Look no further from this FAST and EASY recipe for authentic-tasting Thai chicken satay. The chicken is so tender and juicy and there's plenty of homemade PEANUT SAUCE to dip it into!

1/2 cup canned coconut milk (I used Trader Joe's Lite)
3 cloves garlic, finely mince or pressed
2 tablespoons lime juice
2 tablespoons soy sauce
2 tablespoons fish sauce
1 tablespoon light or dark brown sugar, packed
1 to 2 teaspoons turmeric
1 to 2 teaspoons cumin
1 to 2 teaspoons coriander
1 to 2 teaspoons ground ginger
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 to 1.25 pounds boneless skinless chicken breast tenders
heaping 1/3 cup creamy peanut butter
1/4 cup honey
1/4 cup sesame oil
2 tablespoons apple cider vinegar
1 to 2 teaspoons ground ginger, or to taste
1 teaspoon salt, or to taste
1 teaspoon pepper, or to taste
1 clove garlic, finely minced or pressed, optional
pinch cayenne pepper, optional and to taste
1/4 cup coconut milk, or as desired for consistency
salted peanuts, to taste
fresh cilantro, to taste

Steps:

  • To a medium bowl, add all marinade ingredients (except the chicken) and whisk to combine until smooth and incorporated.
  • Add the chicken and stir to combine and coat. Cover and refrigerate in the fridge for at least 1 hour, or overnight.
  • Thread one piece of chicken onto one metal grilling skewer and repeat with all remaining pieces. If using wooden skewers, soak in water for at least 30 minutes. Discard excess marinade.
  • Preheat grill to medium-high heat and cook chicken for about 5 to 7 minutes, or until done and cooked through. Rotate often to ensure even cooking. While chicken cooks make the peanut sauce.
  • To a medium bowl, add all peanut sauce ingredients and whisk to combine until smooth and incorporated. Taste, check for seasoning and flavor balance, and make any necessary adjustments (i.e. more honey, more peanut butter, more salt, more sesame oil, etc.). If you like your sauce on the thicker side you may want to omit the coconut milk; set aside to serve with chicken. Extra peanut sauce will keep airtight for up to 10 days in the fridge.
  • Place skewers on a plate and evenly garnish with peanuts and cilantro, to taste, and serve immediately. Chicken is best fresh but will keep airtight in the fridge for up to 5 days.

2 pounds chicken tenders
1 cup yogurt
1 tablespoon curry powder
4 dashes hot sauce, or to taste
2 cloves garlic, minced
1 shallot, minced
1-inch piece fresh ginger, minced
Kosher salt
1 tablespoon vegetable oil
1 tablespoon curry powder
2 cloves garlic, minced
1 shallot, minced
1-inch piece fresh ginger, minced
1/2 cup smooth peanut butter
1/2 cup coconut milk
1/4 cup soy sauce
2 tablespoons brown sugar
1/2 teaspoon hot chili oil
Juice of 2 limes
Kosher salt
1/2 cup hot water
1/2 cup chopped fresh cilantro, for garnish

Steps:

  • For the chicken: Cut the chicken tenders into 2-inch pieces and put in a large container. Whisk together the yogurt, curry powder, hot sauce, garlic, shallot, ginger and some salt in a small bowl. Pour over the chicken, cover and marinate, refrigerated, for 1 to 2 hours.
  • Meanwhile, soak the wooden skewers in water.
  • When ready to cook the chicken, heat a grill pan over medium heat.
  • Remove the chicken from the marinade and thread 2 pieces onto each skewer. Grill the chicken until cooked through with nice grill marks, 3 to 4 minutes per side. Let cool. Cover and refrigerate.
  • For the peanut sauce: In a small pot, heat the oil. Cook the curry powder, garlic, shallot and ginger until the aromatics are soft. Scrape this into a blender and add the peanut butter, coconut milk, soy sauce, brown sugar, hot chili oil, lime juice and a pinch of salt. Blend, adding the hot water a little at a time to thin it and make it smooth. Transfer to a bowl, cover and refrigerate.
  • To serve, put a bowl or ramekin of the peanut sauce in the center of a round serving plate. Arrange the skewers in a circular pattern around the bowl with the meat facing toward the center. Sprinkle with the cilantro.

  • Add vegetables to create lettuce wraps.
  • Peanut Sauce.
  • Combine all ingredients and whisk until well blended.

2 tablespoons light brown sugar
1 tablespoon fish sauce

1/2 cup coconut milk, plus 1/4 cup
2 lbs chicken tenders
1 cup panko breadcrumbs
1/2 cup shredded sweetened coconut, toasted

2 large eggs
5 cups broccoli florets
2 tablespoons olive oil
1/4 cup creamy peanut butter
1 cup fresh cilantro stem

  • Directions:.
  • Preheat oven to 400 degrees F. In a medium bowl, whisk to combine ginger, pineapple juice, light brown sugar, fish sauce, soy sauce, 2 teaspoons sriracha and 1/2 cup coconut milk. Place chicken tenders in a resealable bag and pour 1/2 cup marinade over. Reserve remaining marinade for peanut sauce. Seal and refrigerate chicken for at least 30 minutes and up to 4 hours.
  • Drain chicken and discard marinade in bag. In a medium bowl, stir to combine panko, shredded toasted coconut, chopped peanuts and 2 teaspoons salt. Place eggs in a medium bowl and whisk to combine. Coat chicken tenders in egg, then completely in the panko breading mixture, pressing to adhere. Place coated chicken on one side of prepared baking sheet.
  • Arrange broccoli florets on other side of the sheet pan and drizzle with olive oil and 2 tablespoons of reserved marinade. Season chicken and broccoli with salt and pepper. Bake until broccoli is tender and chicken is cooked through, about 20-25 minutes.
  • Place remaining marinade in a small saucepan and bring to a boil. Whisk in peanut butter remaining 1/4 cup coconut milk and 1-2 teaspoons sriracha until smooth.
  • Drizzle sauce over chicken and garnish with fresh cilantro, toasted coconut and lime wheels.
