1 lb ground beef
1 (15 ounce) can Wolf brand chili (with or with out beans)
2 cups shredded cheddar cheese (i use sharp)
1 lb Velveeta cheese (cubed)
10 flour tortillas

Steps:

  • Preheat oven to 350.
  • Brown ground beef drain put back in pan.
  • Add about 3/4 can of chili to ground beef.
  • Add i little bit of water to the 1/4 chili thats left in the can and stir should be a little runny put aside.
  • Add cubed velveeta to ground beef and chili.
  • Add about 1 cup of shredded cheese to ground beef, chili and velveeta.
  • Heat mix in large skillet on medium until all the cheese is melted.
  • Grease lightly a 9 x 13 casserole pan.
  • Spoon meat chili cheese mix into tortillas ( about 2 spoonfuls in each).
  • Roll them up and place in casserole dish ( should fit 8 to 10).
  • If anything was left of ur meat chili cheese mix add to the can of chili u had set aside, stir and if needed add little mre water to remake runny not to thin ( to cover tortillas).
  • Spoon that over all tortillas should cover all of them.
  • Sprinkle remaining shredded cheese on top.
  • Put in oven and Bake for 15 mins or until cheese on top is melted.

Green Chile Enchiladas are corn tortillas stuffed with ground beef, onions, and Monterrey Jack cheese, then smothered in green chile sauce.

1 pound ground beef
1 medium onion (finely chopped)
1 clove minced garlic
Salt and pepper to taste
1 teaspoon chili powder
¼ teaspoon cumin powder
Vegetable oil for frying tortillas
1 dozen corn tortillas
2 cups Monterey Jack cheese, shredded (4 ounces)
4 tablespoons butter
4 tablespoons all-purpose flour
¾ teaspoon salt
2½ cups milk
1 4-oz can chopped green chiles

Steps:

  • Brown 1 lb ground beef along with 1 medium chopped onion, 1 clove minced garlic, salt, and pepper. Drain excess grease.
  • Add 1 t chili powder and ¼ t cumin. Cook for another 2 minutes to bloom the spices.
  • Add 2 T of water to the skillet. Cover and let sit on LOW heat while you prepare the tortillas and cheese.
  • To soften tortillas, heat ½ inch of vegetable oil in a small skillet and dip each tortilla in the oil to soften.
  • Melt 4 T butter in a medium-sized non-stick skillet over medium heat.
  • Add 4 T flour and stir until bubbly.
  • Whisk in 2½ c milk. Continue stirring until the mixture is slightly thickened. Add green chiles and remove the pan from heat.
  • Place 4 T butter in a microwave-safe Pyrex pitcher. Melt in the microwave on HIGH for about 1 minute.
  • Whisk in 4 T flour and ¾ t salt until smooth. Then whisk in 2½ c milk until smooth.
  • Microwave for 4-7 minutes on HIGH. Stir after 3 minutes and every minute thereafter. Keep cooking and stirring until the mixture is thick like a medium cream sauce.
  • Stir in green chiles.
  • Place a generous tablespoon of meat mixture onto a softened tortilla. Add a tablespoon of cheese. Roll up and place seam side down in a 9 x 13-inch baking dish. Prepare remaining tortillas in the same manner. Any remaining meat or cheese may be sprinkled on top or sides of enchiladas.
  • Pour sauce over enchiladas and cover with foil. If you have any remaining cheese, sprinkle it over the top of the sauce-covered enchiladas.
  • Heat in a 350˚F (180˚C)oven for 10-15 minutes or until heated through.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish.

2 (8 ounce) skinless, boneless chicken breast halves
2 tablespoons minced garlic
1 medium onion, chopped
3 cups water
1 tablespoon chicken bouillon granules
4 fresh poblano chilies
1 (8 ounce) container sour cream
2 tablespoons olive oil
10 (6 inch) corn tortillas
1 cup shredded mozzarella cheese

Steps:

