Step up your summer grilling game with this homemade BBQ sauce! Spicy, smoky and complex with a boozy punch, this coffee-bourbon BBQ sauce perfectly complements any grilled meat. After one taste, I have no doubt this will become your new favorite BBQ sauce.

1 (15-ounce) tomato sauce can
1 (6-ounce) tomato paste can
3 garlic cloves (grated or minced)
¾ cup brewed coffee (preferably dark roast)
½ cup apple cider vinegar
⅓ cup unsulphured molasses (not blackstrap)
¼ cup real maple syrup
¼ cup dark brown sugar (packed)
1 tablespoon chipotle chili powder (can substitute regular chili powder)
1 tablespoon espresso powder
1 tablespoon Worcestershire sauce
1 tablespoon mustard powder
2 teaspoons smoked paprika
1 teaspoon ground cumin
1 teaspoon onion powder
1 teaspoon salt
¼ cup bourbon

Steps:

  • In a medium saucepan, stir together the tomato sauce and paste until it becomes one cohesive mixture.
  • Stir in the garlic, coffee, apple cider vinegar, molasses, maple syrup, dark brown sugar, chipotle chili powder, espresso powder, Worcestershire sauce, mustard powder, smoked paprika, cumin, onion powder and salt.
  • Bring to a simmer over medium heat. Continue to simmer until the mixture slightly thickens, stirring often to prevent burning. If necessary, you can turn down the heat but maintain a simmer. Cooking time generally takes about 15-20 minutes.
  • Turn off heat. Stir in bourbon. Cool and store in an airtight container in the refrigerator. Enjoy!

1/2 cup espresso (brewed, or strong, dark coffee)
1 cup ketchup
1/2 cup apple cider vinegar
1/2 cup sugar (light brown, firmly packed)
1 onion (peeled and finely chopped, about 1 cup)
2 cloves garlic (peeled and crushed)
3 chili peppers (fresh, seeded, hot such as jalapeño, or hotter if desired)
2 tablespoons mustard (dry hot, mixed with 1 tablespoon warm water)
2 tablespoons Worcestershire sauce
2 tablespoons cumin (ground)
2 tablespoons chili powder

Steps:

  • Gather the ingredients.
  • Put espresso or coffee, ketchup, vinegar, brown sugar, onion, garlic, chile peppers, dry mustard, Worcestershire sauce , cumin, and chili powder in a small pot, stir them together and bring to a simmer over medium-high heat.
  • Lower the heat so the mixture is just simmering and let simmer for 20 minutes.
  • Remove the pot from the heat, let the mixture cool.
  • Puree in a blender.

1 cup brewed espresso
1 dried pasilla chile
1 dried chipotle chile
3 cups Five-Ingredient Barbecue Sauce

Steps:

  • Combine espresso and chiles in a medium saucepan over medium heat. Bring to a simmer, and cook until reduced by a little more than half and chiles are soft, 5 to 7 minutes.
  • Add barbecue sauce, and simmer for 5 minutes. Let cool, and refrigerate. (Discard chiles if desired. Leaving chiles in the sauce will add flavor and heat. Remove chiles when desired flavor is achieved. You can also puree them, seeds optional, with the sauce in a blender for the spiciest effect.)

7 teaspoons chili powder
1 tablespoon garlic powder
2 teaspoons celery seed
1 teaspoon coarsely ground pepper
1/4 to 1/2 teaspoon cayenne pepper
1 fresh beef brisket (3 to 4 pounds)
1 medium green pepper, chopped
1 small onion, chopped
1 bottle (12 ounces) chili sauce
1 cup ketchup
1/2 cup barbecue sauce
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 teaspoon ground mustard
1 can (16 ounces) hot chili beans, undrained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
Optional toppings: Shredded cheddar cheese, chopped white onion and sliced jalapeno peppers

Steps:

  • Combine the first five ingredients; rub over brisket. Cut into 8 pieces; place in a 5-qt. slow cooker. Combine the green pepper, onion, chili sauce, ketchup, barbecue sauce, brown sugar, vinegar, Worcestershire sauce and mustard; pour over meat. Cover and cook on high for 5-6 hours or until meat is tender., Remove meat; cool slightly. Meanwhile, skim fat from cooking juices. Shred meat with 2 forks; return to slow cooker. Reduce heat to low. Stir in the beans. Cover and cook for 1 hour or until heated through. If desired, top with shredded cheddar cheese, chopped white onion and sliced jalapenos. Freeze Option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

1 tablespoon dried chipotle powder
1 tablespoon smoked paprika
1 tablespoon ground cumin
1 1/2 teaspoons salt
1 teaspoon ground black pepper
12 ounces dark beer
14 -18 ounces prepared hickory barbecue sauce
1/2 cup water
2 tablespoons golden brown sugar
1 tablespoon ketchup
1 tablespoon honey
1 tablespoon finely ground dark roast coffee (or espresso)

Steps:

  • For the rub:.
  • Whisk rub ingredients together in small bowl.
  • Rub spice mixture all over ribs.
  • Gently boil beer in medium saucepan until reduced to about 1 cup.
  • Place ribs in roasting pan or thick foil for grill. Pour beer around ribs. Cover ribs with foil and set aside.
  • Preheat oven to 400F or preheat gas grill to approximately 350-400°F
  • Once heated, roast ribs for about 1.5 hours. If using outdoor gas grill try adding some alder or cherry wood chips (if not for anything other than a neighbor jealousy-inducing aroma).
  • For the BBQ sauce:.
  • Combine ingredients in medium saucepan and simmer for 10 minutes, stirring occasionally.
  • Brush ribs with sauce. Grill ribs over medium heat, about 5 minutes per side. Save some sauce for slathering and dipping.
  • Serve with polenta.
