1 tablespoon vegetable oil
1 large onion, diced
2 cloves garlic, minced
ginger, peeled and grated, 1 inch (2 1/2 cm) piece
1 jalapeño, or green chile, seeded and sliced
2 tablespoons garam masala
1 teaspoon turmeric
1 teaspoon salt
1 teaspoon black pepper
2 cups fresh tomato, diced
15 oz chickpeas, drained and rinsed, 2 cans
½ cup water
½ lemon, juiced
¼ cup fresh cilantro, chopped

Steps:

  • Heat olive oil in a large stock pot or dutch oven over medium-high heat.
  • Add onion and cook until onion becomes translucent and begins to brown, about 3-5 minutes.
  • Add garlic, ginger, and jalapeño. Continue to cook over medium heat until garlic is fragrant and jalapeño is tender, about 3-4 minutes.
  • Add garam masala, turmeric, salt, and pepper then continue to cook for 1-2 minutes.
  • Add tomatoes, chickpeas, and water. Stir to incorporate, making sure to use the spoon the scrape off any brown bits that have appeared on the bottom or sides of the pot.
  • As the tomatoes break down, the mixture should take on the texture of a thick stew. Add more water if needed before bringing everything to a simmer and then cover with a lid.
  • Once covered, cook for 15 minutes while stirring occasionally.
  • Remove lid, reduce heat to low and mix in the lemon juice and chopped cilantro. Cook over low heat 1-2 minutes until the cilantro has wilted and turned bright green.
  • Serve over basmati rice or with a side of naan.

3 tbsp sunflower or canola oil
1 large onion finely chopped
4 cloves garlic, crushed
1 inch ginger, finely grated
1 tbsp ground coriander
1/2 tbsp ground turmeric
1/2 tbsp ground cumin
1/4 - 1/2 tsp cayenne pepper or chili flakes
1.5 cups crushed tomatoes (400g)
2.5 cups cooked chickpeas (400g)
1/2 cup vegetable stock (120 ml)
1 cup frozen chopped spinach or 100gm fresh/frozen chopped spinach
1/2 - 1 tsp salt
1 tsp sugar
1 tsp garam masala
1 tbsp lemon juice
OPTIONAL: 1/4-1/2 cup full-fat coconut milk (50-100 ml)
1 tbsp chopped fresh cilantro leaves (coriander leaves)

Steps:

  • Heat the oil in a large pan over a medium-high setting. Sauté the finely chopped onion until golden.
  • Add the crushed garlic and grated ginger and cook for 1-2 minutes, stirring frequently, until the garlic doesn't smell raw anymore.
  • Mix in the next four ingredients (ground coriander, turmeric, cumin, and cayenne) and toast for two minutes stirring often.
  • Add the crushed tomatoes, chickpeas and vegetable stock. Increase the heat to high and once boiling, lower to medium-low to maintain at a simmer for 10 minutes, stirring every now and then.
  • Add 1/2 tsp salt, the sugar, and the spinach. If the spinach is frozen increase the heat until the curry is bubbling away again. Simmer for an additional five minutes.
  • Add the garam masala, lemon juice and coconut milk and stir. Sprinkle over the chopped cilantro leaves and serve hot.

4 Curry leaves
1 Bay leaf (Small size)
1 can Chickpeas (15 oz. can, Drained and rinsed)
1 can Crushed tomatoes (15 oz. can)
1 can Coconut milk (13.5 oz. can, Full fat)
1 tbsp Lemon juice
2 tbsp Cilantro (Finely chopped)

Steps:

  • Heat oil in a large nonstick pot over medium-high heat.
  • Add onions and saute until soft and translucent.
  • Add garlic, ginger and saute until fragrant.
  • Add garam masala, curry powder, red chili flakes, salt, pepper, curry leaves, bay leaf and cook everything until combined and fragrant. This also helps to toast spices and makes them even more fragrant.
  • Add chickpeas, crushed tomatoes and simmer for 5 minutes, stirring often.
  • Add coconut milk and cook uncovered until liquid is reduced and curry is thickened to your desired consistency. Stir often to prevent sticking and burning.
  • Discard bay leaf and curry leaves.
  • Mix in lemon juice and 1 tbsp cilantro.
  • Garnish remaining 1 tbsp cilantro on top and enjoy!

