2 (7 ounce) cans whole green chiles, drained
1 pound shredded Cheddar cheese
4 eggs
2 tablespoons all-purpose flour
1 ½ (5 ounce) cans evaporated milk
1 pound shredded Monterey Jack cheese
2 (10 ounce) cans green enchilada sauce

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
  • Split the chiles open, and spread half the chiles into the bottom of the prepared baking dish. Layer with the Cheddar cheese, and top with the rest of the canned chiles. Whisk together the eggs, flour, and evaporated milk in a bowl. Pour the mixture over the chiles and cheese.
  • Bake in the preheated oven until set, about 30 minutes; remove casserole, and top with the Monterey Jack cheese. Pour the green chili salsa over the top; return to oven, and bake until the cheese is melted, about 15 more minutes.

This Chili Rellenos Casserole is very easy to prepare and is loaded with flavor. Great for a busy week night, and good enough for company.

2 (7 ounce) cans whole green chile peppers, drained
8 ounces Monterey Jack cheese, shredded
8 ounces Longhorn or Cheddar cheese, shredded
2 large eggs, or more to taste
1 (5 ounce) can evaporated milk
2 tablespoons all-purpose flour
½ cup milk
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Evenly layer 1 can chile peppers in the bottom of the baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chile peppers.
  • In a bowl, mix together the eggs, evaporated milk, and flour. If too thick, feel free to add 1/2 cup regular milk. Pour over the top of the chilies.
  • Bake in the preheated oven for 25 minutes. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes.
  • Sprinkle with remaining Jack and Cheddar cheeses, pop under the broiler for a few minutes, and serve.

1 lb grated cheese (i use a mexican blend or a cheddar also works well)
3 eggs
1 1/2 cups milk
1/2 cup flour
1 (8 ounce) can whole green chilies

Steps:

  • Mix the milk, eggs, salt,pepper,and flour.
  • Spray a pan (9x13) with a nonstick cooking spray.
  • layer chilies, then the mixture made in step 1, then the cheese.
  • Continue this order until you run our of ingredients and put EXTRA cheese on the top!
  • Bake at 350 degrees for about 50 minutes.
  • Allow about 10 minutes before serving!

I received this recipe years ago from a gal named Marti. Because of the texture of this casserole it tastes more like the single chili rellenos that most Tex-Mex resturants make. Easy too!

1 lb cheddar cheese
1 lb monterey jack cheese
2 (8 ounce) cans of diced chilies (Anaheim variety)
3 cups milk
3 eggs
1 cup Bisquick

Steps:

  • Combine milk, eggs, and bisquick in a bowl.
  • Layer in a greased 9 x 13 baking dish/pan the items in the following order once only.
  • Cheddar Cheese, 1 can of chilis, jack cheese, 1 can of chilis, egg mixture.
  • Bake 350 degrees for about 50 minutes.

8 poblano peppers
8 Colby Jack cheese sticks (1 ounce each) or 8 ounces Colby Jack cheese, cut into 1-inch pieces
One 10-ounce can enchilada sauce
8 large eggs
1 cup grated Cheddar
1 cup whole milk
3 tablespoons all-purpose flour
1/2 teaspoon baking powder

Steps:

  • Roast the poblanos over an open flame or under the broiler until charred all over, turning as necessary, about 8 minutes. Put in a bowl and cover with plastic wrap to steam and loosen the skin, about 5 minutes. When cooled, remove the stems and run under cold water to peel off the blackened outer skin and remove the seeds.
  • Preheat the oven to 350 degrees F.
  • Put 1 piece Colby Jack cheese in the center of each pepper. Pour half of enchilada sauce into an 8-inch square baking dish. Put half of the cheese-filled peppers on top of the enchilada sauce. Repeat with the remaining sauce and peppers.
  • Beat the eggs in a large bowl until very frothy. Whisk in the Cheddar, milk, flour and baking powder. Gently pour the mixture over the peppers and sauce in the baking dish.
  • Bake until the casserole is set in the center and golden brown all over, about 1 hour. Let rest for 5 minutes. Serve warm.

This casserole is very easy to make. Every time I take it to a gathering, there is not any left and I am always asked for the recipe. I have had this recipe for many years. You can always add less cheese to cut down on the fat. Enjoy!

3 cups low-fat milk
3 eggs
1 cup Bisquick
1/4 teaspoon salt
2 teaspoons chili powder
1 teaspoon hot sauce
4 cups of grated sharp cheddar cheese
4 cups rated monterey jack cheese (I use pepper jack cheese)
29 ounces whole green chilies, drained
1/4 cup diced red peppers (optional garnish) or 1/4 cup green bell pepper (optional garnish)
1/4 cup sliced green onion (garnish) (optional)
4 ounces sliced black olives (garnish) (optional)
1/2 cup chopped cilantro (garnish) (optional)
8 ounces sour cream (garnish) (optional)

Steps:

  • Lightly grease a 9x13x2 inch baking dish.
  • Mix and beat together the first 6 ingredients and sett aside.
  • Split green chilis, rinse & remove seeds. Drain and pat dry on paper towels.
  • Layer half of the chilis in the bottom of the baking dish.
  • Cover the chilis with half of the grated cheese.
  • Repeat the layers.
  • Pour milk egg mixture that you set aside evenly over casserole.
  • Bake in a 350 degree oven 50 to 60 minutes until puffed and golden brown.
  • Let stand 20 to 30 minutes before serving.
  • Top with toppings of your choice. I usually have them set on the side.
  • Salsa of your choice is an excellent topping for this casserole.