  • Place the chicken breasts, garlic, onion, water, and chicken bouillon into a saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 40 minutes. When finished, remove the chicken to a plate to cool. Measure out 1 cup of the chicken broth and discard the rest.
  • Roast the poblano chiles over an open flame, or underneath a broiler until the skin has blackened on all sides. Place the chiles into a plastic bag, or a bowl covered with plastic wrap, and allow to steam as they cool, about 30 minutes. When cool, peel the blackened skin off of the pepper, and remove the seeds and membrane.
  • Place the reserved chicken broth into a blender along with the roasted poblanos and sour cream. Puree until smooth and set aside.
  • Heat the olive oil in a skillet over medium heat. Fry the tortillas one at a time until softened and beginning to crisp. Place onto a plate and set aside. Pour the pureed poblano mixture into the skillet and simmer for 10 minutes. While the sauce is cooking, slice the cooled chicken breasts into 1/4 inch strips.
  • Using tongs, dip a tortilla into the sauce, coating both sides. Place some of the chicken in the center of the tortilla, roll tightly, then place on a serving dish with the seam side down. Repeat with remaining tortillas. Spoon any remaining sauce over top of the enchiladas, then sprinkle with the shredded mozzarella cheese.

6 (6-inch) soft flour tortillas
1 (15-ounce) can Wolf brand chili with no beans
Salt and black pepper, to taste
1/8 teaspoon ground cumin
1 (8-ounce) block medium cheddar cheese, shredded
1/4 cup finely diced onion
Sour cream, hot taco sauce, chopped green onions

Steps:

  • Preheat oven to 350° F. Lightly spray an 8 x 8" baking dish with cooking spray. In a medium mixing bowl, stir together the chili, a little salt and black pepper, and the cumin. Spread a thin layer of the chili mixture in the bottom of the baking dish, just enough to cover. Reserve about 1/2 cup of the shredded cheese for the top. Fill the tortillas with remaining cheese and onion then roll up and place seam side down on top of the chili in the baking dish, placing them close together. When all the tortillas are in the pan, spoon the remaining chili over the top of tortillas, then top with the reserved cheese. Cover dish tightly with aluminum foil and bake for about 25 minutes, until hot and bubbly. Serve immediately with toppings of choice and whatever sides you want. (I added a thin layer of refried beans to a couple of the tortillas along with the cheese and onion.)

ENCHILADAS CON CARNE



Enchiladas Con Carne image

There are a few cool tricks to this recipe, one of which I picked up from an old issue of Bon Appétit, one I learned from Robb Walsh, the great Tex-Mex scholar and restaurateur who runs El Real Tex-Mex in Houston, and a final one I learned by happenstance. First, for the thickening agent in the chile sauce, toast raw all-purpose flour in a pan until it is nutty and golden brown, then reserve it to stir in with the browned beef later in the recipe. Second, if you like truly melty cheese in the classic Tex-Mex tradition, use a mixture of American cheese, like Velveeta, with the Cheddar you use inside and on top of the finished enchiladas. Finally, if you're fearful that a casserole of cheese, chili and fried tortillas may be a little rich for dinner, serve it with a bowl of tomatillo pineapple salsa on the side. The acidity provides a nice balance. (Note also that as with all recipes, but particularly this one, some planning and practice can get the preparation down to 60 minutes.)

1/2 cup all-purpose flour
2 tablespoons neutral oil, like canola
1 pound ground chuck beef, ideally 20 percent fat
Kosher salt and ground black pepper, to taste
1 medium white onion, peeled and chopped
2 cloves garlic, peeled and minced
1 jalapeño pepper or more to taste, seeds removed if you want it less spicy, stemmed and chopped
1 cup chopped or canned crushed tomatoes
3 tablespoons chile powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano, ideally Mexican
2 cups chicken stock, ideally homemade or low-sodium if store-bought
1/2 cup neutral oil, like canola
12 yellow corn tortillas
3 cups shredded Cheddar cheese, or a mixture of 1 1/2 cups Cheddar cheese and 1 1/2 cups American cheese, like Velveeta
1 medium-size white onion, peeled and chopped (optional)

Steps:

