Always a hearty family favorite, Chicken Tortilla Casserole makes the most of convenient ingredients while packing tons of rich flavor in every creamy bite!

1 cup onion (chopped)
4 cloves garlic (minced)
2 tablespoons vegetable oil
1 1/2 teaspoons dried cumin
1 1/2 teaspoons dried oregano
1/2 teaspoon black pepper
2 (4-ounce) cans chopped chiles
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup chicken broth
1 dozen corn tortillas (cut into 1/2 strips)
2 1/2-- 3 cups cheddar cheese (grated)
4 cups or 1 large rotisserie chicken (cooked and shredded)

Steps:

  • Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.
  • In a large skillet, saute onion and garlic until soft and translucent. Add the cumin, oregano and black pepper and cook for about 1 minute, stirring constantly. Add chilies, including the juice, both soups, and chicken broth and whisk until mixture is combined and smooth.
  • Pour 1/2 cup of the sauce on the bottom of the baking dish. Spread 1/3 flat of tortillas in a flat layer on top, 1/3 of the remaining sauce, 1/2 the chicken, 1/3 of the cheese.
  • Continue with the second layer of 1/3 of tortillas, 1/3 of the sauce, the remainder of the chicken, 1/3 of the cheese.
  • Finish with the third and last layer with the remaining the tortillas, the sauce, and the cheese.
  • Bake in the preheated oven, uncovered, for 35-45 minutes or until heated through the center and sauce is bubbly.

1 ½ lbs chicken breast, pre-cooked and shredded
2 tsp of extra virgin olive oil.
1 jalapeno, cored and diced
1 red bell pepper, cored and chopped
1 green bell pepper, cored and chopped
1 large onion, chopped
2 cloves of garlic
¼ tsp black pepper
½ tsp salt.
1 tsp dried oregano
2 tsp ground cumin
1 ½ c of chicken stock
1 can of tomato sauce
3 tbsp Tabasco jalapeno sauce
2 cups of grated yellow cheese
3 tbsp Tabasco sauce
For serving: salsa, more tabasco, guacamole or sliced avocado, cilantro, sour cream

Steps:

  • Preheat the oven to 375° F. Spray your casserole dish liberally with baking spray.
  • Heat up your olive oil over medium-high heat.
  • Put the sliced vegetables into the skillet, and cook them for about 10 min.
  • Add all of your spices and stir thoroughly.
  • Stir in tomato sauce, chicken stock, and tabasco jalapeno sauce in the mix. Simmer for 12 min.
  • Once the sauce is heated, spread a thin layer of it on the bottom of the dish.
  • Then, place six tortillas on top so that they cover the sauce. Ensure that there are no gaps with the tortillas.
  • Top the tortillas with ⅓ of the chicken, ½ cup of cheese, and ⅓ of the remaining sauce.
  • Do this two more times, and once you have a full oven tray, sprinkle some cheese over the top.
  • Cover the dish with foil and put it in the oven for 35 min.
  • After 35 min, remove the foil and bake uncovered for 10 min, until the cheese is melted and golden.
  • Once out of the oven, leave the chicken tortilla bake to rest for around 5 min.
  • Serve while still hot and add whatever toppings you desire!

1 1/2 cups rice
4 tablespoons olive oil
3 cups diced tomatoes (5 to 7 tomatoes, depending on size)
3 cloves garlic, minced
1 large onion, diced
4 teaspoons chili powder
2 teaspoons paprika
2 teaspoons cumin
2 boneless, skinless chicken breasts, cut into bite-sized pieces
Kosher salt and freshly ground black pepper

One 15-ounce can pinto beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
One 16-ounce jar salsa verde
12 to 18 flour tortillas (or corn tortillas), depending on size
One 11-ounce can corn, drained
1 1/2 pounds grated Cheddar jack cheese
1 recipe Enchilada Sauce, recipe follows, or 2 cups store-bought red enchilada sauce
Sour cream, for serving
Chopped fresh cilantro, for serving
2 tablespoons olive oil
1/4 cup finely chopped red bell peppers
1/4 cup finely chopped onions
1 tablespoon finely chopped garlic
2 teaspoons chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 beef, chicken or tomato bouillon cube
Kosher salt and freshly ground black pepper
1 tablespoon all-purpose flour
1/2 cup chicken stock
One 15-ounce can tomato sauce

Steps:

  • Cook the rice according to the package directions. Set aside.
  • Preheat the oven to 375 degrees F.
  • In a large skillet over medium-high heat, heat 2 tablespoons of the oil and add the tomatoes, garlic and onions. Stir and cook for a minute or 2. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or 2 in order to release the flavors. Transfer the mixture to a bowl and set aside.
  • In the same skillet, heat the remaining 2 tablespoons oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and some salt and pepper and cook until the chicken is deep golden brown and done in the middle, 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Allow the sauce to boil until reduced by half, about 2 minutes. Stir in the pinto and kidney beans and set aside.
  • To assemble, pour half of the jar of salsa verde (about a cup) in the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Layer half of the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the Enchilada Sauce. Next, add the remaining tortillas in a layer, pour on the rest of the salsa verde and Enchilada Sauce and sprinkle on the rest of the cheese.
  • Cover the casserole with aluminum foil and bake for 20 minutes. Remove the foil and continue baking until hot and bubbly, 15 to 20 minutes. Allow the casserole to sit for a few minutes before serving up to ensure it holds together. Serve with sour cream and cilantro for topping.
  • Heat the oil in a medium saucepan over medium heat. Add the peppers, onions and garlic and cook until soft, about 2 minutes. Add the chili powder, cumin, cayenne, bouillon cube and some salt and pepper and cook until the spices darken and their flavors are released, about 2 minutes. Sprinkle in the flour, stir to combine and cook it for another minute. Add the stock and stir to combine, then allow the liquid to thicken. Add the tomato sauce and 1 1/2 cups water and bring to a boil. Cook until the sauce is nice and thick and reduced by about a third, 5 to 10 minutes.
  • Allow the sauce to cool slightly, then use an immersion blender to completely puree the sauce until smooth. (Alternatively, you can transfer it to a blender to puree it; just make sure the sauce is cooled, as blending hot liquids is dangerous!)
  • The sauce will keep in the refrigerator for up to a week and can also be frozen! Just reheat the sauce in a saucepan or skillet for whatever recipe calls for it.

