3 acorn squash, unpeeled, halved through the stem, and seeded
3 tablespoons unsalted butter, diced
3 tablespoons pure maple syrup, plus extra for serving
Good olive oil
Kosher salt and freshly ground black pepper
Flaked sea salt, such as Maldon, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the squash, cut sides up, on a sheet pan. Place 1/2 tablespoon butter and 1/2 tablespoon maple syrup in the cavity of each squash. Brush the cut sides with olive oil and sprinkle the squash with 3 teaspoons kosher salt and 1 teaspoon pepper. Roast for 40 to 60 minutes, depending on the size of the squash, until tender when pierced with a small knife.
  • Place the squash on a serving platter. If the halves are too large for one serving, cut each piece in half through the stem. Drizzle lightly with extra maple syrup, sprinkle with sea salt, and serve hot.

1 acorn squash (about 1 3/4 pounds), halved, seeded, and cut into 2-by-1/4-inch pieces
7 tablespoons hazelnut oil
3 tablespoons plus 1 teaspoon pure maple syrup
Coarse salt and freshly ground pepper
1 teaspoon sherry vinegar
2 teaspoons fresh lemon juice
2 heads frisee, separated into small pieces
1 head escarole, coarsely chopped
1/2 cup hazelnuts, toasted, skins removed

Steps:

  • Preheat oven to 375 degrees. Toss squash with 1 tablespoon oil and the syrup, and season with salt and pepper. Arrange on a rimmed baking sheet. Roast, flipping once, until golden brown and tender, about 20 minutes; set aside.
  • Whisk vinegar, lemon juice, and 1/4 teaspoon salt in a bowl. Pour in remaining 6 tablespoons oil in a slow, steady stream, whisking. Season with pepper.
  • Just before serving, toss greens and squash with dressing, and arrange on a platter. Sprinkle with hazelnuts.

1 small acorn squash (approximately 2 pounds)
2 TBSP olive oil
sea salt
1 small head radicchio, chopped
1/4 cup cilantro, chopped
2 watermelon radishes (or substitute with another mild radish variety e.g. Snowball, Purple Plum or White Icicle), thinly sliced*
1 apple (any variety), finely diced
1/2 TBSP basil, finely chopped
1 clove garlic, crushed
1/4 cup balsamic vinegar
1/4 tsp sea salt
1/4 cup extra virgin olive oil

Steps:

  • Preheat your oven to 450F and line two large baking sheets with parchment paper.
  • Cut the stem off the end of the acorn squash and cut the squash in half lengthwise. Remove the seeds using a spoon and cut the squash into 1/2-inch-thick slices.**
  • Lay the sliced squash in a single layer onto the baking sheets and coat with olive oil and sea salt.***
  • Roast squash for 25-30 minutes, flipping once midway through.
  • Assemble your salad by layering chopped radicchio, cilantro, roasted squash, watermelon radish and apple.
  • To prepare dressing, crush garlic and finely chop basil. Add to a mason jar or bowl along with balsamic vinegar and salt. Slowly whisk in olive oil until an emulsion is formed.
  • Toss salad with dressing shortly before serving and more salt to taste.

The Italian chicory called radicchio comes in many guises. The round-headed radicchio di Chioggia is the most commonly known here, but the others, like the elongated Treviso and the curly fingered Tardivo are increasingly available. They sport shades of red, from burgundy to crimson to oxblood. The chicory family is a large one, though, and other members come in other colors, such as the fetchingly speckled yellow-cast Castelfranco; pale green broad-leafed escarole; curly endive or pointy-leaved Belgian endives, which are ivory or pink. All feature a pleasantly bittersweet flavor and require a somewhat assertive vinaigrette. Use only one type of chicory if you wish, but a colorful mixture of many kinds is a sight to behold.

  • Make the salad: Sprinkle the chicory leaves with a pinch of salt and add 3 tablespoons dressing. Toss well, making sure all leaves are coated lightly. Taste a leaf and add more dressing as needed. Add croutons and grated cheese before serving.

4 medium carrots, chopped (about 2 cups)
1 medium onion, cut into 1-inch pieces
6 bone-in chicken thighs (about 2-1/4 pounds)
1/2 cup maple syrup
1 teaspoon salt
1/2 teaspoon coarsely ground pepper

Steps:

  • Preheat oven to 450°. Cut squash lengthwise in half; remove and discard seeds. Cut each half crosswise into 1/2-in. slices; discard ends. When I was growing up, my mother served a lot of canned vegetables, but the one thing she always made from scratch was acorn squash, which she roasted with butter and maple syrup. When I revisited her old method, I found it was just as good as I remembered. The sweet squash filled with a big puddle of melted butter and sweet syrup is so irresistible!

  • Preheat oven to 425° F. Using a sharp knife, carefully slice the acorn squash in the center horizontally. Scoop out seeds and scrape clean. Slice the halves into ½ inch thick rounds. This will create the fluted edge. Arrange in an even layer on a parchment paper-lined rimmed baking sheet. Use two trays if pieces overlap.
  • Drizzle the avocado oil and maple syrup over top and toss to coat. Sprinkle the salt and cinnamon on top. Bake for 17 to 20 minutes, until the squash is golden and tender. Add the hazelnuts to one corn of the pan and roast for 3 minutes longer, until the nuts are toasted. Remove from the oven and let cool.
  • While Squash is baking, make the dressing. In a medium bowl, whisk together the maple syrup, vinegar, Dijon, lemon juice, coriander, cinnamon, cumin, turmeric, salt, and black pepper. Slowly drizzle in the oil while whisking vigorously.
  • To assemble the salad, fill a bowl with the lettuces. Sprinkle the cranberries, pears, goat cheese, and pomegranate seeds over top.