  • Prepare the chili con carne: Put flour in a large sauté pan set over medium-high heat. Cook, stirring frequently, until it begins to turn golden brown and smell nutty, then pour it onto a plate to cool.
  • Wipe out sauté pan and return it to high heat with 2 tablespoons oil. When oil is hot and shimmery, add ground beef to pan, and cook, breaking it up with a fork and stirring, until it is well browned, about 12 to 15 minutes. Season with salt and pepper, then use a slotted spoon to remove meat to a bowl, leaving drippings behind.
  • Add onion, garlic and jalapeño to pan and cook, stirring to scrape up any browned bits of meat, for 10 to 12 minutes, or until vegetables are soft. Stir in tomatoes and cook until their liquid has evaporated, then add chile powder, cumin and oregano and stir to combine. After a minute or so, when mixture begins to turn fragrant, return browned meat to pan, along with toasted flour, and stir well to combine.
  • Lower heat to medium-high and slowly stir in chicken stock, 1/2 cup at a time, until mixture has thickened and started to simmer. Lower heat again and allow chili to cook slowly for 45 minutes to 1 hour, until meat is tender. Add more stock or water if needed. Use immediately, or let cool, cover and refrigerate for up to a few days.
  • When you are ready to cook the enchiladas, heat oven to 425 degrees. In a medium sauté pan set over medium-high heat, heat 1/2 cup neutral oil until it begins to shimmer. Using tongs or a wide spatula, place a tortilla in the hot fat; it should start to bubble immediately. Heat tortilla for about 10 seconds a side, until soft and lightly browned. Remove tortilla and set on a rack set over a baking pan, or just on a baking pan if you don't have a rack. Repeat with remaining tortillas, working quickly.
  • Assemble the enchiladas: Using a ladle, put about 1/2 cup chili in the bottom of a 9-by-13-inch baking pan and spread it out a little. Roll a few tablespoons of cheese into each tortilla, along with a tablespoon or so of chili, then place it seam-side down in the pan, nestling each one against the last. Ladle remaining chili over top of rolled tortillas and sprinkle with remaining cheese.
  • Transfer to oven and bake until sauce bubbles and cheese is melted, about 10 to 15 minutes. Sprinkle chopped onions over the top, if using, and serve immediately.

2 medium tomatoes, cut into quarters
1 small onion, cut into quarters
2-3 cloves garlic, peeled
2 tablespoons extra virgin olive oil
2 tablespoons all-purpose flour
3 tablespoons chile powder ((see notes on how to make your own)
1 teaspoon kosher salt
¼ teaspoon ground cumin
2 cups vegetable broth ((you can also use chicken or beef if not making vegetarian))
3-4 tablespoons tomato paste ((to taste and desired thickness))
1 teaspoon soy sauce or Worcestershire sauce ((use soy sauce for vegetarian))
⅛ teaspoon cinnamon
salt and pepper to taste
2 large poblano peppers ((can sub Anaheim or hatch chile peppers))
2 cups shredded cheese ((I used a mix of cheddar, Monterey, and queso fresco))
6-8 corn tortillas
3 green onions, chopped
sour cream for serving
sliced avocado for serving

Steps:

  • Turn the oven broiler on high and place the oven rack at its highest setting. Put the peppers on a cookie sheet lined with foil. Broil on one side for 5 minutes. Flip the peppers over and broil for another 5 minutes. Flip a third time and broil for an additional 5 minutes.
  • Remove the pan from the oven and place the peppers in a sealable plastic bag for 10 minutes to continue to steam (during the 10 minutes, you can get your sauce going and shred your cheese if needed).
  • After 10 minutes, carefully take the peppers out of the bag (they are still hot!) and place them on a cutting board. Remove the skins with tongs or your fingers if they are cool enough. Remove the seeds and stems and dice the peppers. Add the diced peppers and 1 cup of cheese in a bowl and combine. Set the bowl aside.
  • In your food processor or blender, add the tomatoes, onion, and garlic and blend until smooth and set aside.
  • In a medium saucepan over med-high heat, heat the olive oil. Add the flour and whisk together for about a minute to make a roux. Slowly pour in the broth, whisking the entire time.
  • Add the chili powder, salt, and cumin and continue to whisk to combine. Now add the blended tomato mixture, tomato paste, Worcestershire sauce, and cinnamon. Stir everything to ensure it is fully combined. Bring to a boil and then immediately lower the heat to simmer. Stir the sauce occasionally as you prepare the other ingredients. After the sauce has simmered for a while, add the salt and pepper to taste. TIP: If you want a smooth sauce, you can give it another round in the food processor or blender.
  • Move the oven rack to the middle setting and preheat the oven to 400ºF. Wrap your tortillas in a damp paper towel and microwave for 60 seconds to warm them up and make them easier to roll. Keep them wrapped in paper towels until you are ready to assemble.
  • Pour about a cup of the enchilada sauce at the bottom of an oven-safe pan or dish (I used my cast iron pan, but a casserole dish would work just fine too). Take each tortilla and add some of the pepper and cheese mixture to the middle, roll up and place the seam side down in your dish. Repeat until all of your enchiladas are rolled.
  • Spoon more of the enchilada sauce all over the top of the tortillas to ensure all of them have been coated completely. You will probably have some leftover enchilada sauce you can save or freeze for another meal. Don't feel like you have to use it all.
  • Cover the top with the rest of the cheese and place in the oven for 15 minutes. For the last 2 minutes, I put my broiler on so the cheese was nice and melted and a little browned on top.
  • Remove the pan from the oven and garnish with the green onions. Serve with sour cream and avocado. Enjoy!

