Meet a new chicken salad that's filled with noodles, nuts and slaw then tossed with an Asian sesame dressing.

2 cups shredded green cabbage
2 cups shredded red cabbage
1 cup shredded carrot (1 large)
1/4 cup sunflower nuts
1/2 cup low-fat Asian sesame-ginger dressing
1/2 cup chow mein noodles

Steps:

  • In large bowl, place all ingredients except dressing and noodles.
  • Pour dressing over salad; toss to coat. Garnish with noodles.

1 medium carrot
1/2 small fennel bulb
1/8 of a small red cabbage (about 3 ounces)
3 tablespoons chopped fresh chives
1/4 cup dried cranberries
1 store-bought rotisserie chicken breast, finely shredded or chopped to yield 1 cup of meat
1/2 cup full-fat Greek yogurt
2 tablespoons sour cream
Zest of 1 large lemon
2 tablespoons lemon juice
2 tablespoons maple syrup
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 Belgian endive spears, leaves separated

Steps:

  • For the slaw: Using a food processor fitted with a shredding attachment, finely shred the cabbage, carrot and fennel. In a medium bowl, combine the carrot, fennel, cabbage, chives, cranberries and chicken.
  • For the dressing: In a small bowl, whisk together the yogurt, sour cream, lemon zest, lemon juice, maple syrup, salt and pepper until smooth.
  • Pour the dressing over the cabbage mixture and toss to combine.
  • Spoon the filling into the endive leaves and serve.

Chicken & Noodle Slaw image

This Asian-style slaw is a meld of many flavors & has a bit of a crunch as well! With the chicken it becomes more than just a satisfying side dish! Preparation time does not include time needed to shred the cabbage & carrot, nor the time taken to chop the chicken. Time that could be cut back by purchasing a pre-packaged cabbage-&-carrot coleslaw & using previously cooked, chopped & frozen chicken. The time also does not include the 4-8 hours for the slaw to chill. NOTE: On June 2011, I edited the recipe to include a 2nd can of mandarin orange segments, make the peanuts optional, AND increase the servings from 8 to 12-14.

1 medium head of cabbage, sliced thin & slightly chopped
1 medium carrot, peeled & shredded (or a 1-pound bag of prepared coleslaw instead of the cabbage & carrot)
2 boneless skinless chicken breast halves, shredded (about 1 lb)
2 (2 7/8 ounce) packages low-fat oriental-flavor ramen noodle soup mix (reserve the 2 packets of seasoning to use in the dressing)
1 (8 ounce) can sliced water chestnuts, drained
3 green onions, sliced
1 (2 1/4 ounce) can pitted black olives, sliced
2 (11 ounce) cans mandarin orange segments, drained
1/3 cup roasted peanuts (optional)
2 (1/2 ounce) packets noodle flavoring (from ramen noodle soup mix)
1/4 cup white wine vinegar
1 tablespoon vegetable oil
1 tablespoon granulated sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup mayonnaise
2 tablespoons milk

Steps:

  • FOR THE SLAW ~ Somewhat crush the noodles in their clear cellophane envelopes, then make sure larger clumps are separated.
  • In a large bowl, combine the cabbage & carrot OR USE A 1-POUND BAG OF PREPARED COLESLAW, the shredded meat, ramen noodle, water chestnuts, onions, olives & orange segments, then set aside.
  • FOR THE DRESSING ~ In a small bowl, whisk together both seasoning packets, vinegar, vegetable oil, sugar, salt & pepper.
  • Pour this over the slaw, & toss to coat.
  • In another small bowl, whisk together mayonnaise & milk, then carefully stir into the slaw.
  • Cover & refrigerate at least 4 hours (& preferably overnight) before serving.

Poaching chicken in a peanut butter broth brings nuttiness into each bite. The flavorful poaching liquid then becomes the base for the dressing in this light, easy noodle salad.