1 (10 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
1 tablespoon butter
1 small onion, finely chopped
1 (14.5 ounce) can diced tomatoes
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can cream of mushroom soup
1 (4.5 ounce) can chopped green chiles
⅓ cup milk
2 tablespoons sour cream
1 teaspoon chili powder
1 teaspoon ground cumin
2 ½ cups chopped cooked chicken
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease a 9x13-inch baking dish. Spread corn chip crumbs over the bottom of the baking dish and press crumbs into place.
  • Melt butter in a large skillet over medium-high heat; cook and stir onion in melted butter until tender, 6 to 7 minutes.
  • Stir diced tomatoes, cream of chicken soup. cream of mushroom soup, green chiles, milk, sour cream, chili powder, and cumin in a large bowl. Add chicken and cooked onion; stir to combine. Pour mixture over corn chips and top with Cheddar cheese.

1 3-pound chicken
1 sprig cilantro
1 jalapeño, cut in half
1/2 tablespoon kosher salt
1 teaspoon black peppercorns

1 3-pound cooked chicken, roasted or poached, shredded
1/4 cup chicken broth
1 tablespoon vegetable oil
1 medium yellow onion, diced
1 red bell pepper, seeded and diced
5 jalapeños, seeded and diced
4 cloves garlic, minced
1 (10-ounce) can tomatoes and green chiles, such as Ro-Tel
1/2 cup chopped cilantro, plus more for garnishing
1 teaspoon chili powder, plus more for garnishing
1 teaspoon ground cumin
1 teaspoon dried thyme
Salt
10 corn tortillas, quartered
8 ounces (2 cups) shredded Monterey Jack
8 ounces (2 cups) shredded Cheddar
Salsa, for serving
Sour cream, for serving
Guacamole, for serving

Steps:

  • Place the chicken in a large pot and cover with 1-inch of water. Add to the pot the cilantro, jalapeño, salt and peppercorns. Bring the pot to a boil and then turn the heat down to low. Simmer uncovered for 45 minutes. Remove the chicken with tongs from the water and when cool enough to handle, remove the skin and shred the chicken. Toss the chicken with 1/4 cup of the cooking broth (reserving the rest of the broth for another use), then taste and add salt if needed.
  • Alternatively, if you want to skip making the chicken you can shred an already cooked 3-pound chicken and toss with 1/4 cup of chicken broth.
  • Preheat the oven to 350°F and lightly grease a 9×13 baking dish.
  • In a large, deep skillet or Dutch oven, heat the oil on medium-low heat. Add the onions, bell pepper and jalapeños and while occasionally stirring cook until soft, about 10 minutes. Add the garlic and cook for 30 more seconds. Add to the skillet the shredded chicken with broth, tomatoes, cilantro, chili powder, cumin and thyme, and stir until well combined. Turn off the heat, taste and adjust seasonings. Add salt to taste.
  • To assemble the casserole, line half of the tortillas along the bottom of the baking dish. Evenly spread on top half of the chicken mixture, half of the Monterey Jack and half of the Cheddar cheese. Repeat the layering with the tortillas and chicken, then topping with the rest of the cheese.
  • Bake uncovered for 20-30 minutes or until brown and bubbling. Garnish with chopped cilantro and serve warm with salsa, sour cream, and guacamole.

2 large green bell peppers, cut into 1 inch pieces

2 -3 tablespoons fresh minced garlic
1 1/2 teaspoons seasoning salt (or to taste) or 1 1/2 teaspoons white salt (or to taste)
fresh ground black pepper (to taste)
2 (10 1/2 ounce) packages 6-inch flour tortillas (24 tortillas for 2 casseroles)
2 (19 ounce) cans kidney beans, drained and rinsed
4 cups shredded cheddar cheese (or more or less if desired)
4 (11 ounce) jars mild chunky salsa

Steps:

  • Set oven to 350 degrees F.
  • Grease two 13 x 9-inch baking pans.
  • In a large Dutch oven, cook the first 4 ingredients, stirring often until the ground beef is browned and cooked; drain fat.
  • Add in fresh garlic, season with salt and pepper and stir for 2-3 minutes.
  • Line the 2 baking dishes with 6 tortillas.
  • Divide the beef mixture between the two dishes on top of the tortillas.
  • Top the ground beef with 1 can of beans, then sprinkle with 2 cup cheese.
  • Top with the remaining tortillas.
  • Spread two jars salsa over each casserole (one on each one).
  • Sprinkle with remaining cheese.
  • Cover casseroles with foil.
  • Bake for 45 minutes.
  • Remove foil, bake 10-15 minutes more, or until cheese is golden.
