If you cannot locate them in your neighborhood supermarket, look for poblanos (a dark green chile that resembles green peppers) and cotija (a salty white cheese) in any Hispanic grocery store.

2 large fresh poblano chile peppers or fresh Anaheim chile peppers (8 ounces)
4 ounce Monterey Jack cheese with jalapeno chile peppers, shredded, or shredded Mexican-style four-cheese blend (1-1/2 cups)
2 ounce crumbled Cotija cheese (1/2 cup)
3 eggs, lightly beaten
0.25 cup milk
0.333 cup all-purpose flour
0.5 teaspoon baking powder
0.25 teaspoon cayenne pepper
0.125 teaspoon salt

Steps:

  • Preheat oven to 450 degrees F. Grease a 2-quart square baking dish; set aside. Quarter the chile peppers and remove seeds, stems, and veins.* Immerse peppers in boiling water for 3 minutes; drain. Invert peppers onto paper towels to drain well. Place the peppers, cut side up, in prepared baking dish. Top with cheeses.
  • In a medium bowl combine eggs and milk. Add flour, baking powder, cayenne pepper, and salt. Beat with a rotary beater until smooth (or place in a food processor or blender; cover and process or blend until smooth). Pour egg mixture over chile peppers and cheeses.
  • Bake, uncovered, about 15 minutes or until a knife inserted into the egg mixture comes out clean. Let stand 5 minutes before serving.

½ lb Monterey Jack Cheese (sliced into sticks (or try other cheese, pepper jack, cheddar, cotijo))
2 eggs (large)
½ cup flour (substitute with a good 1-1 all purpose gluten free flour)
1 teaspoon salt
2 cups milk (I used whole milk)
Extra cheese grated for sprinkling on top

Steps:

  • Preheat oven to 350° F and grease a 9x9 inch baking dish (or 8x11).
  • Rinse chiles in cold water, scraping out seeds and the inside veins (leave seeds in if you desire a hotter dish). Cutting cheese into narrow sticks, place 1-2 sticks inside each chile and then place in greased baking dish.
  • Beat eggs in bowl, gradually adding flour, salt and milk whisking until smooth. Pour over chiles and sprinkle with grated cheese.
  • Bake 1 - 1 ½ hours or until browned and firm. Serve immediately

8 poblano peppers
8 Colby Jack cheese sticks (1 ounce each) or 8 ounces Colby Jack cheese, cut into 1-inch pieces
One 10-ounce can enchilada sauce
8 large eggs
1 cup grated Cheddar
1 cup whole milk
3 tablespoons all-purpose flour
1/2 teaspoon baking powder

Steps:

  • Roast the poblanos over an open flame or under the broiler until charred all over, turning as necessary, about 8 minutes. Put in a bowl and cover with plastic wrap to steam and loosen the skin, about 5 minutes. When cooled, remove the stems and run under cold water to peel off the blackened outer skin and remove the seeds.
  • Preheat the oven to 350 degrees F.
  • Put 1 piece Colby Jack cheese in the center of each pepper. Pour half of enchilada sauce into an 8-inch square baking dish. Put half of the cheese-filled peppers on top of the enchilada sauce. Repeat with the remaining sauce and peppers.
  • Beat the eggs in a large bowl until very frothy. Whisk in the Cheddar, milk, flour and baking powder. Gently pour the mixture over the peppers and sauce in the baking dish.
  • Bake until the casserole is set in the center and golden brown all over, about 1 hour. Let rest for 5 minutes. Serve warm.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Evenly layer 1 can chile peppers in the bottom of the baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chile peppers.

4 eggs, separated
1-1/2 cups milk
3 tablespoons all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
4 cans (7-ounces each) whole green chiles, split open and any seeds removed
3 1/2 cups shredded cheddar cheese (1 pound), reserve 1/2 cup
4 cups shredded Monterey Jack cheese (1 pound), reserve 1/2 cup
1/2 cup shredded pepper jack cheese
1-6 ounce can of tomato paste
1/2 cup prepared salsa
1/4 cup water (optional)

Steps:

