VODKA SAUCE CHICKEN PARMESAN
Move over penne: Classic, creamy and vibrant vodka sauce has a new home on top of crispy chicken Parmesan.

Steps:
- Preheat the oven to broil. Place a wire rack inside each of 2 rimmed baking sheets.
- Cut the chicken breasts in half horizontally through the middle (like slicing a bagel) making 4 roughly equal pieces. Place a sheet of plastic wrap on a cutting board. Put 1 chicken piece in the center of the plastic wrap and top with another sheet of plastic. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4-inch thick. Transfer to a prepared baking sheet. Repeat with the remaining chicken pieces.
- To set up a standard breading station, mix the flour, 1 tablespoon salt and 1/2 teaspoon pepper in a shallow dish. Beat the eggs and 1/2 teaspoon salt in a second shallow dish. Place the breadcrumbs in a third shallow dish.
- Dredge 1 piece of chicken in the flour mixture, turning to coat evenly. Shake off any excess, then dip into the egg mixture, turning to fully coat it on both sides. Let the excess egg drip off, then press the chicken firmly into the breadcrumbs, turning to coat on both sides and packing the crumbs into any crevices. Return the chicken to the baking sheet and repeat with the remaining chicken pieces.
- Heat the oil in a large skillet over medium-high heat (you will know the oil is ready if you drop a few breadcrumbs into the skillet and they immediately sizzle). Add 2 pieces of chicken and cook until the breading is golden-brown and crisp and the chicken is just cooked through, 3 to 5 minutes per side, turning with tongs. Transfer to the other prepared baking sheet. Make sure the oil is hot again before repeating with the remaining 2 pieces of chicken.
- Spread 1/4 cup vodka sauce onto each piece of chicken then top each with 1 tablespoon Parmesan and 1/4 cup mozzarella. Broil until the cheese melts and browns in spots, 3 to 5 minutes. Pour the remaining vodka sauce onto a serving platter and top with the chicken pieces. Sprinkle with the parsley.
VODKA PEPPER CHICKEN
Steps:
- Preheat oven to 250 degrees F.
- Mix black, white, red, and lemon pepper together in a pie dish. Rinse chicken and roll while still moist in pepper mixture to coat both sides of breast. Melt butter in a large skillet over medium heat and then add chicken, onions, and garlic. Brown the chicken on both sides.
- Add vodka and let cook until chicken is cooked through, approximately 8 minutes. Remove chicken from skillet, place on a lined pan, and keep warm in preheated oven. Add tomatoes, olives, Worcestershire, and oregano to the sauce and mix ingredients well with a wooden spoon. Let simmer for 3 to 5 minutes. Return chicken to the skillet and cook until the tomatoes break down and make a sauce, about 15 minutes.
- Place the cut potatoes in a large stockpot, cover with cold water, and add some salt. Bring to a boil, then simmer until tender when pierced with a fork, approximately 30 minutes.
- Drain well in a colander; place into a bowl for mashing. Mash the potatoes with a potato masher and add sour cream, cream cheese, milk, chives, and garlic; mix well. Serve warm.
CHICKEN RIGATONI WITH VODKA SAUCE
Three of my favorite things folded into one recipe: pasta, chicken and a creamy VODKA SAUCE!! The sauce and the chicken gets wedged into the center of the pasta and it makes for the MOST perfect bite of all times.

- Cook the ground chicken in a large saucepan with 2 teaspoons olive oil and Italian seasoning and red pepper flakes until crumbly and fully cooked. Season with salt and pepper. Remove and set aside.
- Heat the oil and butter in the same saucepan over medium-high heat. Once the butter has melted, add the onions and cook, stirring frequently, until softened but not browned, about 3 minutes. Add the garlic, oregano and crushed red pepper flakes; cook, stirring, until fragrant, about 1 minute. Add the crushed tomatoes, with their juices. Bring to a boil over high heat, then reduce the heat to medium-low so the mixture is barely bubbling; cook for 20 to 30 minutes, stirring occasionally, until the sauce has thickened and reduced to 4 cups. Season with salt and pepper.
- Working in batches as needed, transfer the sauce to a blender. Add the cream and vodka. Remove the center knob on the lid (to allow steam to escape); place a towel over the lid to prevent spilling. Starting on the lowest speed and gradually increasing to high, blend until completely smooth, about 30 seconds. Return to the saucepan and bring just to a boil over high heat, then reduce to medium-low and cook, allowing the sauce to reduce and the vodka to cook off.
- Cook the pasta until al dente. Drain the pasta, reserving 1 1/2 cups of the cooking water, then return the pasta to the pot with the sauce and add the chicken. Stir to combine, and cook over medium heat, stirring frequently, adding some of the reserved pasta cooking water as needed to thin it out.
- Serve right away, topped with basil and grated cheese (to taste). Season with salt and pepper to taste

