EASY CHICKEN VERACRUZ

Easy Chicken Veracruz image

Inspired by a snapper Veracruz dish I had at a local Mexican restaurant, i created this variation using chicken. Sautéed chicken breasts are topped with tomato-basil sauce, tomatoes, sautéed onions, red and green bell peppers, and garnished with green olives and capers. Serve over hot rice or quinoa.

Categories     Trusted Brands: Recipes and Tips     Classico® Pasta Sauce

Time 30m

Yield 4

Number Of Ingredients 10

4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
Salt and cracked black pepper to taste
2 tablespoons olive oil, divided
1 onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 (15 ounce) jar Classico® Tomato and Basil Sauce
½ cup cherry tomatoes, halved
½ cup pitted green olives, coarsely chopped
3 tablespoons capers for garnish

Steps:

  • Salt and pepper the chicken breasts on both sides.
  • Heat oil in skillet over medium-high heat. Place the chicken in oil and cook until chicken begins to turn white, about 3 or 4 minutes. Turn and cook until chicken is browned, 3 or 4 more minutes, and internal temperature reaches 165 degrees F. Remove chicken from skillet.
  • Add remaining oil to pan. Stir in onions and red and green bell peppers. Cook and stir until the onions are softened and slightly browned, about 5 minutes.
  • Stir in the tomato-basil sauce; let simmer for about 5 minutes until slightly thickened. Return the chicken to the pan and cook until chicken is heated through, a few minutes more.
  • Serve over hot rice or quinoa. Garnish with chopped cherry tomatoes, green olives, and capers.

VERACRUZ-STYLE RED SNAPPER

Veracruz-Style Red Snapper image

I like red snapper for this, but any white, flaky fish will work. By the way, many Veracruz-style fish recipes call for pickled jalapenos, but I think there's plenty of acidity in this from the lime and tomatoes, so I like the fresh pepper a little more.

BAKED CHICKEN VERACRUZ

Baked Chicken Veracruz image

Veracruz sauce is traditionally served with seafood, such as red snapper or shrimp. Here, we've mixed things up with chicken thighs that bake up juicy and crisp for a dinner that's quick and easy.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Thighs

Time 1h

Number Of Ingredients 9

2 pounds bone-in, skin-on chicken thighs (about 6)
Kosher salt and freshly ground pepper
12 ounces medium red potatoes, very thinly sliced (2 cups)
3 tablespoons extra-virgin olive oil
1 can (14 ounces) fire-roasted diced tomatoes
1/8 teaspoon ground cinnamon
1 teaspoon chopped fresh oregano leaves, plus 4 sprigs
1 cup pitted and halved green olives, such as Castelvetrano
2 shallots, peeled and thinly sliced (3/4 cup)

Steps:

  • Preheat oven to 450 degrees with rack in upper third. Season chicken on both sides with salt and pepper.
  • Toss potatoes with 2 tablespoons oil; season with salt and pepper. Arrange, shingled, in a shallow 9-by-13-inch baking dish; bake until just tender and edges are golden, 10 to 15 minutes.
  • Stir together tomatoes, cinnamon, and oregano; season with salt and pepper. Pour mixture over potatoes; scatter with olives, shallots, and oregano sprigs. Top with chicken and drizzle with remaining 1 tablespoon oil. Bake until chicken is browned and crisp and a thermometer inserted into thickest parts (without touching bones) reaches 165 degrees, about 25 minutes. Serve.

EASY SAUTEED FISH FILLETS

Easy Sauteed Fish Fillets image

Here's an easy method for quickly cooking fish fillets. We love the simplicity of just using salt and pepper to season the flour for dredging, but feel free to get creative and experiment with other seasonings. If you like a little heat, add a pinch of cayenne; for a smoky flavor, add a touch of smoked paprika; try white pepper, a common ingredient in Chinese cooking, instead of black pepper if you're pairing the fish with the Black Bean-Scallion Sauce.

Provided by EatingWell Test Kitchen

Categories     Quick & Easy Low-Calorie 20-Minute Dinner Recipes

Time 15m

Number Of Ingredients 5

⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon freshly ground pepper
1 pound catfish, tilapia, haddock or other white-fish fillets (see “Choose Sustainable Fish,” opposite), cut into 4 portions
1 tablespoon extra-virgin olive oil

Steps:

  • Combine flour, salt and pepper in a shallow dish. Thoroughly dredge fillets; discard any leftover flour.
  • Heat oil in a large nonstick skillet over medium-high heat. Add the fish, working in batches if necessary, and cook until lightly browned and just opaque in the center, 3 to 4 minutes per side. Serve immediately.

VERACRUZ SAUCE (FOR FISH OR CHICKEN)

Veracruz Sauce (for Fish or Chicken) image

Dress up a plain protein with this delicious sauce that marries the flavors of Mexico with those of the Mediterranean: easy recipe for Veracruz-Style Sauce.

Provided by Chelsie Kenyon

Categories     Side Dish     Sauces

Time 50m

Yield 4

Number Of Ingredients 10

1/4 cup of olive oil
5 cloves of garlic , peeled and chopped
2 cups of seeded and diced tomatoes
1 medium onion, sliced
4 pickled jalapeño, chopped
5 green olives, coarsely chopped
1 tablespoon dried oregano
1 tablespoon capers
1/4 cup water
Kosher salt

Steps:

  • Gather the ingredients.
  • Warm oil in a medium saucepan over medium heat. Saute garlic briefly to release its flavor.
  • Add tomatoes and onions and cook over low heat until tomatoes soften, about 20 minutes.
  • Add jalapeño, olives, oregano, capers, water, and salt, to taste. Simmer for an additional 20 minutes.
  • Serve Veracruz Sauce over grilled or pan-fried white fish or chicken breast. Accompany this with white rice , if you like.
  • Use one whole red snapper of about 3 pounds or two pounds of snapper filets. If using the whole snapper, clean it and remove the scales, but leave the head and tail on for presentation.
  • Prick the fish with a fork on both sides.
  • Lay the fish (or the filets) in a single layer in a shallow baking dish. Whisk together 2 tablespoons fresh-squeezed lime juice, a pinch of salt, a pinch of pepper, a pinch of nutmeg, and 2 cloves (diced) of garlic. Pour this marinade over the snapper and refrigerate for about an hour.
  • Make Veracruz Sauce (above), but reduce garlic to only 2 or 3 cloves. Simmer sauce for only about 5 minutes after adding jalapeños and other ingredients, as it will finish cooking in the oven.
  • Cover the fish with the sauce and bake in a 300 F (150 C) oven for about 30 minutes, turning once.
