Steps:
- Stir together lime juice and agave nectar; add to a blender, along with pineapple juice, pineapple, triple sec, tequila, and ice. Blend until smooth and frothy.
- In a small shallow bowl or saucer, combine chili powder, sugar, and salt. Rub a lime wedge around the rims of 4 glasses, then dip glasses in spice mix to coat. Divide drink among glasses and serve with lime wedges.

Steps:
- In a 3-1/2-quart electric slow cooker, combine the pork, beans, hot water, tomatoes with their liquid, tomato paste, juice from pineapple chunks, chilies, onion, chili powder, cumin, and garlic powder; mix well.
- Cover and cook on the low heat setting 8-1/2 to 9 hours until the pork and beans are tender, stirring once halfway through the cooking time, if possible.
- Stir in the pineapple chunks and serve.

SPICY PINEAPPLE SLICES
Steps:
- In a small bowl mix the salt, chile powder, and brown sugar. Sprinkle over both sides of the pineapple slices. Place pineapple slices onto a preheated, oiled grill or grill pan on high heat for 1 minute on each side. Reduce heat to low and continue cooking for 2 to 3 minutes per side or until the pineapple has softened and the sugar has caramelized on the edges.
CHILE-SPICED PINEAPPLE
Steps:
- Skewer 3 pineapple chunks onto each cocktail skewer or toothpick and arrange on a plate.
- In a small bowl, combine the chile powder, cumin, salt and pepper and mix with a fork. Sprinkle onto all sides of the skewered pineapple chunks and serve.

- Lightly oil your dehydrator’s fruit leather trays. Spread the puree into an even, ¼” layer onto the trays. In our Nesco Snackmaster, this recipe used two trays. Sprinkle the Tajin seasoning over the top.
- Peel the leathers off the tray and cut into strips with a knife, pizza cutter, or scissors. If using a square tray, this will be fairly straightforward. If your trays are round (like ours), cut them into quarters and then roll them into cone shapes. Store in an airtight container or ziplock bags.

- Prep the pineapple by cutting into it into 12 spears. Start the outdoor charcoal grill or heat the grill pan on the stove at medium heat. Brush the grill with oil to prevent sticking.
