Steps:
- Put the chicken in a large casserole with the onion, carrot, bay leaves, peppercorns, and salt. Add enough water to cover the chicken, then bring to a boil and simmer for 1 hour, or until the meat is white. Carefully lift the chicken from the broth and let cool. Strain the broth and save 2 1/2 cups for the sauce.
- Make the sauce. Melt the butter in a large pan. Add the sliced artichokes and fennel and cook for 2 minutes. Sprinkle the flour over the vegetables and stir until the flour and butter have combined. Pour in half the reserved chicken broth and stir until smooth. Add the remaining chicken broth and the horseradish and bring to a boil. Add the cream and salt and pepper and return the sauce to a boil, then decrease the heat to a simmer.
- Remove the skin and bones from the chicken. Break the meat into medium-size pieces. Stir the chicken and chervil into the sauce and let it simmer for a couple of minutes, or until the chicken is heated through. Season with salt and pepper and serve with boiled potatoes.
CHICKEN WITH CHERVIL SAUCE

- Melt butter in a medium saucepan over low heat. Add minced shallot, and cook, stirring, for 3 minutes, until limp and translucent.
- Add the chicken to the pan in one layer. Add the stock. Cover and bring to a boil. Turn the chicken. Lower the heat, and simmer, covered, for 8 minutes. Add the minced chervil, turn the chicken again and simmer, covered, for 4 minutes.
- Remove chicken, and keep it warm. Season broth with salt. Mix cornstarch with 1 tablespoon water. Bring broth to a boil. Pour cornstarch mixture into sauce, whisking constantly. Return sauce to a boil, still whisking. Lower heat slightly, and simmer for 2 minutes, whisking.
- Serve the chicken with the sauce and sprigs of chervil.

- Set aside 3/4 cup of cherries. In a blender, combine orange juice and remaining cherries; cover and process until smooth. Add the soy sauce, brown sugar, honey, lemon juice, garlic and ginger; set aside.
- In a large skillet over medium heat, brown chicken on all sides in butter.
- Place chicken skin side down in an ungreased 13 by 9 inch baking dish. Top with cherry sauce.
- Bake, uncovered, at 350 for 20 minutes; turn chicken.
- Top with reserved cherries. Bake, uncovered, 25-30 minutes longer or until chicken juices run clear.

CHICKEN BREASTS TARRAGON
Here is a dish fit for your most elegant dinner party. The chicken breasts are boned, sauteed, then poached until tender in white wine flavored with tarragon and chervil. The luscious sauce is made from the cooking liquid thickened with cream and egg yolks.

- Bone chicken breasts and remove skin; cut breast in half. In 6-quart Dutch oven, heat oil and 2 Tablespoons butter. Add chicken breasts (half at a time, enough to cover bottom of pan); sauté, turning on all sides, until brown. Remove chicken as it browns. Brown rest of chicken.
- To drippings in Dutch oven, add shallot and carrot; sauté, stirring, 5 minutes, or until golden. Return chicken to Dutch oven; heat. When hot, slightly heat Cognac in ladle, and ignite. Add white wine, the chopped tarragon (or 2 teaspoons dried tarragon if you don't have fresh) and chervil (1/2 teaspoon dried chervil), salt and pepper.
- Bring to boiling; reduce heat, and simmer gently, covered, 30 minutes. Remove chicken to heated serving platter; keep warm. Strain the drippings that is in the Dutch oven; return drippings to Dutch oven. In small bowl, combine cream, egg yolk and flour; mix well with wire whisk.
- Stir into drippings in Dutch oven; bring just to boiling, stirring. Add more wine if sauce seems too thick. Meanwhile, sauté mushrooms in hot butter 5 minutes, until tender. Spoon sauce over chicken. Garnish with tarragon and mushrooms. Serves 8.

- Preheat oven to 350°. Sprinkle chicken with salt and pepper. In a large cast-iron or other ovenproof skillet, heat 2 tablespoons butter over medium-high heat. Brown chicken on both sides. Bake until a thermometer reads 165°, 12-15 minutes., Meanwhile, in a small saucepan, combine wine and sugar. Bring to a boil; cook, uncovered, until liquid is reduced by half, 4-5 minutes. Reduce heat to low; whisk in remaining butter, 1 tablespoon at a time, until blended. Stir in cherries; serve with chicken.

- Place chicken in resealable food safe plastic bag, add dressing, seal bag and turn to coat. Marinate chicken in refrigerator about 30 minutes.
- Meanwhile, to make pasta, in a 6-quart Dutch oven bring about 1/2-inch water to boiling. Add spinach; cover and cook about 3 minutes or until wilted. Drain spinach; squeeze dry. Place spinach in food processor bowl, purée. Add flour, eggs, and salt. Cover and process until mixture forms fine crumbs. With processor running, slowly pour 1 Tbsp. of the oil and enough water through feed to form dough into a ball, tube. Transfer dough to lightly floured surface. Cover, let dough rest for 3 minutes. Divide dough into 4 portions.

- While pasta stands, in the 6-quart pot bring 3 quarts salted water and 1 tablespoon of the olive oil to boiling. Remove chicken from marinade; reserve marinade. Sprinkle chicken with crushed green peppercorns. In an extra large skillet cook chicken in the remaining 2 tablespoons hot oil over medium heat for 12 to 15 minutes or until chicken is no longer pink (170 degrees F), turning once. Remove chicken; cover and keep warm. Add mushrooms to skillet; cook 4 to 5 minutes or until tender. Add chicken broth and reserved marinade to the skillet. Bring to boiling. Stir in half the chervil. Remove from heat; cover and keep warm.
