2/3 cup extra-virgin olive oil
2/3 cup red wine vinegar
2 cups pitted prunes
1/4 cup capers with a bit of brine
2 tablespoons dried oregano
20 garlic-stuffed olives
5 cloves garlic, minced or pushed through a press
2 bay leaves
Kosher salt and freshly ground black pepper
3 pounds bone-in, skin-on chicken breasts
1/4 cup light brown sugar
1/2 cup white wine
1/2 cup fresh flat-leaf parsley leaves, finely chopped

Steps:

  • Combine the oil, vinegar, prunes, capers, oregano, olives, garlic, bay leaves, 1/4 teaspoon salt and a few grinds of pepper in a large shallow baking dish. Add the chicken and turn to coat. Cover with plastic wrap and marinate at least 1 hour or overnight.
  • Preheat the oven to 375 degrees F. Using a slotted spoon, remove the chicken from the marinade to a plate. Pour the marinade into a 9-by-13-inch baking dish. Arrange the chicken on top, skin-side up. Sprinkle the brown sugar over the chicken breasts and pour the white wine around them.
  • Bake, basting three or four times with the pan juices, until the chicken is crispy on top and cooked through, 1 hour to 1 hour 20 minutes.
  • Transfer the chicken, prunes, olives and capers to a serving platter. Moisten with a few spoonfuls of the pan juices and sprinkle generously with the parsley. Pour the remaining pan juices into a sauceboat and pass with the chicken.

Start with a chicken, cut up and ready to sauté, and it's easy to follow many routes to a finished dish. Here the meat is bathed in a sauce with a musky, chile-fueled bite that is made to behave by plump, sweet prunes. But the dish could also use a vehicle for its abundant, complex sauce. Mashed white or sweet potatoes, soft polenta, tender white beans or plain steamed rice would all be suitable choices.

2 dried ancho chiles
1 tablespoon extra-virgin olive oil
1 chicken, cut in 10 pieces, backbone and wingtips removed
Salt and ground black pepper
1 small red onion, chopped
2 large cloves garlic, sliced thin
1 1/2 teaspoons ground cumin
3/4 cup chicken stock
1/4 cup fino sherry
1 tablespoon red miso
16 pitted prunes
2 tablespoons Pedro Ximenez vinegar, or other sweet vinegar
1 tablespoon chopped cilantro leaves

Steps:

  • Place chiles in a small bowl, cover with boiling water and set aside. Heat oil in a large sauté pan. Dry chicken and dust pieces with salt and pepper. Sear on medium-high heat until browned on both sides, removing pieces to a platter when done. Reduce heat to low.
  • Add onion and garlic and sauté until soft. Dust with cumin, stir, and then add stock and sherry. Combine, scraping residue from the bottom of the pan, and stir in miso. Remove from heat.
  • Drain chiles, cut in half and remove seeds and cores. Chop chiles and add to sauce along with prunes. Stir.
  • Return chicken and any chicken juices to pan, basting with sauce. Cover and simmer on low 20 minutes, basting once more, until chicken is thoroughly cooked. Remove meat to a serving dish. Add vinegar to pan, bring to a simmer and stir. Add salt if needed, and a little water, if sauce has reduced too much. Spoon sauce and prunes over chicken. Scatter cilantro on top and serve.

3/4 cup extra-virgin olive oil, divided
16 small cipolline, shallots, or boiling onions, peeled, trimmed
5 long slender carrots, peeled, cut into 2-inch lengths
4 celery stalks, cut into 2-inch lengths
3 whole heads of garlic, papery outside removed, cloves separated, unpeeled
1 4-pound chicken (preferably organic), rinsed, patted dry, legs tied together to hold shape
6 fresh thyme sprigs
6 fresh Italian parsley sprigs
3 fresh rosemary sprigs
1 tablespoon grated lemon peel
16 pitted prunes
1/2 small green cabbage, cut into 4 wedges with some core on each
1 cup low-salt chicken broth
1/2 cup Alsatian Riesling

Steps:

  • Preheat oven to 450°F. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add cipolline, carrots, celery, and garlic. Sprinkle with salt and pepper. Sauté until vegetables are lightly browned, about 8 minutes. Transfer to heavy large pot; push vegetables to sides.
  • Heat 2 tablespoons oil in same skillet over medium-high heat. Sprinkle chicken generously with salt and pepper. Add to skillet and brown on all sides, turning often with wooden spoons, about 10 minutes. Place chicken, breast side up, in center of vegetable mixture in pot. Arrange fresh herbs, lemon peel, and prunes around chicken. Tuck cabbage wedges around chicken.
  • Pour off fat from skillet. Add broth and wine to skillet and bring to boil, scraping up browned bits; pour over and around chicken. Drizzle remaining 1/2 cup oil over. Cover pot with large piece of heavy-duty aluminum foil, sealing tightly around rim. Place lid on pot to cover tightly. Roast chicken and vegetables until cooked through, about 55 minutes. Let stand covered 10 minutes.
  • Transfer chicken to center of large shallow bowl. Using tongs, place vegetables and aromatics around chicken. Season pan juices to taste with salt and pepper; pour over chicken.

Chicken with cinnamon and lemon, spicy and delicious. Note: I've put za'atar spice mix, because it wouldn't accept Morroccan and this was the closest, if you can buy it we have Morroccan spice blend here in Aus.

