MEATLOAF WITH CHILI SAUCE
Covering the cooked meatloaf with chili sauce then returning it to the oven for a few minutes gives a slightly sweet, mildly spicy glaze on top.

- Preheat oven to 350 degrees, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds. Add sirloin, pork, onion, garlic, 1/2 cup chili sauce, parsley, Parmesan, eggs, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined; do not overmix or meatloaf will be dense.
- Divide mixture in half. Gently pat each half into a log, and place each log in an 8 1/2-by-4 1/2-inch loaf pan. Do not press down or into corners.
- Bake 50 minutes. Brush tops of loaves with remaining 1/4 cup chili sauce; continue cooking until juices run clear and an instant-read thermometer inserted into thickest part registers 160 degrees, about 10 minutes.
- Remove from oven; let rest 5 minutes. Turn loaves out of pans; slice each into eight 3/4-inch-thick slices.

NEW MEXICO GREEN CHILE MEATLOAF
Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
- Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Let cool in the pan for 10 minutes before transferring to a serving dish.

- In a large bowl, beat egg with a fork.
- Add bread crumbs, salt and pepper.
- Gently mix in ground beef.
- Set aside.
- In a large frying pan, heat oil on medium-high heat.
- Add onion; cook for 5 minutes or until softened.
- Add sweet pepper and chili powder.
- Cook for another 4 minutes.
- Let cool slightly and then add to beef mixture.
- Add kidney beans and salsa.
- Pack into an 8 by 4 inch loaf pan.
- Bake in preheated 350F (180C) degree oven for 60-75 minutes.
- Drain off fat.
- Sprinkle cheddar cheese on top of meatloaf and return to oven for 5-7 minutes or until cheese is bubbly.

- Preheat oven to 350 degrees. In a large bowl, combine all ingredients except the beef and mix well. Add beef and combine well.
- Turn mixture into a 9 x 5-inch loaf pan and pat down to form a nice loaf shape.
- Bake 40 minutes. Brush glaze ingredients over meatloaf and bake another 20-25 minutes or until cooked through to 165 degrees.
- Let rest 10 minutes before slicing.

- Preheat oven to 375 degrees Fahrenheit.
- Spray Pam in large meat loaf pan; set aside.
- In large mixing bowl add hamburger, beaten eggs, Rye bread pieces and evaporated milk. Mix well.
- Add white wine vinegar, chili pepper, cumin and olives pieces. Mix.
- Add neufchatel cheese pieces to meat mixture. Mix.
- Put in loaf pan and pat down. Make sure the cheese pieces are not sticking up. Cover them so they are inside of the meat loaf.
- Bake for 40 minutes or until sides come away from the loaf pan and top has risen.
- Take out of oven and cool.

- Cook and stir bacon in a large skillet over medium heat until bacon is translucent and beginning to brown, about 5 minutes; stir in onion and continue cooking and stirring until bacon is browned and sweet onion is translucent, about 5 more minutes.
- Mix 1/2 cup ketchup, 2 tablespoons chili powder, 2 tablespoons ancho chile powder, 1 tablespoon Worcestershire sauce, cumin, salt, black pepper, and garlic powder in a large bowl. Mix in ground sirloin, bacon-onion mixture, Cheddar cheese, pepper jack cheese, eggs, and bread crumbs until thoroughly combined. Form the mixture into a loaf shape and refrigerate 1 hour.
- Preheat oven to 425 degrees F (220 degrees C). Line a 9x13-inch baking pan with aluminum foil and spray the foil with cooking spray.
- Place loaf into the prepared baking dish. Mix 1/2 cup ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon chili powder, and 1 teaspoon ground ancho chile in a bowl. Spread the mixture over the loaf.
- Bake in the preheated oven until the loaf is no longer pink inside and the juices run clear, 1 hour and 5 minutes to 1 hour and 15 minutes. An instant-read meat thermometer inserted into the center of the loaf should read at least 160 degrees F (70 degrees C).

- In a frying pan with olive oil, cook a 1/2 cup onion until it becomes translucent. Then add in 1 garlic clove, tomato paste, crushed tomatoes, the bouillon cube, oregano, chili powder, cumin, 1 tsp salt, and kidney beans. Stir well and let cook for 10 minutes. Then let cool. In a separate bowl, salt & pepper the ground beef to taste. Pour 3/4 of the chili mixture into the bowl with the beef and combine.
- On a baking tray, place 3 small bowls face down with a piece of tinfoil beneath each bowl. Wearing the gloves, cover each bowl with the ground beef mixture so that it completely covers the bowl. Then, press a small ball of meat on top of each bowl. Next, bake in the oven at 350°F for 12 minutes. Remove from oven.
- Meanwhile, cut one onion into three slices crosswise, so that you keep the onion ring layers intact. Separate the onion layers. In a medium sized bowl with 1 cup flour, coat each ring with flour and set aside. With the remaining flour, add 1 tsp salt, baking powder, and 1 cup milk. Mix well. Then dunk each onion ring in the batter and coat with breadcrumbs. Fry in hot oil 3 minutes per side.
- Next make the Bechamel sauce. Melt the butter in a casserole dish on medium heat. Add a 1/2 cup onion and 1 garlic clove and cook for 1 minute. Then add 1/3 cup flour and cook for 1 more minute. Next, add 2 cups cold milk and stir using a whisk. Once the mixture boils, add your cooked macaroni to the pot along with the cheddar and stir.

- Preheat the oven to 350 degrees F. Coat the bottom of a 13- x 9-inch or similar sized baking dish with nonstick cooking spray.
- In a large mixing bowl, combine ½ cup of chili sauce with the water. Add the oats, egg, diced green chilis, Worcestershire, chili powder, cumin, garlic powder, oregano, and black pepper. Mix well. Spread the glaze over the top of the meatloaf and return to the oven to bake about 15 minutes longer, or until a meat thermometer inserted in the center of the meatloaf registers 165 degrees F. Allow the meatloaf to stand for 5 to½10 minutes before slicing.
