2.5OZ. Arborio rice
2OZ. puntarelle (Catalonia chicory), washed
1/2OZ. carrot
1/2OZ. celery
1 saffron thread
White wine
2 tsp. extra virgin olive oil
Salt

Steps:

  • Heat 2 teaspoons of olive oil in a saucepan, brown the rice for 1 minute, then add a splash of white wine. Let the wine evaporate, then continue cooking by gradually adding in 1 cup of the vegetable broth. At the end, add a pinch of salt and a saffron thread. Meanwhile, dice the celery and carrot and stew them with 3 tablespoons of vegetable broth and the chicory, left whole. Plate the risotto, topping with the stewed chicory. Serve piping hot.
