APPLE-BRAISED CHICKEN



Apple-Braised Chicken image

Juicy chicken meets a tart apple, and they fall for each other in a skillet. It's an autumnal love story. Serve on a bed of couscous or brown rice (microwaved is just fine). Apples will last a week (tops) if you leave them out on a countertop. But in your fridge's crisper drawer? They'll stay fresh and delicious for about a month.

2 tsp Olive oil
1 pound(s) Uncooked boneless skinless chicken breast(s) 4 (4-oz) pieces
1 Tbsp All-purpose flour
2 large Uncooked red onion(s) sliced
1 tsp Kosher salt
0.25 tsp Black pepper freshly ground
1.5 cup(s) Apple cider
1 cup(s) Fat-free reduced sodium chicken broth
1 tsp Dijon mustard
2 large Granny Smith apple(s) sliced
1 Tbsp Fresh sage finely chopped
4 tsp Fresh parsley chopped

Steps:

  • In a large nonstick skillet, heat the oil over medium-high. Sprinkle the chicken on both sides with the flour; cook, turning once, until browned, 3 to 5 minutes per side. Transfer to a plate.
  • Add the onions, salt, and black pepper to the same pan. Reduce heat to medium-low and cook, stirring frequently, until the onions are softened, 8 to 10 minutes.
  • Add the cider, stock, and mustard and stir to combine. Return the chicken to the pan. Increase heat to medium-high and bring to a boil. Cook, uncovered, for 15 minutes.
  • Add the apples and sage to the pan. Turn the chicken over and stir the apples and onions. Cook, uncovered, until the chicken is cooked through, 10 to 12 minutes. Sprinkle with the parsley.
  • Serving size: 1 chicken breast and ¾ cup apple mixture

1/2 teaspoon black pepper, freshly ground
1/4 teaspoon cinnamon
1/4 teaspoon ground ginger
16 ounces boneless skinless chicken breasts
1 tablespoon vegetable oil
1 teaspoon vegetable oil
1 cup onion, thinly sliced
4 small golden delicious apples, pared, cored & thinly sliced
1 cup apple cider or 1 cup apple juice
2 tablespoons apple brandy (Calvados)

Steps:

  • In small cup or bowl, combine salt, pepper, cinnamon and ginger; rub into chicken.
  • In large nonstick skillet, heat oil; add chicken.
  • Cook over medium-high heat, turning once, 4 minutes, until browned on all sides.
  • Remove chicken from skillet; set aside.
  • In same skillet, cook onions, stirring constantly, 5 minutes, until softened.
  • Stir in apples; cook, turning apple slices occasionally, 3 minutes, until apples are golden brown and tender.
  • Add cider to apple mixture; bring liquid just to a boil.
  • Return chicken to skillet; cook, turning chicken as needed, 4 minutes, until chicken is cooked through and juices run clear when pierced with fork.
  • With slotted spoon, transfer chicken to serving platter; keep warm.
  • Stir brandy into apple mixture; cook 3 minutes, until mixture is bubbling and apples and onions are glazed.
  • With slotted spoon, arrange apples and onions around chicken; drizzle evenly with remaining juices in skillet.

3 Golden Delicious apples peeled, cored, and sliced
1/2 cup applejack or Calvados

Steps:

  • Melt butter in large, heavy skillet over medium-high heat. Season chicken with salt and pepper. Coat with flour, shaking off excess. Add chicken to skillet and cook until brown on both sides and cooked through, about 4 minutes per side. Transfer to platter. Transfer all but 1 tablespoon butter from skillet. Add apples and both brandies; simmer over medium heat until apples are tender and liquid is slightly syrupy, about 7 minutes. Using a slotted spoon, transfer apples to platter with chicken. Add cream to skillet; boil until thickened to sauce consistency, about 5 minutes. Season with salt and pepper. Return chicken and apples to skillet and heat through, about 2 minutes. Arrange chicken on plates. Spoon apples and sauce over chicken and serve. This recipe yields 6 servings.