2 teaspoons Paprika
1 teaspoon Cumin
1/2 teaspoon Garlic Powder

1 cup Crushed Tomatoes or Tomato Puree
1 cup Beef or Chicken Broth
2 Tablespoons Cornstarch ((mixed with 1 cup of water before adding))
3 Tablespoons Oil
12 Corn Tortillas
3-4 cups Cheddar Cheese ((medium or sharp))
1/4 White Onion ((diced))
Cilantro ((chopped))

Steps:

  • Heat a large skillet or pot over medium-high heat. Add ground beef and cook for 8-9 minutes, breaking it up into bite-size pieces.
  • Sprinkle ground beef, with chili powder, paprika, cumin, garlic powder, salt and pepper. Pour in tomatoes and let simmer over medium heat for 5-10 minutes. Add beef or chicken broth.
  • In a small bowl, mix cornstarch with 1 cup of water until no lumps appear. Pour the cornstarch mixture into chile mixture. Let simmer and thicken for 10 minutes.
  • Heat large skillet over medium heat. Add oil and let heat up for several minutes. Carefully add each tortilla to oil and let soften, about 5 seconds. Remove and repeat for each tortilla.
  • Preheat oven to 400 degrees. Ladle 1 cup of the sauce in a 9 x 13 baking dish. Sprinkle cheese down the center of each tortilla. Roll the tortilla and place it seam side down into baking dish. Pour the rest of the sauce all over the enchiladas. Sprinkle with any remaining cheese.
  • Bake for 10-14 minutes, or until cheese is melted and it is bubbling and hot. Top with chopped onions and cilantro, if desired.

1-1/2 cups chopped onions, divided
1 package (1-1/4 ounces) chili seasoning
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 can (16 ounces) chili beans, undrained
1/2 cup water
2-1/2 cups shredded cheddar cheese
6 flour tortillas (6 inches), warmed
1 jar (8 ounces) picante sauce

Steps:

  • In a large ovenproof skillet, cook beef and 1/2 cup onion over medium heat until the meat is no longer pink; drain. Stir in the chili seasoning, tomato sauce, tomato paste, chili beans and water. Simmer, uncovered, for 15 minutes. , Meanwhile, combine 2 cups cheese and remaining onion. Divide cheese mixture evenly on the tortillas. East meets West with Sweet Chili Chicken Enchiladas smothered in TO LIVE FOR Sweet Chili Coconut Honey Lime Sauce! One of my favorite recipes to date - you don't want to skip these!

1 tablespoon olive/coconut oil
2 pounds chicken breasts ((3-4 boneless skinless chicken breasts))
1 20 oz. can pineapple tidbits in juice
1 cup Matchstick carrots
1/2 cup Asian sweet chili sauce ((like Mae Ploy))
1/2 cup honey
1/2 cup lime juice
1 tablespoon chili powder
1 tsp EACH ginger pwdr, garlic pwdr, onion pwdr
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 teaspoon Sriracha/ Asian hot chili sauce ((optional, more or less to taste))
1 13.5 oz. can quality coconut milk ((I use Chakoah))
1 tablespoon cornstarch
8-10 flour tortillas, toasted in skillet (( optional))
3 cups shredded Monterey jack cheese, divided
chopped green onions
chopped fresh cilantro
roasted peanuts, crushed

