3 cups diced cooked chicken breasts
2 cups unpeeled cored and diced red apples
1 cup diced celery
3/4 cup chopped walnuts
1/2 cup seedless golden raisin
3 tablespoons minced fresh chives
salt
fresh ground black pepper
1/2 cup sour cream
1 tablespoon cider vinegar
2 tablespoons mayonnaise
1 tablespoon honey
boston lettuce leaf

Steps:

  • In a bowl, combine the chicken, apples, celery, walnuts, raisins, chives, and salt and pepper to taste; toss well.
  • In a small bowl, whisk together the sour cream, vinegar, mayonnaise, and honey until well blended and smooth; pour over the salad, and toss to coat all the ingredients.
  • Cover with plastic wrap and chill for 2 hours.
  • To serve, arrange the lettuce leaves on salad plates and fill with equal amounts of salad.

½ cup chopped walnuts
2 cooked rotisserie chicken breasts, cubed
1 cup seedless red grapes, halved
½ cup dried cranberries
½ Granny Smith apple, cored and cubed
¼ cup chopped red onion
½ cup mayonnaise
½ cup vanilla yogurt
2 teaspoons lemon juice

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spread chopped walnuts onto a baking sheet.
  • Roast walnuts in the preheated oven until they are fragrant and browned, 3 to 5 minutes. Remove and let cool.
  • Lightly toss chicken with grape halves, cranberries, apple, walnuts, and onion in a salad bowl. Whisk mayonnaise, vanilla yogurt, and lemon juice in a separate bowl. Pour dressing over salad and toss again to coat.

2 cups shredded rotisserie chicken
2 celery stalks, diced, plus leaves for topping
1 apple, diced
1 cup halved red grapes
1 cup chopped walnuts
1/3 cup golden raisins
Kosher salt and freshly ground pepper
8 Bibb lettuce leaves
Finely chopped chives, for topping

Steps:
