I got this recipe from my mom who got it from Cooking Light Oct. 2007. Very good and pretty easy to make.

4 (6 ounce) boneless skinless chicken breasts
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons butter
1/2 cup all-purpose flour
1/2 cup dry white wine
1/2 cup reduced-sodium fat-free chicken broth
2 minced garlic cloves
1 lb asparagus spear, trimmed
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice

Steps:

  • Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken breasts evenly with salt and freshly ground black pepper.
  • Melt butter in a large nonstick skillet over medium-high heat. Place flour in a shallow dish. Dredge chichen in flour. Add chicken to pan; cook 3 minutes on each side or until done. Remove chichen from pan; keep warm. Add wine, broth, and garlic to pan, scraping pan to loosen browned bits; cook 2 minutes. Add asparagus; cover and cook 3 minutes or until asparagus is crisp tender. Remove from heat; stir in parsley and juice. Serve asparagus and sauce with chicken.

Chicken breasts are stuffed with fresh asparagus, wrapped in ham and swiss cheese, and topped off with bread stuffing and a creamy-wine sauce. While it may taste like you cooked it all day, this delicious chicken with its' "french flair" takes only about 1 hour to prepare.

6 chicken breasts, skinless and boneless
18 fresh asparagus spears, trimmed
1 (6 ounce) package seasoned stuffing mix (Stove Top )
1/4 teaspoon coarse salt
1/8 tespoon white pepper
1/4 cup butter, melted
1/4 cup Dijon mustard
2 garlic cloves, finely chopped
1/4 cup dry white wine
6 slices deli smoked ham, sliced thin
6 slices of deli aged-swiss cheese, sliced thin
1 cup seasoned dry bread crumb
2 tablespoons butter
2 shallots, chopped finely
1 cup heavy whipping cream
3/4 cup dry white wine
2 tablespoons all-purpose flour
1 teaspoon coarse salt
1/4 teaspoon white pepper
1/2 teaspoon onion powder
1 teaspoon dried parsley flakes (rub between fingers to waken flavor)

Steps:

  • Preheat oven to 350 degrees F.
  • Wash the chicken and pat dry with paper towels. Place between 2 pieces of waxed paper; pound with the flat side of a wooden mallet to about 1/4-inch thickness. (Cook's Tip: Meat should be thin, but be careful not to tear.).
  • Snap off tough bottoms of asparagus. Place in boiling water and cover for 1 minute. Shock in cold water, drain and pat dry. Set aside.
  • Prepare stuffing mix as directed on package; set aside.
  • In a small mixing bowl, combine the salt, pepper, butter, mustard, garlic and wine. Lay out the chicken breasts, brush the inside of each chicken breast with the melted butter mixture.
  • Place 3 asparagus spears on the buttered side of the chicken breast (arrange so that the asparagus tips peek out when the chicken breast is rolled up), and 1 slice each of ham and swiss cheese. Starting from the narrow end, roll each chicken breast up tightly to enclose the filling. (If necessary, secure with toothpicks.)
  • Brush outside of each chicken breast with the remaining butter mixture and then roll in bread crumbs. Place the rolls in a 13x9-inch greased baking dish, seam side down, and top with the prepared stuffing.
  • Bake for 40 minutes, or until the chicken is browned and juices run clear.
  • Meanwhile, prepare the sauce that will accompany this delicious dish.
  • White Wine Sauce:.
  • Over low heat, melt the butter in a medium-size saucepan, add the shallots; cook 7 to 8 minutes, stirring occasionally.
  • Add the cream, wine, flour, salt, pepper, onion powder, and parsley. Stir all together bring to a boil. Reduce heat to low and simmer until the sauce is thickened. (Makes about 1 1/2 cups).

1 tablespoon butter
1/2 cup minced shallot
1 garlic clove, minced
1 bunch asparagus, trimmed and cut in half crosswise
1/2 cup crumbled goat cheese
1 tablespoon chopped fresh flat-leaf parsley
2 teaspoons grated lemon zest
1/2 teaspoon sea salt
freshly cracked black pepper
4 chicken breasts, boneless and skin-on
1 tablespoon olive oil
1 teaspoon sea salt
1 teaspoon freshly cracked black pepper
1 tablespoon butter
1/2 cup minced shallot
1 cup white wine
1 cup chicken broth
2 egg yolks
1 tablespoon roughly chopped flat leaf parsley
1 teaspoon finely chopped tarragon

Steps:

  • In a skillet, melt butter over medium heat. Add shallots and sauté until tender and translucent but not browned, about 6 minutes. Stir in garlic and asparagus and cook 2 minutes. Transfer to bowl and let cool. Mix in goat cheese, parsley, lemon zest, salt and pepper.
  • With knife held horizontally, slice through chicken breasts, starting at the thinner side, about two-thirds of the way through, so chicken breasts can open like a book. Spread one-quarter of the filling over the inside of each breast leaving a 1/2-inch border uncovered. Close each breast to enclose filling, securing with a toothpick if desired.
  • Heat oven to 400°F
  • In a large ovenproof nonstick skillet, heat oil over medium-high heat. Sprinkle the chicken breasts with half of the salt and pepper. Arrange chicken, skin-side down, and cook until golden brown, about 3 minutes. Gently turn chicken over and cook 3 minutes more.
  • Transfer skillet to oven and bake until chicken is cooked through, about 15 to 20 minutes. Transfer chicken to a platter to keep warm.
  • In same skillet, melt butter over mediumhigh heat. Add shallots and cook until tender but not browned, about 6 minutes. Stir in wine and chicken broth. Bring to a boil. Reduce heat to maintain a simmer for 3 minutes. Whisk yolks and remaining salt and pepper in a small bowl. Pour about 1/4 cup of the sauce into the yolks and whisk to combine. Whisk yolk mixture back into skillet and continue whisking, without letting it boil, until sauce is thick enough to coat the back of a spoon, about 3 minutes. Stir in parsley and tarragon; serve over chicken.

Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
2 leeks, trimmed, thinly sliced, and well rinsed (4 cups)
1/3 cup dry white wine, such as Sauvignon Blanc
1 1/2 cups low-sodium chicken broth
1 pound very small red potatoes (each 1 inch diameter), halved
1 pound asparagus, trimmed and cut into 2-inch pieces
1/4 cup heavy cream
Dill sprigs, for serving

Steps:

  • Preheat oven to 450 degrees. Season chicken with salt and pepper. In a large, straight-sided ovenproof skillet, melt butter over medium-high heat. Add chicken to skillet, skin-side down; cook until golden brown, about 5 minutes a side. Transfer to a plate.
  • Reduce heat to medium. Add leeks to skillet; cook, stirring frequently, until softened, about 4 minutes. Stir in wine; cook until almost evaporated, 1 minute. Add broth and potatoes; season with salt and pepper. Bring to a boil, then add chicken, skin-side up; transfer to oven. Roast 15 minutes, then remove and add asparagus; season with salt. 1 lb asparagus, cut into 2-inch lengths
2 tablespoons olive oil
2 (6 ounce) boneless skinless chicken breasts, cut into strips

1 red pepper, cut into strips
1/2 cup dry white wine
1 cup low sodium chicken broth
2 tablespoons low-fat sour cream
12 ounces ziti pasta or 12 ounces penne
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil.
  • Place the asparagus in a colander and lower it into the boiling water. Cook the asparagus until it is just tender, about 2-4 minutes. Plunge the colander of asparagus into a bowl of ice water. When the asparagus is cool, remove the colander from the ice water and drain.
  • Top off the pot of water, if necessary, and bring it back to a boil.
  • Heat the olive oil in a large sauté pan over moderately high heat. Season the chicken with salt and pepper and add it to the pan. Sauté the chicken until golden on all sides.
  • Add the red peppers and cook for 2 more minutes. Remove the chicken and red peppers from the pan and set aside.
  • Turn the heat down to medium, add the wine and reduce until it is almost completely evaporated. Add the chicken stock and reduce by half. Add the low-fat sour cream and stir until the sauce is creamy. Add the chicken, red peppers and asparagus to the sauce and heat thoroughly. Taste and season with salt and pepper.
  • Meanwhile, add the pasta to the boiling water and cook for about 12 minutes until it is al dente. Drain and toss with the chicken and cream sauce. Serve immediately in warm pasta bowls and sprinkle with parsley.

  • Mix the flour with the garlic powder, 1/2 tsp salt, and pepper in a flat dish. Lay each piece chicken in the flour mixture to coat all sides. If there is any remaining flour mixture, sprinkle it over the chicken.

  • Stir in the heavy cream and remaining 1/2 tsp salt (or more to taste.) Bring to a boil, stirring regularly. Once the cream is boiling, add the chicken back into the sauce and continue to cook for 3-5 minutes or until the sauce has thickened.