1 x 400 g tin chickpeas
1-2 fresh green chillies
2 tablespoons sunflower oil
1 teaspoon mustard seeds
½ teaspoon asafoetida
1-2 teaspoon sugar, optional
½ x 400 g tin of tomatoes
1 teaspoon fresh ginger paste
1 teaspoon garlic paste
1 teaspoon green chilli paste
1 teaspoon red chilli powder
1 teaspoon turmeric
1 teaspoon dhana jeera powder
1-2 teaspoon sugar, optional
a few sprigs of fresh coriander
½ teaspoon garam masala

Steps:

  • Peel and finely chop the onions, drain and rinse the chickpeas and finely slice the green chillies.
  • Heat the oil in a saucepan over a medium heat and add the mustard seeds; once they're crackling, add the asafoetida. Stir in the onions and fry until transparent and turning golden at the edges.
  • Chop and add the tinned tomatoes, then cook for another 5 minutes, before adding the ginger, garlic and green chilli pastes, the red chilli powder, dhana jeera, sugar (if using), and a pinch of sea salt. Keep stirring and cook for further 5 minutes.
  • Stir the chickpeas into the pan. Add 250ml water to make a thick sauce. Place the lid on the pan, lower the heat and simmer for 5 to 7 minutes.
  • Pick and finely chop the coriander, then sprinkle on top along with the garam masala and finely sliced green chillies, to serve.

This delicious Black Chana Masala is an easy to make chickpea curry made with black chickpeas. It's bursting with flavor and is a healthy Meatless Monday vegetarian dinner recipe.

2 cups dried black chickpeas (or 6 cups cooked black or regular chickpeas)
2 tablespoons oil
1 large onion (finely minced)
Pinch of baking soda
1 teaspoon each: mustard and cumin seeds
2 tablespoons finely minced ginger
4 cloves garlic (minced)
1-2 green chilis (finely minced (remove seeds for a less spicy chili. I used serrano chilis.))
2 tablespoons tomato paste
2 teaspoons each: coriander and garam masala
1 teaspoon turmeric
28 ounce can diced tomatoes
1 cup chopped cilantro
Juice of 1 lemon

Steps:

  • Place the dried chickpeas in a large pot and fill it with water. Let it sit overnight on your counter, or for 8-24 hours. Drain the chickpeas and add fresh water to the pot. Bring the pot to a boil over high heat then reduce the heat and simmer for 1 ½ hours, or until the chickpeas are soft. Drain and set aside.
  • Heat the oil in a large skillet over medium-high heat. Add the onion and let it cook until it's soft, about 5 minutes. Turn the heat down to medium and add the baking soda to the pan. Continue to cook, stirring occasionally, until the onion is dark brown, about 10 minutes. Add the mustard seeds, cumin seeds, ginger, garlic, and chilis to the pan and cook until a dark brown paste forms, about 5 minutes more. (See the pictures in the post to see what it should look like.)
  • Push this onion paste to the side of the pan and add the tomato paste. Let it caramelize until is smells sweet and darkens slightly, about 3 minutes. Add the coriander, garam masala, and turmeric to the pan and let it cook for 1 minute more.
  • Add the diced tomatoes to the pan and gently break them up with a potato masher or the back of a wooden spoon. You want some texture here, just not big chunks of tomatoes. Add the cooked chickpeas, sea salt, and a ½ cup of water to the pan and let it simmer for a half hour. If you're serving this with rice, now is the time to start cooking it.
  • Season with extra sea salt if needed and stir in the cilantro and lemon juice just before serving.

Steps:

  • Grind onion, tomato, ginger, garlic, and chile pepper together in a food processor into a paste.
  • Heat olive oil in a large skillet over medium heat. Fry bay leaves in hot oil until fragrant, about 30 seconds. Pour the paste into the skillet and cook until the oil begins to separate from the mixture and is golden brown in color, 2 to 3 minutes. Season the mixture with chili powder, coriander, powder, gram masala, turmeric, and salt; cook and stir until very hot, 2 to 3 minutes.
  • Stir enough water into the mixture to get a thick gravy; bring to a boil and stir chickpeas into the gravy. Reduce heat to medium and cook until the chickpeas are heated through, 5 to 7 minutes. Garnish with cilantro.

  • Heat a medium, heavy-bottomed pan over medium-high heat. Once hot, heat the oil and add the cumin seeds and onion. Sauté for 7-8 minutes, until golden. If the mixture gets dry, deglaze with 1-2 tablespoons of water.
