CHILE CHEESE SQUARES
This is a family favorite and it is very easy to make. We originally discovered it as an appetizer, but I think it is great for brunch. I also make it just for myself and freeze the squares to have for lunch in the future. The recipe is very open to substitutions. Fresh green chiles can be used if you happen to live where you can get them and the recipe can probably be made without them or with any amount according to your tastes.

Steps:
- Sprinkle chiles and cheese in the bottom of a lightly greased 9-inch square baking pan.
- Combine biscuit baking mix, cream or milk, eggs, and salt in a medium-sized bowl.
- Beat until thoroughly blended.
- Pour over chili-cheese mixture.
- Bake in a 375º for 30 minutes or until puffed, golden, and a skewer inserted in center comes out clean.
- Let stand 10 minutes before slicing.
- Garnish with olive slices, if you wish.
- To freeze ahead: Freeze squares in a single layer on a large baking sheet.
- Transfer to a plastic bag when frozen.
- To reheat: arrange squares in a single layer on a large baking sheet and bake at 350º for 15 minutes.

- Beat Bisquick, milk and eggs together. Pour over cheese and bake in oven for 20-30 minutes at 350 degrees or until golden brown.

- In a medium saucepan, bring water, salt and garlic to a boil; slowly stir in grits. Reduce heat; cook and stir for 3-5 minutes or until thickened. Remove from the heat. Add butter, 1 cup cheese and chilies; stir until butter melts. Beat eggs and milk; add to the grits and mix well. Pour into a greased 2-qt. baking dish. Bake, uncovered, at 350° for 45 minutes. Sprinkle with remaining cheese.

CHILI CHEESE GRITS
Grits are hulled, dried, and cracked corn kernels. To add variety to your grain repertoire, try them! I do urge you to try using stone-ground grits, which are much more flavorful than those sold in supermarkets. However, the latter can't be beat for convenience, especially the quick-cooking kind.

Steps:
- Bring 4 3/4 cups water to a simmer in a large saucepan. Slowly sprinkle in the grits, stirring constantly to avoid lumping. Cook over very low heat until smooth and thick, about 25 minutes for stone-ground and 5 minutes for quick grits.
- Stir in the remaining ingredients. Heat until the cheese is smoothly melted into the grits and serve.

- Bring the water to a boil in a saucepan. Stir in the grits. Cook for 8 minutes, stirring frequently. Add the cheese, stirring until melted. Stir in green chilies. Season with salt and pepper. Spoon the grits mixture into a greased 9x13 inch baking pan. Let stand until cool. Chill, covered, for 2 to 10 hours.
- Cut the grits into 8 squares with oil. Cook on a hot griddle or in a large nonstick skillet until light brown and crisp on both sides.