Kosher salt
1/2 cup smooth peanut butter
1 large boneless, skinless chicken breast (about 12 ounces), sliced crosswise 1/4 inch thick
1/4 cup rice vinegar
2 tablespoons soy sauce
2 tablespoons Sriracha, or more as needed
4 scallions, thinly sliced (white and green parts)
6 ounces thin rice noodles (vermicelli)
1 romaine heart, thinly sliced (about 3 cups)
2 Persian cucumbers or 1 regular cucumber, thinly sliced (about 2 cups)
1 red bell pepper, thinly sliced
1 cup loosely packed roughly chopped fresh cilantro (from about 1 medium bunch)
Lime wedges, for serving

Steps:

  • START THE WATER: Bring a large pot of salted water to a boil.
  • POACH THE CHICKEN: Bring 1 1/2 cups water to a simmer in a medium skillet. Whisk in the peanut butter, then add the chicken. Cook over medium-low heat at a bare simmer until just cooked through, 3 to 5 minutes. Use a slotted spoon to transfer the chicken to a plate; continue to simmer the sauce until thickened and reduced by about half, about 5 minutes. Take off the heat and whisk in the vinegar, soy sauce, Sriracha, and scallions. Cool slightly.
  • COOK THE NOODLES: Add the rice noodles to the boiling water and cook until almost tender, about 3 minutes. Drain and rinse under cold water to cool. Drain the noodles very well, tossing with tongs to release as much water as possible. Snip the noodles with scissors a few times to cut the long strands.
  • TOSS THE SALAD: Toss the noodles with the romaine, cucumbers, bell pepper, half of the cilantro, and just enough dressing to coat. Season with salt. Divide among 4 bowls and top with the chicken. Drizzle the remaining dressing over the top and garnish with the remaining cilantro. Serve with lime wedges.

3 cloves garlic, crushed
½ cup seasoned rice vinegar
1 tablespoon soy sauce
1 tablespoon fish sauce
1 tablespoon brown sugar
1 tablespoon Sriracha chile sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1 cooked chicken breast
1 (8 ounce) package spaghetti
1 cup grated carrots
1 red bell pepper, thinly sliced
4 green onions, thinly sliced
½ cup chopped roasted, salted peanuts
⅓ cup chopped fresh basil
⅓ cup chopped fresh mint
⅓ cup chopped cilantro

Steps:

  • Whisk garlic, rice vinegar, soy sauce, fish sauce, brown sugar, Sriracha, hoisin, and sesame oil together in a mixing bowl for the dressing.
  • Tear chicken apart into strands similar in width to the spaghetti. Refrigerate until ready to use.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and rinse with cold water.
  • Transfer spaghetti to a mixing bowl; add the chicken, carrots, bell pepper, and green onions. Pour in the dressing and toss by hand until well combined. Seal the surface of the salad with plastic wrap and refrigerate, tossing occasionally, for 2 to 12 hours, the longer the better.
  • Add peanuts, basil, mint, and cilantro to the salad. Toss well; taste and adjust for seasoning.

Mother gave me this recipe 40 years ago, and we still love it. The oil and vinegar, mixed with the Ramen noodle flavor packet, make a light dressing for this luscious salad which keeps well. Great for buffets and covered-dish suppers!

1 (16 ounce) package coleslaw mix (cabbage & carrots) or 1 large savoy cabbage, thinly grated
6 spring onions, thinly sliced (including tops)
4 ounces sliced almonds, toasted
1/4 cup craisins (optional)
1/2 teaspoon celery seed (optional)
1 (3 ounce) package chicken-flavored ramen noodles (uncooked)
3 -4 tablespoons canola oil
1/4 cup Splenda sugar substitute or 1/4 cup sugar
1/4 cup apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 -2 teaspoon low-sodium instant chicken bouillon granules (optional)
2 teaspoons sesame oil (optional)

Steps:

  • Although this is delicious without the optional ingredients, I usually add them anyway.
  • I usually toast my almonds by using the light setting on the toaster oven.
  • SLAW:.
  • In large bowl, add slaw mix, green onions, almonds, Craisins, and celery seed. Prepare Dressing and pour over slaw, mixing well. Refrigerate.
  • DRESSING.
  • Before opening Ramen noodle bag, lightly pound the bag to break apart most of the noodles.
  • In small bowl, add Ramen noodles (including the flavor packet), vinegar, Splenda/sugar, salt, pepper, celery seeds, and bouillon Stir to mix well. Add canola and sesame oil and stir well.
  • Note: You can use a regular head of cabbage in place of Savoy, if you like.
