1/4 cup creamy peanut butter
1/4 cup boiling water
1 tablespoon lime juice
1 tablespoon sesame oil
1 tablespoon soy sauce
1/2 teaspoon crushed red pepper flakes
1 small garlic clove, minced
1/4 teaspoon ground mustard
4 boneless skinless chicken breast halves (4 ounces each)
4 cups spring mix salad greens
1 medium sweet red pepper, julienned
2 green onions, sliced
1 cup canned bean sprouts, drained
2 large navel oranges, peeled and sectioned
1/4 cup dry roasted peanuts

Steps:

  • For dressing, in a small bowl, whisk the first eight ingredients; set aside. , In a large nonstick skillet coated with cooking spray, cook chicken over medium heat for 4-5 minutes on each side or until a thermometer reads 170°., On four plates, divide the salad greens, red pepper, onions, bean sprouts and oranges. Slice chicken; arrange on salads. Sprinkle with peanuts; drizzle with dressing.

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1/2 cup water
1/3 cup vinegar
3 tablespoons brown sugar
3 tablespoons vegetable oil, divided
1 tablespoon soy sauce
2 chicken bouillon cubes
1/3 to 1/2 cup mayonnaise
2 tablespoons honey
2 tablespoons lemon juice
2 teaspoons minced parsley
2 teaspoons ground mustard
1/4 teaspoon dried minced onion
1 package (10 ounces) ready-to-serve salad or 4 cups torn lettuce
1 can (11 ounces) mandarin oranges, drained
1 cup chow mein noodles
1 green onion, thinly sliced
2 tablespoons sliced almonds

Steps:

  • In a skillet, combine chicken, water, vinegar, brown sugar, 1 tablespoon oil, soy sauce and bouillon. Cook and stir over medium heat for 15-20 minutes or until chicken is tender and liquid has evaporated. , Meanwhile, for dressing, whisk mayonnaise, honey, lemon juice, parsley, mustard, onion and remaining oil until blended. Arrange salad greens on a platter. Top with oranges, chicken mixture and chow mein noodles. Sprinkle with green onion and almonds. Serve with dressing.

Breast meat of 1 store-bought rotisserie chicken
6 scallions, thinly sliced
1 red bell pepper, cored and thinly sliced lengthwise
1/2 small head napa cabbage, thinly sliced crosswise
1/2 small head iceberg lettuce, shredded
2 cups (about 4 ounces/115 grams) bean sprouts
One 8-ounce/227-gram can sliced water chestnuts, coarsely chopped
1/2 cup coarsely chopped fresh cilantro leaves
1/2 cup roasted unsalted peanuts or soybeans
1 cup crispy chow mein noodles
2 large navel oranges
2 tablespoons hoisin sauce
2 tablespoons rice wine vinegar
1 teaspoon grated fresh ginger
1 small clove garlic, grated
3 tablespoons vegetable oil
Kosher salt and freshly ground black pepper

Steps:

  • For the salad: Remove the skin from the chicken and shred the meat with a fork. Toss in a large bowl along with the scallions, red pepper, cabbage, lettuce, bean sprouts, water chestnuts, cilantro, peanuts and chow mein noodles. With a sharp knife, cut the peel from one of the oranges, then cut the segments away from the membranes. Coarsely chop the segments, then add them to the bowl. Slice the other orange in half and squeeze over a small bowl, reserving 2 tablespoons juice.
  • Make the dressing: Whisk together the reserved orange juice, hoisin sauce, vinegar, ginger and garlic in a small bowl. Slowly add the oil, whisking constantly, until emulsified and thick; season with salt and pepper. Pour the dressing over the salad, then season with salt and pepper. Toss and serve.

1/4 cup reduced-sodium teriyaki sauce
2 teaspoons canola oil
8 cups torn mixed salad greens
1 can (11 ounces) mandarin oranges, drained
1 medium carrot, shredded
1/4 cup slivered almonds, toasted
3 tablespoons thinly sliced green onions
DRESSING:
2 tablespoons white vinegar
2 tablespoons olive oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a shallow dish, combine chicken and teriyaki sauce. Cover and refrigerate 1-2 hours. , Drain and discard marinade. In a large nonstick skillet, heat oil over medium-high heat. 150g pack green bean, trimmed
1 fennel bulb
1 large avocado
100g bag watercress, roughly chopped
2 oranges
2 tbsp olive oil
2 cooked chicken breasts, shredded

Steps:

  • Cook the beans in a large pan of boiling salted water for 4-5 mins. Cool under cold water and put in a bowl. Finely slice the fennel bulb, cutting away the core.
  • Peel and slice the avocado and add to bowl with watercress. Peel the oranges, cut out the segments and add to bowl. Squeeze the rest of the orange juice into a bowl and mix with the olive oil to make a dressing. Toss salad in the dressing, scatter over chicken, then serve.

A refreshing and flavoursome summer salad, adapted from 'Quick Meals'. Vary the yoghurt according to taste preferences. If you want to add more colour variation, use a red capsicum instead of the yellow capsicum, or use ½ a red capsicum and ½ a yellow capsicum.

2 oranges
2 skinless chicken breast fillets, cooked and shredded
2 celery ribs, cut into fine strips
2 spring onions, shredded
1 yellow capsicum, cut into fine strips
sea salt & freshly ground black pepper, to taste
250 g mixed green salad leaves
150 ml natural yoghurt or 150 ml Greek yogurt
2 tablespoons mayonnaise
2 teaspoons honey
1 tablespoon fresh parsley, roughly chopped
1/2 cup pecans

Steps:

  • Peel the oranges over a small bowl so as to catch - and reserve - the juice; cut the flesh into segments and place in a separate bowl.
  • Stir in the cooked, shredded chicken, celery, spring onions and capsicum, and season to taste with salt and freshly ground black pepper.
  • Making the dressing: In a small bowl, mix all the ingredients together, including any reserved orange juice, until well-combined.