1 tablespoon za'atar spice mix
800 g chicken thigh fillets, trimmed and halved
1 tablespoon oil
60 g butter
1 large onion, cut into wedges
1 cinnamon stick
2 garlic cloves, crushed
2 tablespoons lemon juice
1 cup chicken stock
1/2 cup pitted prune, halved
1 1/2 cups couscous

Steps:

  • Sprinkle half the spice blend over the chicken. Heat the oil and 20g of the butter in a large saucepan or deep-sided frying pan over medium heat.
  • Cook the chicken in two batches for 5 minutes,or until evenly browned. Remove from the pan, then add the onion and cinnamon stick and cook for 2-3 minutres before adding the garlic.
  • Return the chicken to the pan and add the lemon juice and the remaining spice blend. Season, then cook, covered for 5 minutes.
  • Add the stock and prunes to the pan and bring to the boil. Reduce the heat to medium-low and cook, uncovered, for 15 minutes, or until the chicken is cooked and the liquid has reduced to a sauce. Before serving, stir 20g of the butter into the sauce.
  • About 10 minutes before the chicken is ready, place the couscous in a heatproof bowl, add 1 1/2 cups of the boiling water and stand for 3-5 minutes. Stir in the remaining butter and fluff with a fork until the butter has melted and the grains separate. Serve with the chicken.

4 chicken thighs
4 chicken drumsticks
Kosher salt and freshly ground black pepper
1/2 cup flour
3 tablespoons olive oil
1/4 cup white wine vinegar
1 cup dry white wine
12 large, plump dried prunes (preferably pruneaux d'Agen)

Steps:

  • Generously season chicken pieces with salt and pepper. Spread flour in a wide, shallow bowl, and dredge chicken until it is well coated. Shake off any excess flour.
  • Place a deep sauté pan (just large enough to hold the chicken pieces in a single layer) over medium-high heat for a minute or two. Add olive oil, and heat until oil shimmers. Arrange chicken pieces in pan, skin side down, and allow to sit without being moved until undersides are browned, about 3 minutes. Turn chicken, and allow to sit again until browned, 3 to 4 minutes.
  • Add vinegar, wine and prunes. Cover, and reduce heat to low. Simmer, basting occasionally, until chicken meat is tender and almost falling off the bone, about 30 minutes.
  • Using a slotted spoon, transfer chicken pieces and prunes to a platter, and keep warm. Raise heat under the pan to high, and reduce pan juices for a minute or two. Pour juices over chicken pieces, and serve.

1 3/4 cups chopped onions
2 large garlic cloves, chopped

2 cups canned low-salt chicken broth
1 cup pitted prunes
3 tablespoons fresh lemon juice
2 tablespoons honey
Chopped fresh cilantro

Steps:

  • Sprinkle chicken with salt and pepper. Heat oil in heavy large skillet over medium-high heat. Add chicken; sauté until brown and just cooked through, about 4 minutes per side. Using tongs, transfer chicken to plate. Add onions and garlic to same skillet. Sauté until onions begin to soften, about 3 minutes. Mix in flour, ginger, cinnamon and cumin; stir 1 minute. Gradually whisk in broth. Add prunes, lemon juice and honey. Boil until sauce thickens enough to coat spoon, whisking occasionally, about 8 minutes. Return chicken to skillet. Simmer until heated through, about 2 minutes. Season with salt and pepper.
  • Transfer chicken and sauce to platter. Sprinkle with cilantro and serve.

I recieved this recipe from a 60-year-old Russian woman while on student exchange in Moscow. Unlike most Russian dishes, this dish is relatively easy to prepare, but it is very elegant. I reccomend it with borscht and meat dumplings.

4 chicken breasts
salt
black pepper
4 tablespoons butter
2 tablespoons vegetable oil (Olive oil works good, too)
1 carrot, scraped and cut into 1/2 inch wide rounds
1 stalk celery, coarsely chopped
1 cup onion, finely chopped
1 sprig parsley
1 bay leaf
1 cup chicken broth
water
1/2 lb pitted prune
1 tablespoon lemon juice
1 tablespoon sugar
1 tablespoon flour

Steps:

  • Pat chicken thouroughly dry with paper towel and sprinkle sides with salt and pepper In a 10 to 12-inch skillet melt two tablespoons of butter and two tablespoons of oil over high heat.
  • Add chicken skin-side down and reduce heat to moderate.
  • Fry until sides are golden brown.
  • (Don't worry if the inside is pink, we will be cooking the chicken more later) Transfer the chicken to a plate.
  • Add the celery, carrot, and onion to the fat remaining in pan, stirring occasionally, and cook until the vegetables are soft but NOT brown.
  • Return the chicken to the pan and lay the parsley and bay leaf on top.
  • Pour in 1/2 cup of chicken broth.
  • Bring to a boil over high heat.
  • Lower the heat and simmer for thirty minutes, basting it from time to time with the juices in the pan Meanwhile, in a saucepan, combine 1 1/2 cups of water, the 1 1/2 cups of prunes, the lemon juice, and the sugar.
  • Place on high heat.
  • Bring prunes to a boil and simmer for 30 minutes or until prunes are tender.
  • Preheat the oven to 250 degrees F.
  • Remove the chicken from the skillet and arrange attractively on an ovenproof platter.
  • Scatter the cooked prunes over the top.
  • Cover the platter loosely with foil and put it into the oven.
  • Press hard on the vegetables with a spoonback releasing the juices.
  • Discard vegetables.
  • Set juices aside.
  • Melt two tablespoons of butter in the skillet and add the flour.
  • Cook on high heat until flour is golden brown.
  • Pour in the 1/2 cup of reserved prune juice and the 1/2 cup of reserved pan juices (if there is less then 1/2 cup, make up for it by augmenting it with the chicken broth) Boil until sauce is smooth and thickened.
  • Serve at once.
