rest of the chili. On a lightly floured surface, roll out the biscuit dough to 1/4 inch thickness. Lay the dough over the contents of the dish, and poke a few slits to vent steam.
- Bake for 15 to 25 minutes in the preheated oven, or until the top crust is golden.

- 1. Brown ground beef or turkey with the onion over medium-high heat until no longer pink. Add all but 1 teaspoon of the chili seasoning and mix well. Set remaining seasoning mix aside. Stir in the tomatoes, beans and corn. Cook and stir for 2 minutes, until heated through. Reduce heat to low and simmer while making potatoes. For potatoes: Bring water, salt and butter to a boil in a medium saucepan. Remove from heat and stir in milk and potato flakes. Stir in 1/2 cup of the shredded cheese. Place chili mixture into greased 2 quart casserole. Carefully spread mashed potatoes on top of chili. Top with remaining 1/2 cup cheese and reserved chili seasoning. Bake in 350 degree oven for 30 minutes.
- 2. *This is the 4 serving size amount of potatoes, which is how I wrote the recipe for the contest. I actually prefer it with more potatoes(the 6 serving amount). Just adjust the other potato ingredients according to the instructions on the box of potato flakes. Also, instant potatoes is something I rarely actually have on hand, so when I make this for us, I usually use real mashed potatoes.

- Press a layer of dough into your pie plate. Paint with egg wash and bake at 375 degrees for 5 minutes. Allow to cool completely.
- Pour chili into pie dish, and top with shredded cheese.
- Paint egg wash on outer edges of lower pie crust, then place top layer of pie crust over the pie. Press edges down with a fork to seal, brush entire top with egg wash, then cut a few slits in the top to vent.
- Bake at 375 degrees on middle rack for 25 - 30 min until crust is browned and chili is heated through.

- The box may call for less milk but a half cup makes the batter loose enough for this recipe.
- Butter your casserole dish and pour in batter. Set it aside.

- For the chili: Place a skillet over medium-high heat and add the oil. When the oil is hot, add the ground beef and brown, crumbling as you go, until cooked through, 7 to 8 minutes. This was one of my Mom's favorite recipes for pot lucks. It is always a hit. It can be really easy if you use bagged shredded cheese and frozen pie crust. The recipe can also be doubled--use a rimmed cookie sheet lined with pastry dough--just double the ingredients and follow the directions.

- 1. Mix butter and flour with a fork till blended. Add egg and salt and work until it holds together. Roll out on floured board. Fit into pie tin, fluting the edges.
- 2. Bake the pie shell in a 400 degree oven 12 minutes till lightly browned.
- 3. Sprinkle all Jack and 1/2 the cheddar cheese over the crust (if using one of the other cheeses, place 2 cups of the cheese in the crust). Distribute the chilis over the cheese. I also like to use 4oz soy chorizo and diced onions that have been sauted together and cooled before adding to the pie.
- 4. Beat the half and half (or milk) with the eggs and salt. Pour over the pie and sprinkle with the remaining cheese
- 5. Bake for 40 minutes at 325 degrees. Remove from oven when a knife inserted in center comes out clean and the pie is solid. Let stand for 15 minutes before cutting.
FRITO PIE RECIPE

- Heat the oil in a large pot and add the ground beef, onion and peppers. Cook them down about 10 minutes, or until the beef is cooked through and the vegetables are softened.
- Add the garlic and cook another minute, stirring.
- If using fresh tomatoes, chop them and add them to the pot. Cook about 10 minutes to let them break down. If using canned fire roasted tomatoes, just add them to the pot and go to the next step.
- Add the remaining ingredients and give it all a good stir.
- Reduce the heat and cook the chili on low for at least 30 minutes to let the flavors develop, stirring every now and then. I usually simmer 1 hour. Adjust for seasonings if you wish.