This dish is heavenly. It is easy to make (my husband makes it all the time) and I have yet to make it for someone who doesn't ask for the recipe.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Set bacon aside to drain on paper towels. Drain all but 1 tablespoon bacon grease, then saute chicken until no longer pink, and juices run clear. Break bacon into pieces, and return to skillet. Stir in wine and tomatoes. Sprinkle with Italian seasoning. Simmer until tomatoes are cooked, about 20 minutes. Serve sauce over cooked pasta.

CHICKEN AND ARTICHOKE IN LEMON VODKA SAUCE
I combined two pasta dishes I tried while on vacation to come up with this recipe. Serve with crusty bread.

- Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes. Drain and transfer pasta to a bowl; stir in butter.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Season chicken with 1 pinch Italian seasoning and black pepper; place in a baking dish.
- Broil chicken in the oven until no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut chicken into bite-size pieces.
- Heat olive oil in a large skillet over medium-high heat; cook and stir sun-dried tomatoes and garlic until garlic is softened, about 2 minutes.
- Stir chicken broth and cornstarch together in a bowl until dissolved; stir into sun-dried tomato mixture. Mix artichoke heart juice, vodka, and lemon juice into chicken broth mixture; simmer until thickened, about 2 minutes. Reduce heat to medium and stir in artichoke hearts, chicken, 1 teaspoon Italian seasoning, parsley, and oregano; simmer until heated through, about 5 minutes.
- Stir pasta and 1/4 cup feta cheese into chicken-artichoke mixture and simmer until pasta is warmed and feta cheese is melted, 2 to 3 more minutes. Remove skillet from heat. Sprinkle mixture with remaining 1/4 cup feta cheese; stir.

ITALIAN SAUSAGE AND RADIATORE PASTA {HOMEMADE SAUCE}
This quick and easy one-skillet meal is my go-to favorite.

- In a medium size pot, add hot water. Heat the pot on medium heat. Bring to a boil and add the salt.
- Add pasta to the pot and stir. Cook the pasta until its al-dente (according to package instructions). Drain the pasta (don't rinse the pasta) and set aside.
- Don't rinse the pasta after cooking it. When pasta is rinsed, the starch is removed. The starch on pasta helps to hold and absorb the sauce so it's important to keep the starch on the pasta.
- While the pasta is cooking, chop the onions, garlic and parsley. Set them aside.
- In a large shallow pot or sauté pan (with high sides), add the sausage. If the sausage is in a casing, make a small cut on one of the ends, squeeze the meat out, and discard the casing.
- Stir and using a spatula, break apart the sausage into small pieces as it cooks.
- When the sausage starts to brown, add the onions, garlic and olive oil. Stir. Continue to stir while cooking for about 3 minutes or until the onions start to turn translucent.
- In a small bowl, add the canned diced tomatoes. With clean hands squeeze the tomatoes so there are no big chunks, and add them to the pan.
- Add the tomato sauce to the pan. Fill the empty tomato sauce can with water and add the water to the pan. Stir the sauce.
- Add parsley, oregano, red pepper flakes, salt, and pepper. Stir. Turn the heat down to low and let the sauce simmer (uncovered) for about 15 minutes, stirring occasionally.
- Add the pasta to the sauce. Gently stir the pasta into the sauce. Top with grated Parmesan cheese and parsley and serve while warm.
CHICKEN VODKA RADIATORI
A delicious recipe with radiatori pasta I threw together one night as something quick, and it turned out to be delicious.

- Bring a large pot of lightly salted water to a strong boil. Add radiatori and cook, stirring occasionally, until tender yet firm to the bite, 9 to 13 minutes; do not overcook.
- Meanwhile, add chicken to a medium saucepan over medium heat. Season with garlic and herb seasoning, garlic powder, and salt. Drain and discard most of the juice from the diced tomatoes; add tomatoes to the saucepan. Add 2 tablespoons vodka sauce and bring to a simmer. Add remaining vodka sauce and return to a simmer.
- Drain pasta well and return to the pot. Add sauce and stir to combine.
