This Chicken and Sausage Penne Jambalaya is my delicious personal take on a classic recipe, loaded with chicken and Italian sausage that will be ready in only 30 minutes!

Steps:
- Season the chicken with chili powder, salt and pepper.
- Heat the olive oil in a large skillet. Add the chicken and sausage to the skillet and cook for 6 minutes just until the chicken and sausage start to brown.
- Add the onion and bell pepper to the skillet and cook for 2 minutes until the onion is translucent. Stir in the garlic and cook for another minute until fragrant.
- Add the diced tomatoes, chicken broth, penne and hot sauce to the skillet; stir well.
- Cook for 15 minutes until the penne is al dente.
- Garnish with green onions and cilantro

Chicken sausage recipes are not commonly found on the web. I had some chicken thighs and was looking for something versatile to do with them.

- Combine apple, onion, garlic, tomato paste, sage, celery seed, anise seed, marjoram, allspice, salt, and pepper in a nonstick skillet over medium heat. Cook and stir until softened and fragrant, about 10 minutes. Remove from heat and let cool for 10 minutes.
- Place chicken thighs in a food processor; pulse until coarsely chopped. Process until ground. Transfer to a bowl. Fold in apple mixture.
- Scoop 1/4 cup of the chicken mixture with a large melon baller and form into a patty. Repeat with remaining chicken mixture.
- Preheat a large nonstick skillet over medium heat. Cook 4 patties until browned and no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to a plate; wipe out skillet. Repeat with remaining patties.

ROASTED CHICKEN SAUSAGE AND POTATOES
Fresh rosemary gives plenty of flavor to both potatoes and sausage in this roasted chicken, sausage, and potatoes dish. Rosemary is a very aromatic herb, so you need to use only a little; refrigerate the rest of the bunch in a sealed plastic bag, up to one week.

- Preheat oven to 450 degrees. Pierce sausage all over with a fork; place on a rimmed baking sheet with potatoes and rosemary. Drizzle all with oil; season generously with salt and pepper. Toss to coat, and spread in an even layer.
- Roast, tossing occasionally, until sausage is browned and potatoes are tender, 30 to 35 minutes. If desired, halve sausages crosswise before serving.

PASTA AL FORNO WITH CHICKEN SAUSAGE AND RAPINI

- Bring a large pot of water to a boil. Add the pasta, bring back to a boil and cook until very very al dente, 6 to 7 minutes. Drain and set aside.
- Heat a large (12- to 14-inch) nonstick skillet over medium-high heat. Add the olive oil and sausage, breaking up the sausage with a wooden spoon into smaller chunks. Cook, without moving the sausage, until golden brown on the bottom but still pink on the top, 5 to 6 minutes. Add the rapini and mushrooms, toss together and cook until the mushrooms are slightly brown and the rapini has wilted, another 5 to 6 minutes. Add the garlic and cook for another 20 seconds. Immediately turn the mixture into a bowl and set aside.
- Lower the heat to medium, add the butter and cook until bubbly and melted. Add the flour while whisking to break up clumps. Cook until slightly golden, 2 to 3 minutes. While whisking, slowly add the milk. Add the Pecorino Romano, nutmeg and some salt and pepper. Bring to a simmer and simmer until the mixture starts to thicken slightly, about 3 minutes.
- Off the heat, add the pasta and sausage/rapini mixture and stir to coat. Season to taste, adding more Pecorino Romano if desired. Once completely cool, add a layer of the mozzarella, then sprinkle on the sun-dried tomatoes. Can be made 1 day ahead.
- When ready to bake, preheat the oven to 350 degrees F.
- Bake until bubbly and the cheese is golden brown, 20 to 25 minutes. Garnish with torn fresh basil.

- Preheat oven to 375°.
- Coat 2 1/2 quart baking dish with cooking spray.
- Cook pasta; drain; rinse with cold water.
- In bowl, combine marinara, 1 1/2 cups of mozzarella, spinach, ricotta, Parmesan, garlic, basil, salt and pepper. Stir in pasta, sausage and chicken; transfer to baking dish.
- Sprinkle remaining 1/2 cup of mozzarella over pasta. Bake until hot, 25-30 minutes.
- Serve with Focaccia bread.
HOMEMADE SPICY CHICKEN SAUSAGE
I was tired of the bland chicken/turkey sausage that I have been buying in the store. The ones that are theoretically 'good' are made with pork casings (intestines), and we do not eat pork. Here is a recipe that you can make at home, pat out into small patties, and cook for meals. I hope you enjoy it. My kids approve of this recipe.

- Set up the meat grinder for your stand mixer (such as KitchenAid®) with the coarse plate attached. Grind chicken thighs, onion, bell pepper, and jalapenos into a mixing bowl. Add maple syrup, salt, garlic, sage, onion powder, ginger, thyme, pepper, smoked pepper, and cayenne. Mix until well blended.
- Re-grind the chicken mixture using the fine plate of the attachment.
- Refrigerate sausage mixture until flavors combine, 2 to 3 hours.
- Heat 1 tablespoon oil in a large skillet over medium heat. Drop large spoonfuls of the sausage mixture into the skillet; flatten with the back of the spoon. HOW TO MAKE YOUR OWN HOMEMADE CHICKEN SAUSAGE
Making your own chicken sausage is very intriguing especially if you are a budding chef. By coming up with your own homemade chicken sausage, you can have a more nutritious food. You can limit or completely skip the use of additives that commercially-available processed foods are notorious for.

- Start by preparing the casings. For natural casings, soak in a clear, warm water for at least an hour. This should make the casing more pliable.
- Cut all the chicken meat into small pieces, or about an inch in size. Cut the chicken including the skin. Then pass the meat through the disk of the meat grinder.
- Add all the spices to the chicken broth. Mix them well.
- Add the broth and spice combination to the ground meat. Mix it by hand.
- Grind the meat again but this time using the fine plate.
- Stuff the meat into the natural casings. It's really up to you which type of casing you would use. But if you're a beginner, I would suggest you use smaller casings as these can be easier to deal with.
- Attach the sausage stuffer tube to the funnel of the meat grinder. Gather one end of the casing into the nozzle of the sausage stuffer. Make sure that the casing is not twisted.
- Switch on the sausage stuffer. Use low speed until you get used to it.
- Knot the other end of the casing tightly once there is about 2 inches left dangling.
- Tip: Fill the casing with enough meat so that you won't end up with loose sausage links. You should also prick the casing to remove the air.
- Refrigerate the sausage links. Ideally, you should be consuming them within 3 days. But if you plan to use them beyond that period, freeze the sausage. The food should be safe to consume for up to four months.

- Heat the olive oil in a large saucepan over medium heat. Add the sausage and cook for about 3 minutes, until no longer pink. Add the onion, garlic, and red pepper flakes and continue cooking for about 5 minutes, until the onion is soft and translucent. Add the tomatoes and simmer for 15 minutes. Season with salt and pepper. Preheat the oven to 350°F. Combine the ricotta and milk in a mixing bowl. In a 9" x 9" baking pan, lay down a layer of 4 noodles.
