CHICKEN IN PEANUT SAUCE
Tender, buttery chicken breasts in smooth peanut sauce. Serve with a side dish of rice.

Steps:
- Thoroughly mix tomato puree, peanut butter, orange juice, soy sauce, and honey in a bowl. Stir ginger and curry powder into the tomato mixture.
- Season chicken cutlets with salt and black pepper.
- Heat olive oil in a skillet over medium heat; cook chicken in hot oil until golden brown, about 3 minutes per side. Pour the tomato mixture over the chicken, reduce heat to medium-low, and place a cover on the skillet; cook at a simmer, stirring occasionally, until the chicken is cooked through and the sauce thickens, about 30 minutes. Add water as needed to thin sauce if it gets too thick.
- Sprinkle parsley and peanuts over the chicken to serve.

Steps:
- Coat a large skillet with nonstick spray and warm over med-high heat.
- Add the onion and cook, stirring, for 5 minutes, or til softened.
- Add the chicken to the skillet and cook 3-4 minutes on each side or til browned.
- Meanwhile in a blender combine the reserved tomato juice, salt, paprika, pepper, peanut butter, cilantro, garlic, and red-pepper flakes.
- Blend til smooth.
- Pour over the chicken and add the tomatoes.
- Bring to a boil over high heat.
- Reduced heat to low, cover, and simmer for 25 minutes. Serve over rice or barley.

SPICY PEANUT CHICKEN

Steps:
- Combine curry powder, Thai chili garlic sauce, cayenne pepper, cinnamon, and soy sauce in a small bowl, and set aside. Fill a saucepan with water, and bring it to a boil. When the water is boiling, drop in the spaghetti and cook for 8 to 12 minutes, stirring occasionally, until tender. Drain the spaghetti, and set aside.
- Heat peanut oil in a skillet or wok over medium-high heat until barely smoking, and drop in the chicken. Cook and stir 5 to 8 minutes, until the chicken is just beginning to brown and the inside is no longer pink. Remove chicken from the skillet, and set aside.
- Make the peanut sauce by stirring together peanut butter and 3 1/2 cups of water in a saucepan over medium heat until mixture is smooth and the peanut butter is melted. Pour in the curry-chili sauce, and simmer, stirring occasionally, until the sauce is thickened, about 15 minutes.
- To serve, place the noodles in a large bowl, top with chicken, and spoon the peanut sauce over the chicken. Sprinkle the green onions over the dish, and garnish with chow mein noodles.
