Zesty Wor Wonton Soup Recipe image

Wor Wonton Soup is a zesty, flavorful soup that is hearty enough to enjoy as a main dish. This recipe is perfect for customizing with your favorite proteins and veggies!

Provided by Sommer Collier

Categories     Soup

Time 50m

Number Of Ingredients 17

½ pound ground pork or chicken
¼ cup chopped scallions
2 tablespoons soy sauce
2-3 cloves garlic (minced)
1 tablespoon fresh grated ginger
1 teaspoon sesame oil
½ teaspoon crushed red pepper
25 refrigerated wontons wrappers (usually 2 inch squares)
1 tablespoon sesame oil
3-4 cloves garlic (minced)
1 tablespoon fresh grated ginger
8 cups chicken broth
2 tablespoons soy sauce
2 cups cooked shredded chicken (use up leftovers)
2 cups chopped bok choy
8 ounces sliced shiitake mushrooms
½ cup chopped scallions

Steps:

  • Set out a medium mixing bowl. Add ground pork or chicken, scallions, soy sauce, garlic, ginger, sesame oil, and crushed red pepper. Mix until well combined.
  • Lay out several wontons wrappers. Set out a small dish of water to act as glue. Place 1 ½ teaspoons of the met filling in the center of each wonton. Use your finger to paint a line of water along two connected edges. Fold the wet corner up to meet the opposite corner. Use your fingers to close and seal the edges of the wonton wrapper, making a triangle shape.
  • Now use your finger to dampen the two bottom corners. Bring them together and pinch to seal. Repeat with the remaining wonton wrappers and filling.
  • Set a large 6-8 quart saucepot over medium-high heat. Add the sesame oil, garlic, and ginger. Sauté for 2 minutes, to soften the aromatics, then pour in the chicken broth and soy sauce. Bring to a simmer. Simmer the soup base for 10 minutes.
  • Meanwhile, load soup bowls with shredded chicken, bok choy, sliced mushrooms, and scallions. (These ingredients will steep in the hot broth, "Hot Pot" style!)
  • Once the soup has simmered 10 minutes, reduce the heat, and gently lower the wontons into the soup. Simmer on medium-low for 2-3 minutes. (DO NOT over-cook the wontons or they will open up and disintegrate into the soup.) Then ladle the wonton soup broth into the bowls. Serve hot.

CHINESE CHICKEN BROTH

Chinese Chicken Broth image

The importance of using good broth for Chinese cooking (and really, any cooking) cannot be overstated. This simple broth-flavored with ginger, garlic, scallions, and cilantro-makes a fantastic base for many recipes, including soups, sauces, and marinades, and is also perfect for blanching and poaching.

Provided by Eileen Yin-Fei Lo

Yield Yields about 3 quarts

Number Of Ingredients 9

1 4-lb. whole chicken, trimmed of excess fat and quartered, giblets reserved (except liver)
1 lb. chicken wings
2 medium yellow onions, quartered
1 cup coarsely chopped fresh cilantro
1 4-inch piece fresh ginger, peeled, cut into thirds, and smashed
4 medium scallions, cut crosswise into thirds
3 medium cloves garlic, peeled
1/2 tsp. white peppercorns
Kosher salt

Steps:

  • In a 10-quart stockpot, bring 2 quarts of water to a boil. Add the quartered chicken, giblets, and chicken wings; return to a boil. Boil for 2 minutes to bring any impurities to the surface. Pour off the water and run cold water into the pot to rinse the chicken; pour off the water again.
  • Add 4 quarts of fresh cold water along with the onions, cilantro, ginger, scallions, garlic, and peppercorns. Cover and bring to a boil. Turn the heat down, partially cover, and simmer for 3 hours, skimming off foam as necessary.
  • Strain over a large bowl or pot, discarding the solids. Season to taste with salt. Let cool before using or storing.

Time 50m

Number Of Ingredients 16

  • Wash the napa cabbage clean and shake off any excess water. If using a food processor, tear the leaves up and pulse them into small pieces (take care not to mince the napa cabbage). If hand-chopping them, slice the leaves thinly lengthwise and then finely chop them going the other way. Transfer to a bowl and mix in ¾ teaspoon salt. Set aside for 30 minutes while you prepare the other ingredients (but no more than 30 minutes). After 30 minutes, squeeze the napa cabbage dry and save the water.
  • Pre-soak the mushrooms if using dried shiitake mushrooms (then squeeze any water from the mushrooms and reserve the soaking liquid––if using fresh mushrooms, skip this step). Remove the mushroom stems and dice them into ½” cubes.
  • Heat 3 tablespoons oil in a wok or pan over medium high heat, and cook the mushrooms for about 5-8 minutes until caramelized. Turn off the heat and leave the mushrooms to cool.
  • Now hand-chop the chicken by using our method for grinding meat without a grinder. This allows you to choose whatever cut of chicken you like (breast or thighs) and get a better texture than conventional ground meat. If you’d like to skip this step, you can also use ground chicken.
