BROILED CHICKEN WITH THYME, FENNEL AND PEPPERS

Broiled Chicken with Thyme, Fennel and Peppers image

Categories     Chicken     Broil     Fennel     Bell Pepper     Spring     Thyme     Bon Appétit

Yield Makes 6 servings

Number Of Ingredients 9

3 small fennel bulbs (about 2 3/4 pounds), trimmed, quartered lengthwise
3 red bell peppers, cut into 1-inch-wide strips
2 tablespoons olive oil (preferably extra-virgin)
3 teaspoons chopped fresh thyme
6 boneless chicken breasts
2 tablespoons (1/4 stick) butter
2 teaspoons finely grated lemon peel
1 teaspoon fennel seeds, crushed
Fresh thyme sprigs (optional)

Steps:

  • Cook fennel bulbs in large saucepan of boiling salted water until crisp-tender, about 8 minutes. Drain; cool.
  • Toss fennel, bell peppers, olive oil and 1 teaspoon chopped thyme in large bowl to coat. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.)
  • Preheat broiler. Using mallet or rolling pin, pound each chicken breast between sheets of plastic to 1/2-inch thickness. Sprinkle chicken with salt and pepper. Place chicken, skin side down, on broiler pan.
  • Watching closely, broil chicken 4 to inches from heat source until golden brown and almost cooked through, about 5 minutes. Remove broiler pan from oven. Pour off any pan drippings. Using tongs, turn chicken over and broil until skin is golden brown and chicken is cooked through, about 4 minutes longer. Transfer chicken to platter. Tent with foil to keep warm. Pour off any additional pan drippings.
  • Working in 2 batches, arrange peppers and fennel in single layer on broiler pan. Broil until vegetables begin to brown and peppers and tender, about 2 minutes per side. Transfer vegetables to platter with chicken.
  • Meanwhile, melt butter in heavy small saucepan over medium-low heat. Mix in remaining 2 teaspoons chopped thyme, lemon peel and fennel seeds. Season to taste with salt and pepper.
  • Drizzle butter mixture over chicken. Garnish chicken with thyme sprigs, if desired, and serve.

ROSEMARY-PAPRIKA CHICKEN AND FRIES

Rosemary-Paprika Chicken and Fries image

This sheet-pan chicken dinner was inspired by patatas bravas, the crispy potatoes typically served with a spicy sauce and aioli in tapas bars all across Spain. Here, there are potatoes, of course, but they're cut into matchsticks and browned on a sheet pan; and there's a garlic mayonnaise for dipping. (Make real-deal aioli if you have a few minutes to spare.) But instead of the traditional smoky, brick-red sauce, similar seasonings are smeared onto chicken before roasting: a mix of lemon, garlic, rosemary, smoked paprika and red-pepper flakes. Using bone-in parts keeps the white meat juicy, while the skin gets crisp and some of the schmaltz glosses the fries.

Provided by Ali Slagle

Categories     dinner, weeknight, poultry, main course

Time 45m

Yield 2 to 3 servings

Number Of Ingredients 11

1/2 cup mayonnaise
1 tablespoon lemon zest (from 1 large lemon)
3 garlic cloves, grated
Kosher salt (Diamond Crystal) and black pepper
1 tablespoon smoked paprika
1 teaspoon chopped rosemary leaves (or ½ teaspoon dried rosemary)
1/2 teaspoon red-pepper flakes
2 large bone-in, skin-on chicken breasts (1½ to 2 pounds total), patted dry
1 large russet potato (about 1 pound), scrubbed
1 tablespoon olive oil
1 tablespoon lemon juice

Steps:

  • Heat the oven to 425 degrees, and place a sheet pan on the oven's lowest rack to heat. In a liquid measuring cup or small bowl, stir together the mayonnaise, lemon zest and garlic. Season with salt and pepper.
  • Transfer half of the mayonnaise mixture (about ¼ cup) to a medium bowl. Stir in the smoked paprika, rosemary, red-pepper flakes and ½ teaspoon black pepper. Season the chicken all over with 1½ teaspoons salt. Add the chicken to the bowl of paprika-mayonnaise, and rub it all over the chicken. Set aside.
  • Halve the potato crosswise (no need to peel), then cut it into ¼-inch-thick fries. Right on the cutting board, drizzle with the olive oil, and season with salt and pepper. Toss to coat.
  • Place the chicken breasts skin side down on the heated sheet pan, then scatter the potatoes around the chicken in a single layer. Roast on the bottom rack for 15 minutes, then flip the chicken so the skin side is up. (No need to turn the potatoes.) Roast for another 10 to 15 minutes, until the fries are browned underneath and the chicken registers 155 degrees when an instant-read thermometer is inserted in the thickest part. (The temperature will rise as the meat rests.) Let the chicken rest for at least 5 minutes, then cut the chicken meat from the bones and slice. Stir the lemon juice into the remaining mayonnaise mixture. Eat the chicken with the fries and a puddle of the lemon-garlic mayo for dipping.

CHICKEN SALAD WITH FENNEL AND CHARRED DATES

Chicken Salad With Fennel and Charred Dates image

The unlikely inspiration for this savory-sweet salad comes from Lilia, an Italian restaurant in Brooklyn, where vanilla gelato is adorned with sea salt, honey, olive oil and fennel pollen for a dessert that is citrusy, creamy and fresh. The savory spin goes like this: Thinly slice two fennel bulbs, then mix with shallots and shredded cooked chicken. Dates cook in olive oil so their outsides blister and their insides become caramel-like and soft. Fennel seeds and red-pepper flakes are added to the skillet, which creates a spiced oil for dressing the salad.

