- In a large bowl, combine millet, shallot, garlic, carrot, zucchini, parsley, thyme, and olive oil and mix well. Add egg and mix until fully incorporated; season with salt and pepper.
- Using a 1/2 cup dry measuring cup, scoop out millet mixture and lightly pack. Turn out onto work surface and flatten to make a burger. Repeat process making three more burgers.
- Heat a large skillet over medium-high heat. Add canola oil. When the oil is heated, add burger, working in batches if necessary. Cook, gently turning once, until a golden crust has formed on the bottom, 8 to 10 minutes per side. Alternatively, the burgers may be baked in a 375-degree oven on a baking sheet for 30 minutes.
- Serve on hamburger buns with lettuce and tomato and a dollop of yogurt.

- Wash the sweet potato and prick it all over with a fork. Wrap in a clean, damp dishtowel and microwave on high for 5 minutes. CAREFULLY check it by squeezing it - you may need to use another dry dishtowel to do this - the potato will be hot. It should give a bit when squeezed, so if it stills seems hard microwave on high for another 2 to 3 minutes. Let cool until you are able to handle it with bare hands. Scoop the flesh out of the sweet potato and discard the skin.
- In a food processor, combine chickpeas, sweet potato, green onions, parsley, cayenne pepper, garlic powder, cumin, salt and pepper, flour, and one tablespoon oil, 1/4 cup of the barley and 1/4 cup of the quinoa. Process until the mixture is a cohesive paste.
- Put the chickpea/ sweet potato mixture in a large bowl and mix together with the remaining barley and quinoa. I find it is easiest to do this with my hands.
- Form the mixture into 6 patties.
- You can cook these right away in a frying pan lightly greased with olive oil; or you can place them on greased wax paper and freeze for later.

- Cook the quinoa by toasting it in a hot pan. When the grains separate, add 2/3rds of a cup of water. Bring to a boil, slap on a tight-fitting lid, and let the quinoa cook over a low flame for 15 minutes. Turn off the heat and let it stand, covered, for at least another 10 minutes.
- Heat the oil and add the spinach, red pepper flakes, salt and black pepper. Cook, stirring frequently until the spinach thaws, then cover with a lid and let the spinach cook to perfect tenderness over a low flame. This should take no more than five minutes. Turn off the heat.
- In a large bowl, mash the chickpeas. You want some large-ish pieces in there for texture, but nothing so big that the patty won't hold.
- Add the cooked quinoa, chickpea flour, 1/2 cup of the cooked spinach, paprika, cayenne, Italian seasoning and garlic. Add salt to taste.

- Place dried chickpeas in a bowl and cover with water by a few inches. Let sit overnight, or at least 12 hours. If time permits, 18 to 24 hours is best. Drain.
- Place the drained chickpeas, quinoa, onion, scallions, herbs, salt, paprika, and pepper flakes in the food processor. Process until blended, about 10 seconds. Scraped down the sides of processor and pulse again until combined. Transfer to a large mixing bowl.
- Add the grated zucchini and with a spatula or your hands, incorporate the zucchini into the mixture. Taste the mixture. It should taste good, and shouldn’t need much adjustment, but do adjust if necessary.
- Use a ½-cup measuring cup to portion the mixture into 6 (plus a little guy) patties. Squeeze the mixture between your hands as you shape each patty. The mixture will feel wet. When you shape the patties, the mixture might even feel a little delicate, and you will probably worry that the patties will fall apart in the pan. But, as long as your patties can hold their shape on the plate or sheetpan, you’re in good shape. At this point, the patties can be wrapped and stored in the fridge for a day or two.

- Preheat the oven to 400 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment paper for easy clean-up.
- Roast the sweet potatoes: Slice the sweet potatoes down the center lengthwise. Place the sweet potatoes, cut side down, on the prepared baking sheet. Roast until they yield to a gentle squeeze, 30 to 40 minutes or longer. Set aside for now. (If you’ll be baking the burgers, reserve the parchment-lined pan and leave the oven on.)
- Meanwhile, in a small saucepan, combine the quinoa and water. Bring the mixture to a boil over medium-high heat, then reduce the heat as necessary to maintain a gentle simmer. Simmer, uncovered, until all of the water is absorbed, 11 to 14 minutes. Remove the pan from the heat, cover, and let the quinoa steam for 10 minutes.
- Once the sweet potatoes are cool enough to handle, remove and discard the skin (it should pull off easily) and roughly chop the insides. In a large mixing bowl or the bowl of your electric mixer, combine the cooled sweet potatoes and quinoa, black beans, onion, cilantro, garlic, adobo sauce, cumin, chili powder, and salt. Use a potato masher, pastry cutter, large spoon or the paddle attachment of your mixer to mix really well. It’s ok if the black beans get smashed in the process.