  • Preheat the oven to 300°F and prepare a 9x13-inch casserole dish with non-stick spray.
  • In a mixing bowl add the egg yolks, milk, flour, salt and pepper and beat together. In a separate bowl whip the egg whites to soft peaks. Fold the egg whites into the egg yolk mixture and set aside while you assemble the casserole.
  • Arrange 1/2 of the peppers on the bottom of the casserole dish. Sprinkle with 1/2 of cheddar and 1/2 of the monterey jack cheese. Create the next layer with the remaining chilies and cheese. Pour the egg mixture over the cheese and let stand for 30 minutes.
  • Transfer the casserole to the middle rack of the oven and bake for 1 hour and the center does not jiggle.
  • While the casserole is baking: in a medium size bowl, toss the reserved cheddar, the reserved monterey jack cheese and the pepper jack cheese. In another small dish, mix the tomato paste and the salsa together until smooth. It may be necessary to add a small amount of tap water to get a spreadable consistency. Reserve the cheese and tomato topping in the refrigerator until the casserole has baked for the one hour.
  • Remove the casserole from the oven and spread the tomato/salsa over the casserole and distribute the reserved cheese over the top. Return to the oven and bake for an additional 15-20 minutes or until the cheese is melted and a little bubbly on the edges.
  • Transfer the casserole to a wire rack and cool for 20 minutes before serving.

20 ounces whole green chilies
1 large onion, diced
3 teaspoons cumin, divided
1/2 teaspoon salt
8 ounces cheddar cheese, grated
8 ounces monterey jack cheese, grated
1 (13 ounce) can evaporated milk
1 (13 ounce) can tomato sauce
1 lb lean ground beef
2 garlic cloves, minced
3 tablespoons chili powder, divided
4 eggs, beaten
1 tablespoon flour

Steps:

  • Rinse chiles, open flat and remove seeds.
  • Drain on paper towels.
  • Brown meat with onion and garlic, and drain fat from pan.
  • Add 1 tsp cumin, half of the chili powder, and salt, and stir until well blended.
  • In a greased 9x13 pan, layer chiles, beef, and another layer of chiles.
  • Combine cheeses and sprinkle on top of layered mixture.
  • Beat together eggs, milk, and flour, and pour over layers.
  • Mix tomato sauce with 2 tsp cumin and remaining chili powder.
  • Pour tomato mixture over all.
  • Bake in 350 F oven for 30 to 45 minutes.

2 cups cheddar colby cheese (shredded)
½ cup pepper jack cheese (shredded)
6 large eggs
¼ cup flour*
1 and ¼ cup milk

1 teaspoon powdered dry mustard

Steps:

  • Roast, peel, and deseed poblano peppers.
  • Preheat oven to 350 degrees and spray an 8x12-inch glass baking dish with non-stick spray.
  • Spread the peppers out in a single layer on the bottom of the baking dish.
  • Sprinkle the cheddar/Colby cheese over the peppers.
  • In a bowl, combine the eggs, flour, milk, salt, and mustard. Whisk until flour clumps are gone. (some may remain)
  • Pour egg mixture over cheese.

2 teaspoons chili powder
1 3/4 teaspoon Kosher salt, separated
1 teaspoon garlic powder
1 teaspoon cumin

4 (10-ounce) cans whole green chilis, drained
2 cups freshly grated Monterey Jack cheese
3/4 cup freshly grated Cheddar
2 large eggs
2/3 cup whole milk
1/3 cup all-purpose flour

Steps:

  • Preheat the oven to 325°F and have ready a greased 9x13" casserole dish.
  • Add the tomato sauce, chili powder, 1 1/2 teaspoon salt, garlic powder, cumin, and onion powder to a medium-sized mixing bowl and stir to combine. Pour the sauce into the casserole dish.
  • Split the chilis in half lengthwise and take care to remove all of the seeds. Using half of the total chilis, lay them flat, in one layer across the sauce. Then, sprinkle evenly with half of the cheese. Repeat with another layer of chilis, and end with a sprinkle of the remaining cheese. Set aside until ready to use.
  • Separate the egg whites and the yolks. Add the egg whites to a clean medium-sized mixing bowl and the yolks to a large mixing bowl. Set the bowl of yolks aside.
  • Using a handheld mixer on medium-high speed, beat the egg whites until they are about 4 times the size, white, and glossy -- about 4 minutes.
  • Stir the milk, flour, and a 1/4 teaspoon of salt into the egg yolk mixture. Then, fold in the egg whites. Pour the mixture evenly across the top of the casserole and spread to the edges of the dish
  • Transfer to the oven and bake for 30-35 minutes, until the topping is set and golden brown. Allow to cool slightly, serve, and enjoy!

