NATASHA'S CHICKEN BURGERS
Natasha is my eldest daughter, and her eyes light up when I announce we're having these for dinner. While my husband and I eat 1 or 2 each, she easily finishes at least 3! The onion can be finely chopped, but with three kids, we prefer grating it so as to hide it. I usually serve these with mashed potatoes and Caesar salad for a very comforting meal! Extra-lean ground chicken can be substituted with ground turkey with great results.

Steps:
- Mix ground chicken, 1/4 cup bread crumbs, onion, egg, garlic, salt, and black pepper in a bowl. Moisten hands and shape chicken mixture, 2 tablespoons at a time, into flat, oval-shaped patties.
- Spread remaining 1/4 cup bread crumbs into a shallow dish. Roll patties in bread crumbs to coat.
- Heat olive oil in a large skillet over medium-high heat.
- Cook patties in hot oil until deep brown in color on the bottom, 5 to 6 minutes. Turn patties and cook until other side is browned, 3 to 4 minutes more.

CHICKEN BURGERS WITH FRESH BELL PEPPERS, ONION, AND CILANTRO
These delicious and healthy burgers always hit the spot and aren't difficult to prepare - especially if you have a food processor to do the chopping for you.

Steps:
- In large bowl place ground chicken and the first five ingredients, stir to combine completely until the mixture is consistent and smooth.
- Place a grill pan, or regular skillet, (if you plan to do these on the grill, know that they are very moist and will need to be placed very gently on the grill.) Spray it with non-stick spray and set the skillet/grill pan to medium heat.
- Slice the remaining bell peppers into strips,.
- toss with the olive oil and sugar. Place into a second skillet set to medium heat.
- Cook these stirring occasionally until they soften and get little black char marks (depending on how hot your stove is, this may take 4-7 minutes).
- Divide the burger mixture into 8 even amounts and shape with hands then place into skillet. The burgers should be roughly ½ inch thick throughout.
- Cook the burgers for 7 minutes on each side or until the juices run clear and they have an internal temperature of 170° before serving.
- To assemble the burgers, place on a fresh.
- Italian roll with mayo and cooked bell peppers on top.

Wonderful breaded chicken topped with pepperoni, and tomato sauce, and mozzarella cheese. Serve plain, or over your favorite pasta.

- Preheat oven to 325 degrees F (165 degrees C).
- Place chicken breasts between 2 sheets of heavy plastic or waxed paper on a solid, level surface. Firmly pound with the smooth side of a meat mallet to a 1/2-inch thickness.
- Combine bread crumbs, 1 teaspoon oregano, 1/2 teaspoon garlic salt, salt, and black pepper in a shallow bowl. Dip both sides of chicken in bread crumb mixture until evenly coated.
- Heat 1 1/2 tablespoon olive oil in a large skillet over medium heat. Cook 2 chicken breasts until browned and no longer pink in the center, about 4 minutes per side. Repeat with remaining olive oil and chicken breasts. Arrange chicken breasts in a 9x13-inch baking dish.
- Combine tomatoes, sugar, 1 teaspoon garlic salt, basil, 1/2 teaspoon oregano, salt and black pepper in a saucepan. Cook over medium-low heat until heated through, 10 to 15 minutes. Pour sauce evenly over chicken breasts in the baking dish.
- Cover tomato sauce with pepperoni and mozzarella cheese.
- Bake in the preheated oven until cheese is melted, 20 to 30 minutes.

Steps:
- In a bowl place the chicken, pepperoni, half the garlic, sage, salt and pepper.
- Mix together and form into 4 equal sized patties.
- In large skillet, over medium heat, fry patties until desired doneness.
- Meanwhile, combine the mayo, lemon zest, herb mixture, the other half of garlic, salt and pepper.
- Place cheese on top of each burger and let melt.
- Divide the mayo dressing among the 4 bun bottoms.
- Place a patty on top, along with the lettuce and tomato, if using.
- Serve.