Provided by Ali Slagle

Categories     lunch, quick, weeknight, poultry, salads and dressings, main course

Time 10m

Yield 4 servings

Number Of Ingredients 9

2 small fennel bulbs (about 2 pounds total), tough outer layers removed, fronds reserved, stalks thinly sliced, bulbs halved and thinly sliced through the root
1 shallot, thinly sliced
1/4 cup freshly squeezed lemon juice (from 2 lemons), plus more to taste
Kosher salt and black pepper
4 cups shredded cooked chicken (about 1 pound)
1/2 cup extra-virgin olive oil
8 Medjool dates, pitted and quartered
2 teaspoons fennel or coriander seeds
1/2 teaspoon red-pepper flakes, plus more to taste

Steps:

  • In a large bowl, toss together the sliced fennel, shallot and lemon juice. Season with salt and pepper. Place the chicken on top, but don't stir.
  • In a medium (10-inch) skillet, heat the oil over medium. Add the dates and cook, stirring halfway through, until blistered in spots, 1 to 2 minutes. Season with salt and pepper, turn off the heat, then add the fennel seeds and red-pepper flakes. Swirl until sizzling and fragrant, then immediately pour the oil and dates over the chicken. Toss to combine. Taste and adjust with salt, pepper, red-pepper flakes and lemon juice. Top with some torn fennel fronds.

BROILED CHICKEN THIGHS WITH FENNEL, ONIONS, AND ROASTED RED PEPPERS

Broiled Chicken Thighs with Fennel, Onions, and Roasted Red Peppers image

Provided by Rachael Ray : Food Network

Time 50m

Yield 6 servings

Number Of Ingredients 10

2 red bell peppers
1 tablespoon extra-virgin olive oil, plus more for liberal drizzling
2 medium sweet onions, sliced into wedges, root end attached
1 bulb fennel, thinly sliced, fennel fronds reserved for garnish
3 to 4 large cloves garlic, thinly sliced
Kosher salt and freshly ground black pepper
1 tablespoon white balsamic vinegar
12 small bone-in chicken thighs
Fennel pollen or ground fennel, for sprinkling
1 lemon, zested and juiced

Steps:

  • Preheat the broiler.
  • Char the peppers over an open gas burner for 10 to 12 minutes, turning occasionally. Alternatively, char the peppers under the broiler for 7 to 8 minutes, turning occasionally, with the oven door slightly ajar to allow steam to escape. Place the charred peppers in bowl and cover with plastic wrap. When cool, peel and seed the peppers and slice lengthwise.
  • Heat 1 tablespoon extra-virgin olive oil in a medium skillet over medium-high heat. Add the onions, fennel and garlic and season with salt and pepper. Cook, stirring frequently, for 15 minutes, or until the vegetables are tender and sweet. Deglaze with vinegar and combine with the peppers.
  • Place a cooling rack over a baking sheet and place the chicken thighs on it. Drizzle the chicken thighs lightly with extra-virgin olive oil and season liberally with salt, pepper, and fennel pollen. Arrange rack in upper third of oven; chicken thighs should be 8-inches from the broiler. Broil the chicken thighs for 12 to 15 minutes, turning occasionally. Dress the cooked chicken with lemon zest and juice.
  • Arrange the chicken on a platter and top with the onions, fennel, and peppers. Scatter fennel fronds over the top.

ROASTED RED PEPPERS STUFFED WITH FENNEL

Roasted Red Peppers Stuffed with Fennel image

This delightful combination of flavours makes a very attractive first course. I love to serve the peppers on a faded antique plate that I have, which shows off their outstanding colour. The dish needs lots of really good bread, as there's always a profusion of fragrant juices. If you want to make the peppers ahead of time, cover with foil after cooling, but don't refrigerate them as this spoils the fragrant flavour.

Categories     Vegetarian recipes     Easy Entertaining     Christmas: Starters     Christmas: Vegetables

Yield Serves 4-6 as a first course

Number Of Ingredients 10

4 large red peppers
sea salt
2 small bulbs fennel
1 x 14 oz (400 g) tin Italian plum tomatoes
8 dessertspoons extra virgin olive oil
1 rounded teaspoon mixed pepper berries
¾ level teaspoon whole coriander seeds
½ level teaspoon fennel seeds
juice ½ lemon
finely chopped spring onion for garnish (optional)

Steps:

  • Slice each pepper in half lengthways, cutting right through the green stalk end and leaving it intact; though it won't be eaten, it adds much to the look of the thing. Remove all the seeds. Place the pepper halves on the baking sheet, then drain the tomatoes (you don't need the juice), and divide them into eight equal portions, placing each portion inside a pepper half. You can watch how to prepare peppers by clicking on the Cookery School Video on this page. Now pare off any brownish bits of fennel with your sharpest knife and cut the bulbs first into quarters and then again into eighths, carefully keeping the layers attached to the root ends. Now put them in a saucepan with a little salt, pour boiling water on them and blanch them for 5 minutes. Then drain them in a colander and, as soon as they're cool enough to handle, arrange two slices in each pepper half. Sprinkle 1 dessertspoon of olive oil over each one, using a brush to brush the oil round the edges and sides of the peppers. Next, lightly crush the pepper berries, coriander and fennel seeds with a pestle and mortar or rolling pin and bowl, sprinkle these evenly all over the fennel and peppers, and finish off with a grinding of sea salt. Then bake the peppers for about 1 hour on a high shelf in the oven until they are soft and the skin wrinkled and nicely tinged with brown. After removing them from the oven, sprinkle the lemon juice all over, cool and serve garnished with a little finely chopped spring onion or as they are.
