CRISPY BAKED CHICKEN THIGHS
Crispy skin, juicy meat, and so easy! This chicken thigh recipe is a weeknight favorite in our house.

Steps:
- Preheat oven to 400 degrees. Spray a baking sheet with non-stick spray.
- Add all of the ingredients except for the parsley to a large zip top bag and seal. Smush the chicken around in the bag to coat in the seasoning.
- Arrange chicken on the baking sheet and bake for 35-45 minutes or until a thermometer reads 165 degrees.
- Sprinkle chicken with parsley just before serving.

HOMEMADE DOG LIVER BITES
This homemade dog food is so easy to make with only 4 to 5 ingredients. A blender, liquidizer, or food processor is a great bonus and saves too much mess (but can be made without one, you just have to chop the liver well). They freeze very well. I have been making these yummy bites for my dogs for over 20 years and have not yet had a complaint! I make double or triple the mix so I always have some spare for doggy visitors. Great to chop/crumble up and put on regular dog food if pooch has lost his appetite. Also can conceal pills very well too.

- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish and line with parchment paper.
- Add oats to the bowl of a food processor; pulse for 10 to 15 seconds until finely chopped. Pour into a large bowl and add flour. Add liver to the food processor and process until smooth, 10 to 15 seconds. Add eggs and blend until well combined, about 10 seconds. Add oil for a little flavor and process.
- Add liver mixture to oat and flour mixture and stir until well blended. Spoon into prepared baking dish.
- Bake in the preheated oven until firm to the touch but not hard and crispy, 30 to 40 minutes. Remove from oven and cool on a wire rack. Cut into doggy-bite-sized pieces.

- Preheat the oven to 400 degrees F (200 degrees C).
- Season chicken thighs on all sides with paprika, salt, and pepper.
- Cook bacon in a cast iron skillet or oven-safe pan over medium-high heat until browned, 4 to 5 minutes. Remove from skillet and drain on a paper towel-lined plate. Drain and discard excess grease from skillet.
- Return skillet to medium heat and cook chicken thighs, skin-side down, for 3 to 4 minutes. Flip chicken over and place skillet in the preheated oven.
- Bake until chicken thighs are no longer pink at the bone and juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove chicken to a plate and cover with foil to keep warm. Remove all but 2 tablespoons drippings from skillet.
- Return skillet to the stove over medium-high heat. Pour in chicken broth while whisking up brown bits from the bottom of the skillet. Add mushrooms and cook until soft, about 3 to 4 minutes. Pour in heavy whipping cream and whisk together until lightly simmering, then reduce heat to medium-low. Season with salt and pepper, if necessary.
- Return chicken and any juices back into skillet; top with bacon and green onions. Serve immediately, spooning sauce over the chicken.

Posting this for ZWT II - France. This is a recipe passed from my late DM to me, and from me to my DD's, and I'll put $$$ on it they will pass it to their children, as it is a much loved dish.

Steps:
- Brown chicken breasts in butter, sprinkle Beau Monde and Tarragon, add mushrooms when turning the chicken. When chicken browned and mushrooms sauteed add the sherry.
- Allow to simmer for approximately 30 minutes. 15 minutes prior to serving remove chicken, stir sour cream into sauce and blend well. Replace the chicken into the sauce and allow to simmer. (I usually put it in the oven at 325°F at this point).
- Prior to serving garnish with the green onions. This is really good served with brown or wild rice.
