VEGAN MEXICAN CHOCOLATE BROWNIES



Vegan Mexican Chocolate Brownies image

These vegan Mexican chocolate brownies so perfectly chewy and fudgy with a crackly top and infused with cinnamon and cayenne for a mild kick.

1 1/2 cups (200g) all purpose flour
1/2 cup (42g) dutch-processed cocoa powder
3/4 tsp baking powder
3/4 tsp salt
1 tsp cinnamon
1/4 tsp cayenne
1/2 cup (118mL) non-dairy milk
1/3 cup (80g) plain unsweetened non-dairy yogurt
1 1/2 cups (300g) sugar
1/4 cup (52g) oil or vegan butter
3oz (87g) 65-75% dark chocolate
2 tsp vanilla extract

Steps:

  • Preheat the oven to 350 ºF with a rack placed in the center. Spray an 8 or 9-inch square baking dish with oil and line with parchment paper, leaving two sides with overhang.
  • In a large mixing bowl sift together the flour, dutch-processed cocoa powder, baking powder, salt, cinnamon, and cayenne. Set aside.
  • In a small pot combine the milk, yogurt, oil or vegan butter, and sugar. Heat over low heat, stirring regularly, until the sugar has dissolved (mixture will reach ~120 ºF). Turn off the heat and add the chopped chocolate and vanilla extract. Stir until the chocolate has melted and the mixture is smooth.
  • Pour the wet ingredients into the dry and mix with a wooden spoon until just combined and no dry spots are left.
  • Spread the batter into the prepared baking dish and smooth the top with the back of the spoon.
  • Bake the brownies for 28-32 minutes in an 8-inch pan, or until a tester comes out with some moist crumbs but no wet batter. If using a 9-inch pan brownies will bake in 25-30 minutes
  • Let the brownies cool completely on a wire rack before removing from pan. They are delicious warm, but will be easier to cut if you allow them to cool fully and refrigerate for a few hours. Brownies can be warmed in the microwave in about 15-30 seconds.

10 ounces bittersweet chocolate chips
1 (15 1/2 ounce) can chickpeas, drained and rinsed
1 tablespoon butter
3/4 cup sugar
4 eggs
1/2 teaspoon baking powder

Steps:

  • Melt chocolate chips with butter, either over double boiler on stove or very carefully in microwave, heating only for 40 seconds at a time then stirring until melted.
  • Put all ingredients in food processor and blend until chickpeas are smooth.
  • Pour in to greased 6 x 6 baking pan.
  • Bake in preheated 350 oven for 30 minutes or until toothpick comes out clean.
  • Cool and cut into squares.

1 15 ounce can chickpeas (rinsed and drained)
1 cup raw, unsalted cashews (soaked for 1 hour in warm water discard the water after done soaking)
1/2 cup cocoa powder *
1/3 cup pure maple syrup * (agave * or honey can be substituted)
1 egg
1 tsp vanilla
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp Real Salt *
1/3 cup dark chocolate chips * (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Stir in chocolate chips.
  • Pour into a greased 8x8 baking dish.
  • Bake for 25-30 minutes or until a toothpick comes out clean. Do not overcook or it will dry out the brownies.
  • Allow them to cool for 20 minutes before cutting and serving to help them "set."

1 (15 ounce) can garbanzo beans, drained and rinsed
½ cup almond butter
⅓ cup maple syrup
2 teaspoons almond extract
¼ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
⅓ cup miniature chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch square baking pan with cooking spray.
  • Blend garbanzo beans, almond butter, maple syrup, almond extract, baking soda, baking powder, and salt together in a blender or food processor until batter is smooth; pour into a bowl. Fold chocolate chips into batter and pour into the baking dish.
  • Bake in the preheated oven until edges begin to pull away from sides and center is set, 20 to 25 minutes. Cool brownies in the pan for 20 minutes before cutting into 16 squares using a plastic knife.

  • Heat the non dairy milk and maple syrup in a skillet or microwave until just about boiling. Take off heat. Add the chocolate chips. Mix until melted and smooth and set aside. Line a brownie pan with parchment. Preheat the oven to 350 deg F (180 C).
