1 (15-oz.) can unsalted chickpeas, drained and rinsed
1 cup almond butter
2 tablespoons honey
1 tablespoon vanilla extract
1 teaspoon salt
1/2 teaspoon cinnamon
4 ounce dark chocolate chips 70 to 85% cacao

Steps:

  • Mix first six ingredients in a food processor until the chickpeas are completely blended and smooth. Stir in chocolate chips.
  • For bars or cookie dough truffles, line a glass dish with parchment paper and put in the freezer for 45 minutes. Once removed from the freezer, let the cookie dough thaw for 5 minutes. For an extra indulgent treat, drizzle them with melted chocolate, and sprinkle flaked sea salt on top.

1 (15-ounce) can chickpeas, drained and well rinsed
1/3 cup brown sugar
1/4 cup peanut butter
3 tablespoons ground flaxseed meal
2 teaspoons vanilla extract
1/4 teaspoon salt
1/3 cup chocolate chips
Dippers:
Graham crackers
Pretzel sticks
Sliced apples

Steps:

  • Gather the ingredients.
  • In the bowl of a food processor combine the chickpeas, brown sugar, peanut butter, ground flaxseed meal, vanilla extract, and salt. Pulse to combine.
  • Process until a thick, even dough forms, scraping the sides of your device as necessary.
  • Transfer the dough into a large bowl and fold in the chocolate chips.
  • Cover and refrigerate for at least 30 minutes. The dough will thicken as it chills because the flaxseed meal will absorb some of the moisture from the chickpeas as it sits. This will help the mixture achieve the consistency of raw, edible cookie dough.
  • Simply enjoy the cookie dough on its own or as a dip using your favorite foods as dippers. Pretzel sticks, graham crackers, and sliced apple all work well and taste great.

  • Combine chickpeas, peanut butter, maple syrup, flour, vanilla, and salt in a powerful blender, such as a Vitamix®. Blend until smooth, using tamper if needed. Scoop into a bowl.

¼ cup natural peanut butter
2 tsp vanilla extract
3 tbsp almond flour
2-4 tbsp maple syrup or more to taste (see my notes)
½ tsp cinnamon
1/4 tsp salt
Optional 2-3 tablespoons of unsweetened vanilla almond milk (see notes)
2 tablespoons dark chocolate chips
2 tbsp toasted coconut
3 tbsp dried cranberries
1 tbsp of sprinkles (plus a few more for the top)
1 ½ tsp cocoa powder
1 tsp unsweetened almond milk
1 tsp maple syrup
2 tbsp dark chocolate chips

Steps:

  • In the bowl of a food processor, combine the chickpeas, peanut butter, vanilla, almond flour, maple syrup, cinnamon, and salt.
  • Mix for about a minute, then scrape down the sides of the bowl. Mix for another minute or so until the mixture is smooth and creamy.
  • Add almond milk as desired to achieve a texture that is more of a dip.Divide the cookie dough mixture into 4 equal portions. Use a rubber spatula to fold the mix-ins for each variation into each portion of dough.
  • Cover and refrigerate the cookie doughs until ready to serve.

  • Empty the can of chickpeas into a colander. Rinse with water, and with the water running, rub the chickpeas with your fingers, so the skins start to loosen

  • Drain and rinse the chickpeas. Place them on a clean dish towel and use another clean dish towel to rub gently on top to remove some of the skins. Remove them with your fingers and discard (this should only take about 1 minute; don’t feel the need to remove them all).
