15-MINUTE CHICKPEA BURGERS RECIPE
These chickpea burgers are so delicious! They are spiced to perfection and have a delicious texture (not gummy or gritty like some veggie burgers!) They are easy to make and the chickpea patties cook up in under 15-minutes, making them the perfect weeknight dinner! This chickpea burgers recipe is simple so that you can add your own flair to this base! Add BBQ sauce for an all-American flair or curry powder for Indian flavor.

- Heat olive oil in a large saucepan over medium heat. Add onion and cook for 4 minutes, until translucent and caramelized. Add garlic and cook for 1 minute. Remove from heat and let it cool. Transfer to a food processor. If you don't have a food processor, mash using a fork or potato masher. Add the chickpeas, paprika, cumin, onion powder, coriander and salt and pepper. Pulse for 2 minutes or until you have a thick batter. Add flour and pulse for 1 more minute. Divide the batter in 4 balls for large chickpea burgers or 8 balls for chickpea sliders and transfer to a floured surface. Shape the patties. Heat a greased skillet over medium heat. Add the chickpea patties and cook for 3 minutes per side. Top with whatever burger toppings you like!

CHICKPEA-TOFU BURGERS
A vegetarian "burger" made of chickpeas and marinated tofu! I love them, they taste great with a little mozzarella.

Steps:
- Put all the ingredients into a bowl.
- Using a large fork or spoon, mash the ingredients together. (Alternatively, a blender can be used.).
- When it's mashed enough so you can mold the mix into patties without it falling apart, do so! I made patties about the size of my palm, but they can be any size you want.
- Heat up a frying pan with some olive oil in it. You might need to add more or less depending on the size of the pan, and how many patties you've made.
- Carefully place the patties into the pan. Heat them for about 3 minutes, or until they're brown on the bottom. Flip them over, and go for 3 minutes again.
- When they're done, take them off carefully with a spatula! Serve them up with some mozzarella cheese on whole-wheat bread. I think they taste best after microwaved for 30 seconds.

- Set a large pot with an inch or two of water over medium heat. Place the cauliflower florets in a pan with little oil and cook for about 5-6 minutes. You don't want them to be completely cooked and too tender. Remove the cauliflower and run some cold water over it to prevent further cooking. Place the florets in the bowl of a food processor (I used a blender). Pulse the mixture for a few seconds until finely chopped (like cauliflower rice).
- Transfer cauliflower to a medium sized bowl, add the chickpeas, olive oil, salt and pepper. Mix and mash the chickpeas with a fork (you can use the food processor for the chickpeas too. Taste the mixture for seasoning and adjust accordingly.
- Divide the mix into 4 equal portions and form patties with your hands. Place the patties on a plate and let them rest in the refrigerator for at least half an hour.
- Heat a good slick of oil in a sauté pan over medium heat. Place the burgers in the pan. Depending on the size of your pan you could cook two at a time. Fry until one side is golden (about 2 minutes) and then gently flip them over.
