Chicken in Peanut Sauce image

Tender, buttery chicken breasts in smooth peanut sauce. Serve with a side dish of rice.

1 cup tomato puree
½ cup smooth peanut butter
½ cup fresh orange juice
2 tablespoons soy sauce
2 tablespoons honey
½ teaspoon ground ginger
½ teaspoon curry powder
1 pound skinless, boneless chicken breast cutlets, pounded flat
1 pinch salt
¼ teaspoon ground black pepper
2 tablespoons olive oil
¼ cup water, or as needed
2 tablespoons chopped fresh parsley
2 tablespoons chopped unsalted peanuts

Steps:

  • Thoroughly mix tomato puree, peanut butter, orange juice, soy sauce, and honey in a bowl. Stir ginger and curry powder into the tomato mixture.
  • Season chicken cutlets with salt and black pepper.
  • Heat olive oil in a skillet over medium heat; cook chicken in hot oil until golden brown, about 3 minutes per side. Pour the tomato mixture over the chicken, reduce heat to medium-low, and place a cover on the skillet; cook at a simmer, stirring occasionally, until the chicken is cooked through and the sauce thickens, about 30 minutes. Add water as needed to thin sauce if it gets too thick.
  • Sprinkle parsley and peanuts over the chicken to serve.

1 onion, chopped
4 boneless skinless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon ground black pepper
1 (15 ounce) can diced tomatoes, drained and juices reserved
3 tablespoons peanut butter
1/4 cup packed fresh cilantro
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
hot cooked brown rice or cooked barley

Steps:

  • Coat a large skillet with nonstick spray and warm over med-high heat.
  • Add the onion and cook, stirring, for 5 minutes, or til softened.
  • Add the chicken to the skillet and cook 3-4 minutes on each side or til browned.
  • Meanwhile in a blender combine the reserved tomato juice, salt, paprika, pepper, peanut butter, cilantro, garlic, and red-pepper flakes.
  • Blend til smooth.
  • Pour over the chicken and add the tomatoes.
  • Bring to a boil over high heat.
  • Reduced heat to low, cover, and simmer for 25 minutes. Serve over rice or barley.

A Thai-inspired dish consisting of chicken served with a spicy peanut sauce over spaghetti noodles.

1 ½ teaspoons curry powder
2 tablespoons Thai chili garlic sauce (Sriracha), or to taste
1 ½ teaspoons ground cayenne pepper, or to taste
½ teaspoon ground cinnamon
2 teaspoons soy sauce
½ pound uncooked spaghetti
1 tablespoon peanut oil
2 large skinless, boneless chicken breast halves, cut into 1-inch cubes
3 ½ cups water
2 cups extra chunky peanut butter
4 green onions, coarsely chopped
½ cup chow mein noodles

Steps:

  • Combine curry powder, Thai chili garlic sauce, cayenne pepper, cinnamon, and soy sauce in a small bowl, and set aside. Fill a saucepan with water, and bring it to a boil. When the water is boiling, drop in the spaghetti and cook for 8 to 12 minutes, stirring occasionally, until tender. Drain the spaghetti, and set aside.
  • Heat peanut oil in a skillet or wok over medium-high heat until barely smoking, and drop in the chicken. Cook and stir 5 to 8 minutes, until the chicken is just beginning to brown and the inside is no longer pink. Remove chicken from the skillet, and set aside.
  • Make the peanut sauce by stirring together peanut butter and 3 1/2 cups of water in a saucepan over medium heat until mixture is smooth and the peanut butter is melted. Pour in the curry-chili sauce, and simmer, stirring occasionally, until the sauce is thickened, about 15 minutes.
  • To serve, place the noodles in a large bowl, top with chicken, and spoon the peanut sauce over the chicken. Sprinkle the green onions over the dish, and garnish with chow mein noodles.

1/4 tsp smoked sweet paprika
1 can(s) diced tomatoes, drained and juices reserved (15 ounce-can)
3 Tbsp peanut butter, creamy and natural
1/4 c cilantro, fresh
2 clove garlic, smashed and diced
1/4 tsp red pepper flakes
c cooked rice (brown or white)
salt and pepper to taste