4 large poblano peppers, (roasted, seeded)
1 lb ground beef
1/2 medium onion, (chopped)
2 cloves garlic, (minced)
1 tsp cumin
1 tsp pepper
1/2 tsp crushed red peppers
1 1/2 cups Monterey Jack cheese, (shredded)
1 1/2 cup sharp cheddar cheese, (shredded)
1 cups Pepper Jack cheese, (shredded)
1 1/2 cups half & half
1/3 cup all-purpose flour
5 eggs

Steps:

  • Preheat oven to 450° and line a baking sheet with foil and spray with a non stick spray.
  • Wash and dry peppers and place poblano peppers on baking sheet. Roast until peppers are charred and skin are blacken and bubbly, making sure to turn a few times. Approximately 20-25 minutes.
  • Once peppers have finished roasting, remove from oven and carefully place in a glass bowl. Cover with plastic wrap and let cool for about 15 minutes. When cool enough to handle, remove skins, slice in half lengthwise and rinse to remove seeds. Pat dry.
  • In a large frying pan, brown ground beef, onions and garlic. Add crushed red peppers, pepper and cumin. Once ground beef is thoroughly cooked, drain grease and return to pan.
  • In a 2 1/2 quart baking dish, spray with a non stick spray. Place a layer of peppers in the bottom, then 3/4 cup of Monterey Jack cheese, 1/2 of the ground beef mixture, 1/2 cup Pepper Jack cheese, and 1/2 cup of sharp cheddar cheese. Repeat layers ending with sharp cheddar cheese.
  • In a small mixing bowl, whisk half & half, eggs and flour together. Pour on top of pepper mixture.
  • Bake uncovered at 350° for 30-35 minutes. Add remiaining 1/2 cup of cheddar cheese on top and pop back in the oven for 15 more minutes or so.
  • Once cheese has browned a bit, remove from oven and enjoy with your favorite side dishes like refried beans, rice, etc.

An oldie but a goodie, I took this classic Chile Relleno Casserole and improved it by roasting my own poblano chilies instead of using canned.

1 large can roasted whole green chiles (such as Ortega, drained and split open (or better, roast your own poblano peppers))
1 pound shredded jack cheese
1 pound shredded mild cheddar cheese
6 large eggs
1 12 - ounce can evaporated milk, (you can use reduced-fat)
Salt and pepper (to taste)

Steps:

  • Heat oven to 350F.
  • Starting with cheese, layer the chilies, and the cheese in a casserole dish.
  • Mix together the milk and eggs, beat well; pour over chiles and cheese.

8 large Poblano peppers
2 tablespoons olive oil
4 eggs
1 (12-oz) can evaporated milk
3 tablespoons all-purpose flour
½ teaspoon salt
½ teaspoon ground cumin
½ teaspoon paprika powder
¼ teaspoon baking powder
8 ounces Monterey Jack cheese, freshly shredded

Steps:

  • Remove the stems and slice the peppers on one side lengthwise, leaving the peppers intact, and then remove the seeds.
  • Preheat the oven to 400 degrees Fahrenheit and line a large baking pan with aluminum foil or parchment paper.
  • Place the Poblano peppers on the baking pan evenly spaced, then drizzle on the olive oil. Use your hands to coat them well.
  • Bake for 20 minutes. Flip the peppers over and bake for 10 more minutes or until the tops have charred a bit.
  • In the meantime, whisk together the eggs, milk, flour, salt, cumin, paprika and baking powder in a large bowl then set aside.
  • Once the peppers are done, reduce the oven heat to 350 degrees Fahrenheit.
  • Let the peppers cool until you can safely handle them then remove the skin and slice each pepper in thirds lengthwise.
  • Pour 1/3 of the egg mixture into a 9 by 13-inch baking pan or a casserole dish then add ½ of the peppers on top along with 1/3 of the cheese sprinkled on top.
  • Pour half of the remaining egg mixture on top followed by the remaining pepper slices.
  • Pour on the remaining egg mixture followed by the remaining cheese and cover loosely with aluminum foil then bake for 20 minutes.
  • Remove the foil and bake again for 15-20 minutes or until the center no longer jiggles.
  • Slice and serve with freshly chopped cilantro for garnish if desired.
