Steps:
- Heat butter in large frying pan.
- Add chicken pieces and cook on both sides until golden brown.
- Add water and crumbled stock cube. Cover pan.
- Bring to a boil,reduce heat,and simmer for 30 minutes or until chicken is tender.
- Remove from pan and keep warm.
- Add drained, washed artichoke hearts and tia maria to pan, bring to a boil, reduce heat,simmer uncovered for 5 minutes.
- Add cream.
- Season with salt and pepper and simmer gently for 5 minutes or until sauce slightly thickens.
- Add chopped shallots to sauce and spoon over chicken.

this recipe idea came from when i worked at a restaurant. the made chicken florientine, but, i changed it around, and left out the tomatos, and made it different then they did.

Steps:
- i usually cut chicken into thinner pieces first, they cook faster.
- cook linguini, drain, set to side (its best to fill pot with hot water, and let pasta sit in water after cooked, until ready to use).
- sautee chicken.
- i use butter, and oil together, just enought oil to barley cover the bottom of pan.
- during sauteing, i add some wine, for flavor set cooked chicken aside.
- cook spinach, drain, set aside.
- put chick, broth in lq pot, bring to boil, reduce heat, add some wine, use some corn starch to make this broth thicker, like a real thin gravy.
- arrange plate; put some linguini first, add some spinach, then top off with chicken -- the idea is to make it pleasing to look at.
- spoon some thickend broth on top of layered linguini, spinach and chicken.

- Rinse chicken and pat dry with a paper towel. Soak chicken breasts in the eggs for at least 1 hour. Drain and roll in the breadcrumbs to coat.
- Preheat oven to 350°F.
- In a large skillet over medium heat, brown the chicken in melted butter and place in an 8x8 inch baking dish. Combine the mushrooms, lemon juice, wine, and broth in a medium bowl. Pour mixture over the chicken and top with slices of cheese. Cover with foil and bake 45 to 60 minutes, or until chicken is cooked thru and tender.

Steps:
- Open chicken breasts and lay open side down on a hot grill.
- Grill 3-5 minutes on each side until cooked.
- Remove from grill.
- Stuff one of the butterflied sides with 1 slice prosciutto and 1/8 cup cheese and fold to sandwich the filling inside.
- Hold folded breast with wooden picks.
- Set on a warmed platter and cover.
- In a large skillet saute the onions and garlic in the clarified butter until tender.
- Deglaze the pan with the white wine.
- Add the butter, salt, and pepper, and mushrooms and cook until tender.
- Add basil and lemon juice and swirl pan to combine.
- Pour mushroom sauce over the Chicken breasts.

CHICKEN MARIA - THE FABLED TABLE

- Pound the chicken. Spread a couple of pieces of overlapping plastic wrap on clean counter creating a rectangle that’s about 20” x 22”. Space chicken out on plastic wrap and then cover with another couple of pieces of wrap. (This will help contain any juice that could fly as you pound the chicken.) Using a meat pounder, rolling pin or other heavy object, pound the breasts to about a ½” thickness.
- Create an assembly line for browning the chicken. Crack the eggs into a pie plate or other shallow dish and whisk well. Spread bread crumbs/panko on a piece of wax paper, begin heating 2 tablespoons of EVOO in large frying pan over medium heat.
- Working in batches (I usually cook 2 breasts at a time) bath the breasts in the egg, lift out of the egg allowing any extra to drip back in the pie plate, lay in the bread crumbs/panko and coat evenly, saute in heated pan for about 3 minutes per side. The chicken should turn a nice golden-brown color. Remove to baking dish and repeat with remaining 2 breasts. You may want to add another tablespoon of oil to the pan before sautéing remaining breasts if it is dry.