Steps:

  • Chicken: Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add chicken and cook 3-5 minutes, or until golden brown on one side. Flip chicken over and add the can of pineapple with juice to the skillet. Cover and reduce heat to medium and simmer 10 minutes, stirring pineapple occasionally, adding additional water if the liquid evaporates too quickly. Add carrots, cover and simmer 5-10 minutes more or until chicken shreds easily. Remove chicken and let rest for 5 minutes before shredding.
  • Sauce: While chicken is cooking, whisk all of the Sauce ingredients together except for the coconut milk and cornstarch in a large bowl. Add 1 cup of the sauce to a medium saucepan and stir in coconut milk and cornstarch. Bring to a boil and reduce heat to simmer until thickened, 1-2 minutes. To the remaining sauce in the bowl, add shredded chicken/pineapple/carrots and stir until well combined.
  • Assemble: Lightly spray a 9x13 baking dish with nonstick cooking spray. Add 1/2 cup of sauce from saucepan and spread over the bottom of the baking dish (it will barely cover bottom).
  • Add a few spoonfuls of chicken/carrot/pineapple to each tortilla and top with a few spoonfuls of cheese (about 1 1/2 cups cheese total). Roll up and place seam side down in prepared baking dish. Pour remaining sauce over tortillas and spread evenly. Sprinkle with remaining cheese.

Chili Stuffed Enchiladas image

Very simple, hearty and delicious take on enchiladas. The last time we made enchiladas, we ran out of the chicken mixture we were using for the filling...but we had some leftover chili, so my resourceful DH used that to stuff the last tortilla. The results were fabulous! Tonight, it was chili filling all the way!!

Number Of Ingredients 6

8 -10 small flour tortillas
12 ounces enchilada sauce (I recommend Trader's Joe's)
3 cups chili (amount approximate, thicker is better, use your leftovers!!)
1/2 cup queso sauce (I recommend Tostitos brand Monterey Jack)
1 cup four-cheese Mexican blend cheese
sour cream (optional)

Steps:

  • Preheat oven to 350°F.
  • Warm tortillas for about 30 seconds in microwave, enough to make them soft and pliable.
  • Pour enough enchilada sauce to just cover bottom of greased 9 x 12 glass baking dish.
  • Fill each tortilla with about 1/3 cup chili (no need to warm up if you are using leftovers). Roll each tortilla and place seam side down in the sauce-lined pan.
  • Pour remaining enchilada sauce over the stuffed tortillas, being sure to completely cover all of them. Use a spoon to spread over any exposed areas.
  • Warm queso slightly then drizzle lightly over tortillas.
  • Finish by topping with shredded cheese.
  • Bake at 350F for 30 minutes, until sauce is bubbly.
  • Serve with a dollop of sour cream, if desired.

Salsa verde, green chiles, leftover rotisserie chicken and Monterey Jack cheese make for the best weeknight enchiladas ever!

1 tablespoon canola oil
1 medium sweet onion, diced
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
2 (4-ounce) cans diced green chiles
4 cups coarsely shredded rotisserie chicken
1 (16-ounce) container salsa verde, divided
1/2 cup chopped fresh cilantro leaves
3 cups shredded Monterey Jack cheese, divided
Kosher salt and freshly ground black pepper, to taste
8 (8-inch) flour tortillas, warmed
1/4 cup sour cream

Steps:

  • Preheat oven to 375 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray. Heat canola oil in a large skillet over medium heat. Add onion, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic, oregano and cumin until fragrant, about 1 minute. Remove from heat; stir in green chiles. In a large bowl, combine green chile mixture, chicken, 1/3 cup salsa verde and cilantro. Stir in 1 1/2 cups cheese; season with salt and pepper, to taste. To assemble the enchiladas, lay tortilla on a flat surface and spoon 1/2-3/4 cups of the chicken mixture in the center. Roll the tortilla and place seam side down onto prepared baking dish. Repeat with remaining tortillas and chicken mixture. Top with remaining salsa verde and remaining 1 1/2 cups cheese. Place into oven and bake until bubbly, about 35-40 minutes. Serve immediately, topped with dollops of sour cream.
