1 cup heavy whipping cream
3 Tbsp orange jelly or marmalade
3 eggs
Panko bread crumbs
1 lb chicken breast
1/3 cup vegetable oil

Steps:

  • In one bowl, beat whipping cream and marmalade to a light thickening consistency. Put to side.
  • Beat eggs in a small bowl to dip chicken in. Put Panko bread crumbs in another bowl. Dip chicken breast in eggs, then coat in Panko bread crumbs.
  • Fry breaded chicken in skillet with oil. Pour orange cream sauce over cooked chicken.

1/3 cup thawed orange juice concentrate
5 tablespoons vegetable oil, divided
2 tablespoons soy sauce
2 garlic cloves, minced
4 boneless skinless chicken breast halves
1/2 cup coarsely chopped walnuts
1 tablespoon butter
4 green onions, thinly sliced
1/2 cup orange marmalade
1/2 cup orange juice
1/4 cup lemon juice
2 tablespoons honey
1 to 2 tablespoons grated orange zest
2 to 3 teaspoons grated lemon zest
1/2 teaspoon salt
1/8 teaspoon pepper
Hot cooked rice

Steps:

  • In a small bowl, combine orange juice concentrate, 4 tablespoons oil, soy sauce and garlic. Pour half of the marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 2-3 hours. Cover and refrigerate remaining marinade. , Discard marinade from chicken. In a large skillet, cook chicken in remaining oil until juices run clear. Meanwhile, in a small saucepan, saute walnuts in butter until lightly browned; remove and set aside., Set aside 1/4 cup green onions for garnish. Add remaining onions to saucepan; saute until tender. Add the marmalade, juices, honey, orange and lemon zest, salt, pepper and reserved marinade. Bring to a boil., Reduce heat; simmer, uncovered, for 5-10 minutes or until sauce reaches desired consistency. Serve chicken over rice; top with sauce, toasted walnuts and reserved onions.

1 tablespoon olive oil
1/2 cup onion ( chopped )
1 cup orange juice (frozen concentrate; about 8 ounces)
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/4 teaspoon salt (plus more to taste)
1 dash black pepper (plus more to taste)
1 tablespoon soy sauce
3 tablespoons light brown sugar (packed)
6 to 8 chicken thighs (boneless)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Sauté the onion until softened.
  • Add the orange juice, fresh thyme, fresh rosemary, salt, pepper, soy sauce, and brown sugar. Simmer , stirring frequently, for 5 minutes.
  • Divide the sauce in two. Reserve.
  • Arrange the chicken thighs in a greased baking dish lined with aluminum foil or parchment paper, skin-side up if you're using thighs with skin.
  • Brush the chicken lightly with olive oil and sprinkle with salt and pepper to taste.
  • Bake for 20 minutes.
  • Liberally brush half of the sauce over the chicken thighs and bake for an additional 15 to 20 minutes, or until cooked through.
  • Bring the remaining sauce to a boil and reduce to a syrupy glaze to serve with the chicken.
  • Serve hot and enjoy.

I hope you enjoy this dish, which has been adapted from a friend's recipe. I serve this with rice and green vegetables. This can also be made with boneless chicken breasts, but for some reason it seems to be more flavorful using the bone-in chicken.

4 chicken breasts, bone in
2 tablespoons oil
1 tablespoon butter
1 cup onion, chopped
6 ounces can frozen orange juice concentrate
1 cup chicken broth
1 tablespoon tarragon
1/8 teaspoon dry mustard
2 dashes Tabasco sauce
1 -2 tablespoon cornstarch or 1 -2 tablespoon flour
3/4 cup sour cream
salt and pepper

Steps:

  • Preheat oven to 325 dg.
  • Brown chicken in butter and oil then place in baking dish.
  • To pan drippings, saute onion until limp and stir in orange concentrate, chicken broth, tarragon, dry mustand and tabasco sauce.
  • Heat and stir until sauce comes to a boil, then pour over chicken in baking pan.
  • Cover and bake at 325 dg. for 1 to 1-1/2 hours until done, turning twice in sauce. If using boneless chicken breasts, cooking time may need to be decreased.
  • When chicken is done, place pieces on oven- proof serving platter and keep warm Add cornstarch or flour to chicken sauce and stir constantly to thicken.
  • When mixture comes to a boil and is thickened, remove from heat.
  • Cool slightly, then mix in sour cream. Taste, then add salt and pepper to taste. If desired, you may add more tarragon, dry mustard and/or tabasco.
  • Pour sauce over chicken and serve.

1 dash salt
1 dash ground black pepper
3 tablespoons olive oil, divided
⅛ cup Dijon mustard
1 orange, zested
½ teaspoon ground cumin
½ teaspoon ground fennel seeds
⅛ cup chopped fresh cilantro

Steps:

  • Prick chicken in several places using a fork; arrange in a large dish in 1 layer. Season with salt and pepper and brush with 1 tablespoon olive oil. Cover and refrigerate for 15 to 30 minutes.
  • Meanwhile, whisk remaining 2 tablespoons olive oil, mustard, orange zest, cumin, and fennel together in a small glass bowl.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.

1/2 cup granulated sugar
1 cup orange juice
1 teaspoon orange zest, finely chopped
1 cup heavy whipping cream
1 teaspoon orange extract

Steps:

  • In a deep sauce pan, combine sugar, orange juice and orange zest.
  • Bring to a boil over high heat; cook 5 minutes, stirring almost constantly, being careful not to burn the mixture.
  • Momentarily remove the pan from the heat; add the whipping cream, stirring to mix well.
  • Return the pan to the stove; bring to a boil, cooking for 2 minutes and stirring constantly.
  • Remove from heat; add the extract. Stir to combine well.
  • Cool and serve warm or cold over pound cake, ice cream, or whatever!
