A tasty, easy-to-make chicken dish -- my husband loves it. Sometimes I cut the chicken in strips,and serve over pasta.

⅓ cup balsamic vinegar
½ cup chicken broth
2 tablespoons white sugar
1 clove garlic, minced
1 teaspoon dried Italian herb seasoning
4 skinless, boneless chicken breast halves
1 tablespoon olive oil

Steps:

  • Whisk together the balsamic vinegar, chicken broth, sugar, garlic, and Italian seasoning in a bowl, place the chicken breasts in the marinade, and marinate for 10 minutes on each side.
  • Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade. Place the chicken in the heated pan and cook until they start to brown and are no longer pink inside, about 7 minutes per side. Pour the marinade into the skillet, and cook until it thickens slightly, turning the chicken breasts over once or twice, about 5 minutes.

1/2 c. balsamic vinegar
2 tbsp. honey
1 1/2 tbsp. whole-grain mustard
3 cloves garlic, minced
Kosher salt
Freshly ground black pepper
4 bone-in, skin-on chicken thighs
2 c. baby red potatoes, halved (quartered if large)
2 tbsp. sprigs fresh rosemary, plus 1 tbsp. chopped
2 tbsp. extra-virgin olive oil, divided

Steps:

  • Preheat oven to 425°. In a large bowl, combine balsamic vinegar, honey, mustard, andgarlic and season with salt and pepper. Whisk until combined. Add chicken thighs and toss until fully coated. Transfer to the fridge to marinate, at least 20 minutes and up to 1 hour.
  • Meanwhile, prep potatoes: In a medium bowl, add potatoes and chopped rosemary and season with salt and pepper. Add 1 tablespoon oil and toss until combined. Set aside.
  • In a large ovenproof skillet over medium-high heat, heat remaining tablespoon oil. Add chicken and sear, skin side down, 2 minutes, then flip and sear 2 minutes more. Add potatoes, nestling them between chicken, and top with rosemary sprigs.
  • Transfer to the oven and bake until potatoes are tender and chicken is cooked through, 20 minutes. (If potatoes need longer to cook, transfer chicken to a cutting board to rest and continue cooking potatoes until tender.)
  • Serve chicken and potatoes with pan drippings.

1 pound skinless, boneless chicken breasts, cut into pieces
salt and ground black pepper to taste
¼ cup balsamic vinegar
¼ cup soy sauce
¼ cup water
2 tablespoons brown sugar
1 tablespoon olive oil, or more as needed

Steps:

  • Season chicken with salt and pepper. Mix balsamic vinegar, soy sauce, water, and brown sugar together in a small bowl until sugar is dissolved.
  • Heat oil in a large skillet over medium heat. Brown chicken in the hot oil until no longer pink in the center, 3 to 4 minutes per side. Remove from the skillet and set aside.

1/3 cup chicken broth
1/4 cup balsamic vinegar
1 clove garlic (minced)
1/2 teaspoon Italian seasoning
1.5 pounds chicken tenders (about 10-12 pieces)
1 tablespoon oil
salt to taste

Steps:

  • Whisk together chicken broth, balsamic vinegar, garlic, and Italian seasoning.
  • Place chicken tenders in a resealable plastic bag with the marinade. Massage and shake to coat. Let sit on the counter for no more than 30 minutes or marinate in the fridge for an hour or up to 12 hours.
  • Heat olive oil in a large, heavy bottomed skillet.
  • Season chicken with salt and place in the skillet with space between each piece. Work in batches if you have to. Cook the chicken over medium high heat until browned on both sides; about 3-5 minutes per side.
  • Transfer cooked chicken to a plate and cover with foil. Rest 5 minutes before serving.

2 boneless skinless chicken breast halves (5 ounces each)
1/2 teaspoon garlic salt
1/8 teaspoon coarsely ground pepper
2 teaspoons canola oil
1 tablespoon balsamic vinegar
1 tablespoon honey
1/2 teaspoon dried basil

Steps:

  • Sprinkle chicken with garlic salt and pepper. In a large skillet over medium heat, cook chicken in oil until juices run clear, 4-7 minutes on each side. 12 ounces chicken tenders
1 teaspoon garlic, minced
3 tablespoons balsamic vinegar
1 tablespoon honey
1/4 cup chicken broth
fresh parsley (optional)

Steps:

  • Heat pan over med-high heat, spray with cooking spray.
  • Add chicken tenders and season with pepper.
  • Cook turning pieces half way through about 7 minutes.
  • Remove and set aside.
  • Reduce the heat to low-med add garlic and saute.
  • Then add vinegar, honey and chicken broth.
  • Simmer scraping the bottom of the pan for 1 minute.
  • Return chicken to pan.
  • Mix all ingredients together and heat through.
  • Garnish and serve.

The sweet and tangy sauce on these Honey Balsamic Chicken Tenders is a quick way to jazz up simple chicken breasts.

2 medium 1.5 lbs. chicken breasts ($2.99)
1/4 cup balsamic vinegar ($0.80)
1 clove garlic ($0.08)
2 Tbsp olive oil, divided ($0.24)
to taste salt & pepper ($0.05)
1 Tbsp butter ($0.10)
2 Tbsp balsamic vinegar ($0.40)
3 Tbsp honey ($0.33)

Steps:

  • Slice the chicken breasts on a diagonal into six strips each. Place the strips in a quart sized zip top bag along with 1/4 cup of balsamic vinegar, one clove of garlic (minced), 1 Tbsp of olive oil, and a pinch of salt and pepper. Mix the ingredients in the bag and let marinate in the refrigerator for at least 30 minutes.
  • When you're ready to cook, heat the second tablespoon of olive oil in a large skillet over medium heat. When the oil is hot, cook the strips until browned on both sides (about 2-3 minutes each side). You may have to do two batches. Place the cooked chicken on a clean plate.
  • Turn the heat down on the skillet to medium-low and add the butter and last 2 tablespoons of balsamic vinegar to the skillet. Use a spoon to stir the mixture and dissolve the sticky bits off of the bottom of the skillet. Once the mixture has dissolved together, add the honey, increase the heat, and allow the sauce to simmer until thickened (about five minutes).
  • Once the sauce has thickened, season to taste with salt and pepper (I just used a pinch of each). Add the chicken back to the skillet and toss to coat in the warm balsamic sauce. Serve immediately.
